2 tablespoons butter, softened
2/3 cup sugar
2 large eggs, lightly beaten
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 cup orange juice
1-1/2 teaspoons grated orange zest
1 teaspoon lemon juice
1 cup fat-free milk

Steps:

  • In a small bowl, beat butter and sugar on medium speed for 1 minute. Add the eggs, flour and salt. Beat for about 2 minutes or until thickened. Add the orange juice, orange zest and lemon juice. Stir in milk., Pour into five 6-oz. ramekins or custard cups. Place ramekins in a 13x9-in. baking pan. Add 1 in. of boiling water to pan. , Bake, uncovered, at 325° for 35-40 minutes or until a knife inserted in the center comes out clean. Remove ramekins from water bath. Serve warm or chilled. Refrigerate leftovers.

1 tablespoon cornstarch
1 1/2 cups whole milk
3 large eggs
1 cup sugar
1/4 teaspoon kosher salt
1 1/2 cups heavy cream
2 teaspoons vanilla extract
2/3 cup frozen orange juice concentrate, thawed
4 teaspoons grated orange zest

Steps:

  • Whisk the cornstarch and 1/2 cup milk in a small bowl until smooth. Whisk the eggs, sugar and salt in a medium saucepan; whisk in the cornstarch mixture and the remaining 1 cup milk until smooth.
  • Cook the mixture over low heat, stirring, until thick enough to coat a spoon, 7 to 8 minutes (do not boil). Pour through a fine-mesh sieve into a bowl, then set the bowl in a larger bowl of ice water. Add the cream and stir until cool. Remove from the ice bath; stir in the vanilla, orange juice concentrate and orange zest. Cover and chill until cold.
  • Freeze the custard in an ice cream maker according to the manufacturer's directions. Scrape into a pastry bag fitted with a large star tip and pipe into cups.

3 large egg yolks
1/4 cup sugar
1/8 teaspoon salt
2 cups whole milk
1/2 teaspoon vanilla extract
Sliced pound cake
Fresh berries of choice

Steps:

  • Beat together eggs, sugar and salt. Scald milk (heat to 180°) and pour slowly over egg mixture. Return mixture to top of double boiler or metal bowl over simmering water, and constantly whisk the egg yolks, water and lemon juice until mixture reaches 160° or is thick enough to coat the back of a spoon., Mixture will not have the consistency of a firm baked custard. Cool over ice water, stirring occasionally. Add vanilla. If mixture separates, beat with egg beater until smooth. Serve chilled over slice pound cake; top with berries.

1 pint milk
4 eggs
2 egg yolks
Grated rind 1/2 an orange
Pinch salt
1/4 cup sugar
1/4 cup water
1/3 cup sugar

1/2 box strawberries
1 small bunch grapes
1 small bunch red grapes
1 cup champagne

Steps:

  • Combine 1 pint milk, 4 eggs, 2 egg yolks, the grated rind of 1/2 an orange, a pinch of salt and 1/4 cup of sugar, bake in a shallow pie dish or 4 individual ramekins in a bain marie (roasting pan with 1/2-inch hot water) in a preheated 325 degree oven for 25 to 35 minutes or until just "set" (knife should come out clean when inserted).
  • Boil water with 1/3 cup sugar and salt for 1 minute in a large saucepan. Add strawberries and bring back to a boil, then add the grapes. Boil again and finish with champagne and pour around unmolded custard.

2 cups whipping cream
1/3 cup honey
5 large egg yolks
1 teaspoon grated orange peel
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 325°F. Combine whipping cream, honey, egg yolks, grated orange peel and vanilla in medium bowl and whisk to blend. Divide custard among six 3/4-cup ramekins or custard cups. Place ramekins in 13 x 9 x 2-inch pan. Pour enough hot water into pan to come halfway up sides of ramekins. Cover pan loosely with foil.
  • Bake custards in water bath until just set in center, about 1 hour. Remove custards from water bath. Place in refrigerator until cold, about 6 hours. (Custards can be prepared 1 day ahead. Cover and keep refrigerated.)

3/4 cup all purpose flour
2/3 cup yellow cornmeal
2/3 cup powdered sugar
2 teaspoons minced orange peel (orange part only)
1/4 teaspoon salt
7 tablespoons butter, room temperature
1 large egg yolk
2 teaspoons vanilla extract
Filling
1 cup whipping cream
1/2 cup fresh orange juice
5 large egg yolks
1/4 cup plus 1 tablespoon sugar
2 tablespoons Grand Marnier
1 tablespoon minced orange peel (orange part only)
3 oranges, peeled, white pith removed
2 1/2-pint boxes raspberries

Steps:

  • For crust:
  • Combine first 5 ingredients in large bowl. Add butter, egg yolk and vanilla. Using electric mixer, blend until coarse crumbs form. Knead into ball. (Dough will be very soft.) Pat dough onto bottom and up sides of 13 1/2x4 1/4-inch rectangular tart pan or four 4-inch-diameter tartlet pans with removable bottom. Press into place; trim excess dough. Freeze 20 minutes.
  • Preheat oven to 350°F. Line crust with foil and fill with dried beans or pie weights. Bake 15 minutes. Remove foil and beans. Press crust up sides of pan if necessary. Bake 10 minutes longer. Cool.
  • For filling:
  • Mix first 6 ingredients in medium bowl. Pour filling into crust. Bake until barely set, about 30 minutes. Cool 20 minutes. Refrigerate until custard is firm, about 3 hours. (Can be prepared 8 hour ahead.)
  • Using small sharp knife, cut between membranes of oranges to release segments. Drain well on paper towels. Arrange alternating rows of orange segments and raspberries atop tart.

1 whole vanilla bean, split lengthwise
1/2 cup heavy cream
1 cup milk
8 large egg yolks
1/3 cup sugar

Steps:

  • Heat split vanilla bean, cream, and milk in the top of a double boiler over gently simmering water, until almost boiling.
  • In a medium bowl, whisk together egg yolks and sugar. Scrape vanilla seeds into milk, and discard pod. Pour a little of the hot milk into the eggs, whisking constantly. Pour the remaining hot milk into eggs, still whisking constantly. Transfer the egg mixture back to the double boiler, and cook, whisking constantly, until the mixture thickens, about 3 minutes. Be sure not to let the mixture boil, because it will curdle.
  • Remove the pan from the heat, and pour the custard through a fine-mesh sieve into a clean bowl set in a bowl of ice water. Stir the mixture as it cools to stop the cooking. When cool, transfer to an airtight container, and store in the refrigerator until ready to use. Will keep 2 days in refrigerator.
