Soft Baked Oatmeal Breakfast Bars are loaded with coconut, fruits, seeds, warm spices, and rolled oats, with just the right amount of sweetness.

3 large eggs
2 cups unsweetened applesauce
½ cup honey
1 large banana (mashed)
1 teaspoon vanilla
5 cups old-fashioned rolled oats
1 cup shredded coconut
¼ cup ground almonds (or ground flaxseed)
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon salt
2 cups almond milk
chopped dried fruits (raisins, Craisins, dried apricots, dried pineapple, etc. )
chopped nuts or seeds (sunflower seeds, walnuts, cashews, pecans, etc. )
ginger chips

Steps:

  • Preheat oven to 375°F | 190°C.

4 cups quick-cooking oats
1 cup packed brown sugar
1 teaspoon salt
1-1/2 cups chopped walnuts
1 cup sweetened shredded coconut
3/4 cup butter, melted
3/4 cup orange marmalade

Steps:

  • In a large bowl, combine the oats, brown sugar and salt. Stir in remaining ingredients. Press into a greased 15x10x1-in. baking pan. Bake at 425° for 15-17 minutes or until golden brown. Cool on a wire rack.

1 cup chopped dates
1/2 cup water
1/4 cup sugar
1-1/2 cups quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup butter, melted
1 large egg white, room temperature

Steps:

  • Preheat oven to 350°. Place dates, water and sugar in a small saucepan; bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, until thickened, about 5 minutes, stirring constantly., In a large bowl, mix oats, flour, brown sugar, baking soda and salt; stir in melted butter and egg white. Press half of the mixture into an 8-in. square baking pan coated with cooking spray. Spread carefully with date mixture; top with remaining oat mixture. , Bake until lightly browned, 20-25 minutes. Cool in pan on a wire rack. Cut into bars.

  • PREP: Preheat the oven to 325 degrees F. Line an 8x8-inch pan with parchment paper, leaving an overhang for easy bar removal, and set aside.
  • BARS: Combine all the ingredients except the peanut butter chips in a large bowl. Beat with a hand mixer until smooth. Add in the peanut butter chips and fold with a spatula to combine.
  • BAKE: Transfer batter to the prepared pan and smooth into an even layer. Bake for 18-22 minutes or until lightly browned around the edges. They may look a bit underdone or gooey in the center, but as long as they don't jiggle at all, they are done. These bars continue to set up and firm up as they cool.
  • CUT AND SERVE: Remove bars from the oven and let cool completely in the pan. Use the parchment paper overhang to pull out the bars and cut into 12 squares. Use a sharp knife to cut the bars.
