3 cloves garlic, minced
1 tablespoon dried rosemary
salt and pepper to taste
2 pounds boneless pork loin roast
¼ cup olive oil
½ cup white wine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Crush garlic with rosemary, salt and pepper, making a paste. Pierce meat with a sharp knife in several places and press the garlic paste into the openings. Rub the meat with the remaining garlic mixture and olive oil.
  • Place pork loin into oven, turning and basting with pan liquids. Cook until the pork is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Remove roast to a platter. Heat the wine in the pan and stir to loosen browned bits of food on the bottom. Serve with pan juices.

1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup finely chopped green pepper
3 tablespoons butter
6 garlic cloves, minced
1 teaspoon salt
1 teaspoon pepper
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon paprika
1 teaspoon ground mustard
1/2 teaspoon garlic powder
1 boneless whole pork loin roast (4 to 5 pounds)

Steps:

  • In a skillet, combine the first 12 ingredients; saute until the vegetables are tender. Untie roast and separate. Randomly cut 20 deep slits, 1 in. wide, on inside surface of roast. Fill slits with some of the vegetable mixture; retie roast. Place on a rack in a shallow baking pan. Spread remaining vegetable mixture over the roast. Bake, uncovered, at 325° for 2-3 hours or until a thermometer reaches 160°-170°. Let stand for 10 minutes before slicing.

2 tablespoons butter
½ teaspoon ground black pepper
½ teaspoon cayenne pepper
½ teaspoon dried thyme
1 teaspoon dried oregano
½ teaspoon dry mustard powder
2 cloves garlic, minced
1 (3 pound) boneless pork loin roast
1 stalk celery, diced
2 medium carrots, diced
1 large onion, diced
salt and ground black pepper to taste
3 tablespoons flour
½ cup pork stock

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Melt the butter in a skillet over medium heat, and stir in the black pepper, cayenne pepper, thyme, oregano, dry mustard powder, and garlic. Cook and stir until the garlic is fragrant, about 1 minute. Remove from heat.
  • With a sharp knife, make several small slits in the pork roast. Place the roast into a roasting pan, and spread the spice mixture all over the roast and in the incisions. Surround the roast with celery, carrots, and onion, and season to taste with salt and black pepper.
  • Roast in the preheated oven until the pork roast is browned and an instant-read meat thermometer inserted into the center of the roast reads at least 150 degrees F (65 degrees C), about 2 hours. About 15 minutes before the end of cooking, turn the oven temperature up to 425 to help brown the roast.
  • Remove pork roast from oven, and allow to stand for about 10 minutes before slicing. Check temperature again; roast temperature should be at least 160 degrees F (75 degrees C) before serving.
  • While roast is resting, place the roasting pan containing vegetables and pan drippings over a stove burner set to medium heat. Whisk in the flour, and simmer the drippings and flour for about 3 minutes to remove raw taste from flour. Whisk in the pork stock, a little at a time, until the gravy is thickened. Strain the gravy, and serve with the roast.

Around 2.6 lb (1.2kg) pork loin
3 tbsp olive oil
4 tbsp balsamic vinegar
4 cloves of garlic
1/2 lemon zest
1 tsp onion powder
1 tsp paprika
1 tsp dried rosemary
1 tsp dried thyme
Salt and pepper

Steps:

  • Preheat the oven to 285°F (140°C).
  • Place the pork loin in a skillet over medium heat with olive oil, roast on each side for about 2 minutes.
  • Put the spices in a blender or in a mortar and pestle, combine them into a paste.
  • Now coat all the sides of the pan-fried pork with the marinade paste.
  • Place the meat in the oven at (285°F) 140°C and bake for the next 50-60 minutes. Then increase the temperature to 340°F (170°C) for the next 15 minutes. Once the roast reaches 140°F turn off the oven - it will come up to 145°F as it cools.
  • Leave the pork in it to allow the meat to cool slightly - 5 to 10 minutes should suffice.
  • Serve warm, cut into thin slices and enjoy!

pork loin roast, 2-3lbs., boneless
1 tbs kosher salt
1 tbs Worcestershire sauce
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp rosemary, dried and crushed
1 tsp black pepper, ground

Steps:

  • Preheat oven to 425°(F). Line a sheet pan with aluminum foil, spray with a little non-stick cooking spray and set aside.
  • Mix all dry ingredients in a small bowl and set aside.
  • Trim any excess fat from top of pork loin roast. Place roast on a large plate and coat with Worcestershire sauce, then with dry seasonings. Rub liberally on all sides of the pork.
  • Place seasoned pork roast, fat side up, on foil lined sheet pan and place in oven at 425°(F) for 15 minutes.
  • After 15 minutes, reduce heat to 375°(F) and continue roasting for about 45 minutes or until internal temperature of the pork is 145°(F) at the center of the roast.
  • Remove from oven and tent pork roast loosely with a piece of foil for 5-10 minutes before serving.

3 1/2 lbs center cut pork loin
2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon red wine vinegar
1 teaspoon dry mustard
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon fresh cracked pepper

Steps:

  • Preheat over to 325.
  • Line baking pan with heavy duty aluminum foil.
  • Mix together, in bowl, Honey, Soy Sauce, Red Wine Vinegar, Dry Mustard, Salt, Garlic Powder and Cracked Pepper.
  • Place Pork loin on aluminum foil and brush on the sauce (don't use all, as you will be basting the pork every 1/2 hour.
  • Cover with Foil and place in oven.
  • Baste with Sauce every half hour.
  • Remove foil last hour.
  • Bake 2-1/2 hours.
