Soft Crust Sourdough Bread image

I adapted this recipe from a non-sourdough recipe by NZ cooking greats Alison and Simon Holst. It also works well using half white and half wholemeal flour. Note: the time this takes to prepare really depends on how active your sourdough is and you might choose to put your dough in a cool place to slow the rise and develop the sour flavour more, I like to take my time and start in the morning and bake it before dinner.

1 cup active sourdough starter
2/3 cup milk
2 teaspoons sugar
1 1/2 teaspoons salt
2 tablespoons oil
2 1/3 cups high grade flour

Steps:

  • Mix together the first 5 ingredients and 1 cup of flour. Cover and leave in a warm place for at least 1 hour, it should start to rise a little.
  • Stir in the remaining flour. Knead for 10 minutes or until a soft dough forms that springs back when gently pressed.
  • Turn the dough in 1-2 teaspoons of oil in a clean bowl. Cover with cling film and leave to sit for another hour or more, until doubled in size.
  • Shape dough on a lightly oiled tray. Cover with a large container with room for it to rise without touching the sides. Leave in a warm place until doubled in size.
  • Bake in a preheated oven at 410 degrees (210 deg celsius) for 12 minutes.
  • Cool on a wire rack.

Makes 2 medium size, beautiful soft, tasty loaves. I like to use proving baskets and bake on a pizza stone.

2 cups active starter
1 cup milk
1/2 cup water
1/4 cup oil or 1/4 cup melted butter
1/4 cup honey
2 1/2 cups whole wheat flour
3 cups white flour
3 teaspoons salt

Steps:

  • Mix all ingredients together and knead dough for about five minutes. If dough is too sticky, add slightly more flour but dough should be soft and not dry and stiff. Place in oiled bowl and allow dough to rise for 3-4 hours or until nearly doubled in size.
  • Divide dough into two pieces and shape into loaves and place in two greased bread pans or proving baskets. If a free form loaf is desired, place on greased baking sheet. Spray with oil and cover with plastic wrap to keep from drying out. Allow to rise for 2-3 hours. About 30min before the bread is ready pre heat your oven to 450f/250c.
  • When dough has risen, slash the top of the loaf. Place in pre heated oven at the high temp for 10min ( this will give lovely crust with great colour, do not fear it will not burn in this time) then reduce temp to 375f/190c for a further 20 minute.

  • Warm the milk in the microwave to until scalding hot (just before it comes to a boil.) Stir the butter into the warm milk to melt. Set the milk aside to cool until it's slightly warmer than body temp (about 100°-110°F).
  • In a mixer bowl, combine the warm milk with the starter, sugar and salt and stir to combine. Add 1.5 cups of the flour and stir until the batter looks like thick pancake batter. If using a stand mixer, change to the dough hook.
  • With the mixer running, slowly add the remaining flour until the dough gathers on the hook and clears the sides of the bowl. Knead for 5 minutes. If mixing by hand, stir in as much flour as you can then turn the dough out onto a floured surface and knead in the remaining flour.
  • Remove the dough from the bowl onto a lightly floured surface. The dough should be soft and slightly sticky. Knead to form a smooth ball. If the dough is very sticky sprinkle a little more flour as you knead.

  • Add the starter to a large bowl. Mix in warm water and sugar, stirring until dissolved. Add bread flour, oil, and salt. Stir with a dough whisk or wooden spoon until a thick, shaggy dough forms. Flour your hands, and finish mixing dough by hand until all the flour has been absorbed. Cover with a clean, damp kitchen towel and let the dough rest for 30 to 45 minutes.
  • Coax the dough from the bowl and stretch and fold the dough by stretching 4 inches then pushing it down the middle and turning 1/4 until you make a circle. Return the dough to the bowl, cover with a damp towel, and let rise overnight (at least 8-10 hours) until double in size.
  • In the morning, lightly flour your counter top. Remove the dough from the bowl, gently stretching it into a rectangle, then your fingers to dimple the rough to release the air from the dough (as shown in photo). Roll up dough into a log shape. Cover and let the dough rest 10 minutes.
  • Spray bread pan with cooking spray. Tighten the dough log by gently pulling it towards you along the counter top for 5-8". Place it in your loaf pan, seam side down. Cover and let rise for 1-2 hours, until dough has doubled in size. Press the corner edge of the dough in 1/2" and if the indentation remains, it's ready to bake.

  • Soak your flour with the correct amount of water! Gluten is flour’s insoluble protein that forms the dough’s structure and retains the gas produced by the levain.
  • Achieve a windowpane at the end of the first rise. For gluten to stretch into a lovely strong network that’s able to stretch and grow, it needs to develop to its potential.
  • Use fat in the recipe. Using fat is one of the best ways to make soft sourdough bread. Adding fat such as butter or a vegetable oil acts as a tenderiser for the gluten whilst increasing the rate of browning in the oven (Maillard effect).
  • Delay the fat in the recipe. When using high amounts of fat in the recipe, it is best to delay their addition if possible. Fat inhibits the ability of the gluten to develop, so doughs that contain over 5% of fat have a weaker gluten structure.
  • Shorten the baking time. The shorter the time a bread spends in the oven, the less moisture will escape it. Retaining moisture is essential for a softer crumb and key to a softer crust.
  • Boost your oven spring with extra sugars. As discussed, you won’t be adding much steam to the oven (or any at all) for sourdough with a soft crust. But, you’ll still want your bread to rise in the oven to aerate the crumb and prevent your sourdough from being too dense.
  • Perfect your starter. Yeast-leavened dough that has been proofed quickly is often soft. The reason for fast-proofed bread being softer is yeast respiration.
  • Use plenty of starter to make a softer crumb. We want our sourdough bread to be lighter tasting and have a close-knit crumb structure. To achieve this, we need the dough to rise quickly without the development of lactic and acetic acids.
  • Use high protein flour. When using a short development time use high-protein flour. The extra protein enables the dough to trap more gas during the early stages of its rise, thus shortening the length of the second rise.
  • Use a bread pan with a lid – Pullman loaf tin. The supersoft Pullman or supermarket sliced bread are baked in a bread tin with a lid. There’s a good reason for this as the cover retains moisture in the bread, making the crust soft.
