CHEWY DATE NUT BARS
You'll need just six ingredients, including a convenient boxed cake mix, to bake up these chewy bars chock-full of walnuts and dates. They are my husband's favorite snack, and he loves to take them to work. I often whip up a batch for bake sales or to share with my co-workers at our local car dealership.

Steps:
- In a large bowl, combine cake mix and brown sugar. Add butter and eggs; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Combine dates and walnuts; stir into batter (batter will be stiff). , Spread into a greased 13x9-in. baking pan. Bake at 350° for 35-45 minutes or until edges are golden brown. Cool on a wire rack for 10 minutes. Run a knife around sides of pan to loosen; cool completely before cutting.

GRAMMA'S DATE SQUARES
A date filled bar with a chewy oatmeal crust. This is my grandmother's recipe, which my whole family loves.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
- In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
- Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

These rich tasting squares use less sugar than other recipes but you would never know it. Bring squares to room temperature to serve, about 15 minutes.

- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x11-inch baking pan and line with parchment paper.
- Heat dates, orange juice, and lemon juice in a large saucepan over medium-low heat, stirring often, until dates are soft, about 6 minutes.
- Stir whole wheat flour, oats, brown sugar, baking powder, baking soda, and salt together in a large bowl; stir in melted butter. Press half of the oat mixture evenly into the prepared pan.
- Spread date mixture evenly over oat mixture; sprinkle remaining oat mixture evenly over date mixture and press down lightly.

- 1. In small saucepan, combine margarine, dates, water and 3 tablespoons of the sugar. Cook over medium heat, stirring constantly until consistency of soft paste. Remove from heat. Stir in almonds. Set aside.2. Measure corn syrup and the remaining 1 tablespoon sugar into large saucepan. Cook over medium heat, stirring constantly until mixture comes to a rolling boil. Boil 1 minute. Remove from heat. Stir in vanilla flavoring. Add KELLOGG'S® PRODUCT 19® cereal. Stir until well covered.3. Press half the mixture evenly and firmly into buttered 9 x 9 x 2-inch pan. WHEAT-FREE DATE SQUARES
Traditional date squares using spelt flour instead of wheat and sucanat instead of brown sugar. You can use 1 1/2 cups whole spelt or 2 cups light spelt instead of part whole and part light. Nice and not too sweet.

- Mix dry (first 7) ingredients together.
- Boil 1 lb. (or more) dates with a pinch of salt and water level to top of dates. Boil 5-10 minutes-until dates become mushy and water is absorbed. Cool slightly and add 1 teaspoons vanilla.
- Place half of oat mixture in a lightly greased 9 x 12-inch pan and press down lightly, spread dates over, then top with remaining oat mixture pressing down lightly.
- Bake at 375ºF for 20 minutes or until lightly browned.

- Preheat oven to 350°F.
- Grease a 13- by 9- by 2-inch metal baking pan, then line with foil, leaving a 2-inch overhang on 2 opposite sides, and butter foil.
- Whisk together flour, salt, and spices. Beat together butter and granulated sugar in a bowl with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes in a standing mixer (preferably fitted with paddle attachment) or 6 minutes with a handheld. Reduce speed to low and add eggs 1 at a time, mixing well after each addition. Add baking soda mixture and mix until combined. Add flour mixture, walnuts, and dates and mix until just combined.
- Spread batter evenly in baking pan and bake in middle of oven until a tester comes out clean, 50 minutes to 1 hour. Cool in pan on a rack 15 minutes. Carefully lift date mixture out of pan using foil overhang and transfer to a cutting board. Cut into 1-inch squares and peel from foil.
- Toss warm squares a few at a time in confectioners sugar, then transfer to a rack to cool completely. Sprinkle with more confectioners sugar just before serving.
SOFT 'N' CHEWY DATE SQUARES
Each square has 5g whole grains, 122 calories, 6g fat, 2 g protein, 9g complex carbohydrates, & 9g sugar, 1g fiber. I think next time I'd try this with a little less sugar and maybe sub part of the butter with peanut butter. I threw in a handful of mini semisweet chocolate chips, but I don't really think it added anything to the bars. They were very soft, chewy, and yummy.
