We're turning s'mores into the perfect Father's Day-inspired dessert. Your father will associate this pie with so many things men love: building fires, carving pointy sticks, scaring things, and so forth. This has the classic three layers of the s'more: the graham crackers, chocolate, and toasted marshmallows.

1 ½ cups finely crushed graham cracker crumbs
¼ cup white sugar
6 tablespoons butter, melted
1 (28 ounce) package chocolate ice cream, slightly softened
2 cups miniature marshmallows, or enough to cover the top

Steps:

  • Place graham cracker crumbs into a bowl, add sugar and melted butter, and mix until well combined. Transfer mixture into a 9-inch pie dish. Gently press graham cracker mixture into the bottom and up the sides of the pie dish using a spatula. Pat the edge and inside of the crust smooth with your fingers.
  • Refrigerate crust until thoroughly chilled, at least 30 minutes.
  • Fill crust with chocolate ice cream using a small ice cream scoop. Smooth the ice cream with a spatula. Place a ring of mini marshmallows around the inside of the crust and cover top of ice cream with remaining marshmallows. Gently press marshmallows into the ice cream.
  • Freeze until very firm, at least 2 hours.
  • Use a propane blow torch to toast the marshmallows, moving the torch quickly to brown the marshmallows. Marshmallows should have small charred spots. Return to freezer to chill the marshmallow topping, at least 3 hours; slice and serve.

Frozen S'mores image

Happy campers of all ages will love Frozen S'mores. (Ice cream stands in for the marshmallows used in the original campfire treat.) Take time to freeze this dessert after spreading the chocolate sauce on the first and second layers of graham crackers. If you don't, you'll lose those sharp, clean lines. The recipe calls for vanilla and chocolate ice cream, but try any flavor that complements the graham crackers and chocolate.

¾ cup heavy cream
6 ounces bittersweet or semisweet chocolate
14 or so graham crackers
1 pint vanilla ice cream, softened on microwave's defrost setting for 30 seconds
1 pint chocolate ice cream, softened on microwave's defrost setting for 30 seconds
12 large marshmallows

Steps:

  • Microwave cream and chocolate in a 1-quart glass measuring cup on high power until very hot, about 2 minutes. Whisk until chocolate melts into a smooth sauce.
  • Line an 8-inch square metal pan with plastic wrap, leaving an overhang. Arrange 1/3 of the graham crackers over bottom, cutting the final few with a knife to fit. Drizzle 1/3 of the sauce over the crackers; spread evenly. Freeze until chocolate is just set, 5 to 10 minutes.
  • Spread vanilla ice cream over the chocolate. Top with another cracker layer as before. Drizzle another 1/3 of the sauce over the crackers; spread evenly. Freeze until just set, 5 to 10 minutes. Spread chocolate ice cream over the crackers. Arrange a final layer of crackers over the ice cream. Spread remaining sauce over crackers.
  • Freeze until set, about 2 hours, or double-wrap in plastic and freeze up to 5 days.
  • To serve, lift dessert from pan; discard plastic wrap. Halve the dessert; cut each half into 6 slices. Return to freezer briefly. Toast marshmallows over a flame and serve alongside s'mores.

Steps:

  • For the graham cracker crust: Melt the butter in a small saucepan over medium heat. Remove from the heat and whisk in the chocolate chips until melted and combined.
  • Combine the graham cracker crumbs and melted butter mixture in a large mixing bowl. Mix with a wooden spoon until combined.
  • Press the crumb mixture into the bottom and sides of a 9-inch pie dish. Transfer to the freezer for 10 minutes to firm up.
  • For the homemade magic chocolate shell: Melt the coconut oil and chocolate chips in a small saucepan over low heat, just until smooth. Remove from the heat.
  • To assemble the pie: Evenly spread half of the softened ice cream on the bottom of the pie crust. Drizzle a layer of chocolate shell over the ice cream, followed by the graham cracker crumbs and chocolate chips. Add the second half of the ice cream, followed by another drizzle of chocolate shell. Lastly, add a layer of marshmallow creme and a layer of marshmallows on top. Freeze for at least 2 hours or overnight.
  • Serving options: Place under a broiler to toast the marshmallows, 20 to 30 seconds. Keep an eye on the marshmallows as they toast up extremely quick. Or you can torch the top for the burnt marshmallow flavor.

1 cup (2 sticks) unsalted butter
30 (double-square) graham crackers
1/2 teaspoon kosher salt
2 1/2 cups store-bought fudge sauce
16 large marshmallows
2 cups (480 grams) heavy cream, cold
One 14-ounce can sweetened condensed milk, cold
One 7 1/2-ounce jar marshmallow creme, cold
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
1 chocolate bar, to shave, for garnish

Steps:

  • For the crust: Place the bowl of a stand mixer in the refrigerator to chill.
  • In a small saucepan, melt half the butter over medium-low heat. Cook, swirling occasionally, until the milk solids in the butter smell toasty and nutty and have turned golden brown, 3 to 4 minutes. Remove from the stove and cool to room temperature.
  • In a food processor fitted with the blade attachment, add half of the graham crackers and salt. Process into fine crumbs. Add the cooled brown butter and process until the mixture starts to clump. Dump the graham cracker mixture into a pie dish. Using the flat bottom of a glass or dry measuring cup, press the crumbs in an even layer on the bottom and up the sides. (At this point, you can freeze the crust for 30 minutes to firm up, or continue with the next step.)
  • Warm half the hot fudge sauce (1 1/4 cups) to an easily spreadable consistency (it shouldn't be hot). Pour the fudge over the graham cracker crust and, using an offset spatula, gently spread the fudge in an even layer on the bottom and up the sides of the crust. Place in the freezer for 1 hour until firm.
  • Repeat the process for the brown butter graham cracker crust and fudge application for the second pie.
  • To toast the marshmallows: Use a brûlée torch to toast. Alternatively, you can place an oven rack in the upper third position and preheat the oven to broil. Space the marshmallows 2 inches apart on a rimmed baking sheet. Broil until toasted, 30 seconds to 1 minute. Remove from the oven to cool completely, then place in the freezer while you make the ice cream.
  • To make the ice cream: In the chilled bowl of the stand mixer fitted with the whisk attachment, beat the heavy cream to stiff peaks. Add the condensed milk, marshmallow creme, vanilla and salt and beat on high speed to fully combine, 30 seconds (it's a-okay if there are little bits of marshmallow in the cream). Working quickly, transfer half of the no-churn ice cream to a frozen pie crust, saving the remaining half for the second pie. Top each pie with 8 toasted marshmallows, pressing them into the ice cream. Freeze until very firm, at least 6 hours or up to overnight. Shave the chocolate on top to garnish. Slice and serve immediately.

3 tablespoons granulated sugar
3 cups milk
graham cracker, as desired

Steps:

  • In a large bowl, combine flour, eggs, butter, and sugar, stirring until ingredients are slightly mixed.
  • Add the milk ½ cup (120 ml) at a time, stirring vigorously, making sure the milk is completely incorporated into the batter and that the batter is smooth before adding more milk.
  • Repeat with the rest of the milk. The batter should be very liquidy and have no lumps.
  • In a pan over medium heat, pour ⅓ cup (95 g) of the batter in the center and swirl the batter around the edges of the pan until set.
  • To know when the crepe is ready to flip, lift up one of the edges about ⅓ of the way. The bottom side should be golden brown. Flip the crepe.
  • Cook until the edges are starting to slightly crisp.
  • Remove from heat and cover with a paper towel to make sure the crepes stay moist.
  • Add graham crackers, chocolate, and marshmallows to crepe. Fold crepe over twice.
  • Bake at 350˚F (175˚C) for 10 minutes.
  • Remove from heat and cool.
  • Serve with chocolate syrup and crumbled graham crackers.

Steps:

  • For crust:
  • Preheat oven to 350°F. Spray 9-inch-diameter metal pie pan with nonstick spray. Mix graham cracker crumbs and melted butter in bowl to blend. Transfer to prepared pie pan. Press crumb mixture onto bottom and up sides of pan. Bake until crust is set and golden, about 11 minutes. Cool completely.
  • For filling:

  • Drop marshmallow creme by tablespoonfuls over top of pie. Using moistened fingertips, spread in even layer, covering top of pie completely. Sprinkle mini marshmallows evenly over, pressing slightly to adhere. Cover and freeze until firm, about 4 hours.
  • For sauce:
  • Bring whipping cream to boil in heavy small saucepan. Remove from heat. Add chocolate; let stand 2 minutes to soften, then whisk until melted and smooth. (Pie and sauce can be made 3 days ahead. Keep pie frozen. Cover and chill sauce; rewarm sauce over low heat just until pourable before serving.)
  • Preheat broiler. Cover pie crust edges with foil collar. Broil pie just until marshmallows are golden brown, watching closely to avoid burning and rotating pan to brown evenly if necessary, about 2 minutes. Transfer pie to platter and serve immediately with warm sauce.

2 cups chocolate fat-free ice cream or frozen yogurt, softened
1 very ripe banana, mashed
2 egg whites
2 tablespoons sugar

1/2 cup marshmallow creme

Steps:

  • Line 8-inch square (2-quart) glass baking dish with cooking parchment paper or foil so paper or foil extend over 2 sides of dish. In small bowl, stir together cracker crumbs and butter. Press in bottom of dish.
  • In medium bowl, stir together ice cream and mashed banana. Spoon onto crust; spread evenly.
  • In another medium bowl, beat egg whites with electric mixer until foamy. Gradually add sugar and salt, beating on high speed 8 to 10 minutes or until stiff, glossy peaks form. Beat in marshmallow creme. Spread over ice cream mixture, swirling to create ridges and peaks. Freeze at least 1 hour.
  • At serving time, heat oven to 450°F. Using paper or foil, lift pie from dish; place on cookie sheet. Bake 2 to 3 minutes or until lightly browned. If desired, use kitchen torch to further toast top of meringue. Cut into squares to serve.

2 large eggs
3/4 cup sugar
1 tablespoon unsweetened cocoa powder
2 cups heavy cream
1 cup milk
1 teaspoon vanilla
honey graham crackers, broken up
1 Hershey Bar, chopped
3/4 cup miniature marshmallow

Steps:

  • With a mixer, mix the eggs for 2min until light in color and slightly fluffy.
  • Mix the cocoa powder into the sugar, then slowly add this mix to the eggs, mix for approx 1min longer or until well blended.
  • Add the cream, milk, and vanilla again mix until well incorporated.
  • Pour this mixture into your ice cream maker and freeze according to manufacturers directions.
  • About 2min before the ice cream is finished, add the remaining ingredients.
  • When finished scoop into container and if desired, top with additional crushed graham crackers, marshmallows and chopped or shaved chocolate.

Steps:

  • Spoon ice cream evenly into crust; smooth top. Freeze 4 hours or until ice cream is very firm.
  • Reserve 2 cups marshmallows. Microwave remaining marshmallows and milk in large microwaveable bowl on HIGH 1 min. 15 sec. or until marshmallows are completely melted and mixture is well blended, stirring after 1 min. Cool 10 min. Meanwhile, microwave butter and chocolate in small microwaveable bowl on HIGH 1-1/2 min. or until butter is melted. Stir until chocolate is completely melted.
