SMOTHERED TURKEY LEGS
Smothered Turkey Legs - This dish is a treat and what I love about it besides the creamy gravy, is the flavor of fried turkey and the simplicity of the recipe. A quick dinner that will work its way to your heart!

Steps:
- Season the turkey with all the spices then dredge in flour. Keep aside.
- In a large pan, add 3 tablespoon oil and when hot add the turkey. Fry both sides until golden in color. The idea is not to cook the turkey here but to just give it a crisp outer layer. Remove the turkey from the pan and keep aside.
- In the same pan add the chopped onion and sauté until translucent.
- Add both the fried turkey and onion in a baking pan. Cover with aluminum foil and bake for 20 minutes in a preheated oven of 375F/190C.
- In the previous pan, add 2 tablespoon butter and one tablespoon oil, when hot add 5 tablespoon flour and stir until the flour is light brown.
- Add two cups of water while stirring, then add ½ cup milk. Add the cooked turkey with the onion to this sauce, cook for 10 minutes on low heat.
- Serve with cornbread or mashed potato.
SLOW COOKER TURKEY LEGS
This makes a yummy mini-Thanksgiving, which my girls and husband love! I serve this with jellied cranberry sauce, quick stuffing, and gravy.

Steps:
- Wash the turkey legs, and shake off excess moisture. Sprinkle each turkey leg with about 1/2 teaspoon of poultry seasoning, salt, and black pepper to taste. Wrap the leg tightly in aluminum foil. Repeat with remaining legs.
- Place the wrapped turkey legs into a slow cooker with no liquids or other ingredients. Set the cooker to Low, and cook until the meat is very tender, 7 to 8 hours.

- To make wings: heat oven to 350°; brush wings with vegetable oil and place in a large roasting pan; stir together salt, pepper, garlic powder, poultry seasoning and onion powder in a medium bowl; sprinkle over turkey wings.
- Bake until browned, 45-60 minutes.
- To make sauce: melt butter in a large heavy saucepan or dutch oven; add celery and onion; cook over medium-low heat until soft but not browned, about 5 minutes; stir in thyme and pepper; cook 1 minute; add flour; cook, stirring constantly, until light brown, about 5 minutes; slowly whisk in broth.
- Heat liquid to a boil; reduce heat and simmer uncovered 20 minutes.
- Strain sauce through a sieve and return to the saucepan; slowly whisk in milk and stir constantly until sauce returns to a simmer.
- Pour sauce over turkey wings; cover and cook until tender, about 1 hour.

EASY CROCK POT TURKEY LEGS
Turkey legs taste great prepared with the oil alone or with the oil and seasonings both. A flavorful option is to use the oil with parsley, sage, rosemary, and thyme as seasonings. You may make gravy with the drippings or use it as turkey broth in soup and other recipes. The broth is especially good in Progresso BestLife lentil soup to which you also add some leftover turkey and some turkey ham cubes. An oval slow cooker is easiest fit for turkey legs. Put an oval rack under legs and watch cooking time if you want firmer legs, often separate from broth.

- Place an oval meat rack in a slow cooker lightly coated with 1 tablespoons extra virgin coconut oil for 200 degrees maximum heat.
- Brush legs lightly with 1 tbsp.liquified extra virgin oil.
- Mix seasonings together and sprinkle over turkey legs.
- Cover and cook on low 10-12 hours or until tender. Alternatively, cook on high about 5 1/2-6 hours. This recipe assumes low temperature is at least 185 degrees.
