1 boneless skinless chicken breast half, cut into 2-inch strips
1 cup sliced fresh mushrooms
1/3 cup chopped onion
1/3 cup chopped green pepper
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 cup chicken broth
2 tablespoons sour cream
1/4 teaspoon salt
1/8 to 1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
Hot cooked pasta

Steps:

  • In a large skillet, saute the chicken, mushrooms, onion and green pepper in butter until chicken is no longer pink. Combine flour and broth until smooth; gradually add to the skillet. Bring to a boil; cook and stir for 2 minutes or until thickened., Reduce heat. Add the sour cream, salt, pepper and nutmeg; cook and stir until heated through (do not boil). Serve over pasta.

2 tablespoons vegetable oil
4 skinless, boneless chicken breast halves (about 1 pound), cut into strips
2 cups sliced mushrooms (about 6 ounces)
1 medium onion, chopped (about 1/2 cup)
1 can (10 3/4 ounces) Campbell's® Healthy Request® Condensed Cream of Chicken Soup
1/2 cup plain nonfat yogurt
1/4 cup water
4 cups medium egg noodles, cooked without salt and drained
Paprika

Steps:

  • Heat 1 tablespoon oil in a 10-inch skillet over medium-high heat. Add the chicken and cook until well browned, stirring often. Remove the chicken from the skillet.
  • Heat the remaining oil in the skillet over medium heat. Add the mushrooms and onion and cook until they're tender.
  • Stir the soup, yogurt and water in the skillet and heat to a boil. Return the chicken to the skillet. Reduce the heat to low. Cook until the chicken is cooked through. Sprinkle with the paprika, if desired. Serve the chicken and sauce with the noodles.

I wanted something like the traditional beef stroganoff and threw this one together, writing down everything as I went so I wouldn't forget. I served with noodles, but rice would be great, too. Asparagus for a vegetable and a green or fruit salad is great! Nutmeg seems to be the secret ingredient of many Stroganoff recipes.

4 skinless, boneless chicken breast halves
2 cups all-purpose flour for coating
salt and pepper to taste
1 tablespoon butter
1 (10.75 ounce) can condensed cream of chicken soup
1 ¼ cups half-and-half cream
1 (1 ounce) package dry onion soup mix
2 tablespoons chopped fresh parsley
2 cloves garlic, minced
2 cups fresh sliced mushrooms
¼ teaspoon ground nutmeg
1 teaspoon browning sauce
1 cup sour cream
⅛ cup chopped green onion for topping

Steps:

  • In a shallow dish or bowl, season flour with salt and pepper to taste. Dredge chicken in seasoned flour to coat. In a large skillet, brown coated chicken in melted butter or margarine until golden.
  • In a medium bowl combine the soup, half-and-half, dry onion soup mix, parsley, garlic, mushrooms, nutmeg and browning sauce. Mix all together and pour mixture over chicken in skillet. Reduce heat to low and let simmer, covered, for 1 hour.
  • Stir in sour cream and heat through, but DO NOT BOIL! Top with chopped green onion and serve over noodles or rice, if desired.

1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup butter
1/2 cup chopped onion
1 package (8 oz) white mushrooms, sliced
1 package (20 oz) boneless skinless chicken thighs, cut into 1-inch pieces
1 1/4 cups Progresso™ chicken broth (from 32-oz carton)
1 tablespoon Worcestershire sauce
1 cup sour cream
Chopped Italian (flat-leaf) parsley, if desired
6 cups cooked egg noodles, if desired

Steps:

  • In small bowl, mix flour, paprika, salt and pepper; set aside.
  • In 12-inch nonstick skillet, heat 2 tablespoons of the butter over medium heat; add onion and mushrooms. Cook 5 to 7 minutes, stirring occasionally, until vegetables are tender; transfer mixture to small bowl.
  • In same skillet, melt remaining 2 tablespoons butter; add chicken, and cook 4 to 6 minutes, stirring frequently, until chicken starts to brown. Add onion and mushroom mixture back to skillet; sprinkle with flour mixture, stirring to coat. Slowly add chicken broth and Worcestershire sauce, stirring constantly.
  • Heat to simmering; reduce heat to medium-low, and cook 3 to 5 minutes, stirring occasionally, until sauce is thickened and chicken is cooked through. Remove from heat; stir in sour cream. Garnish with parsley. Serve mixture over cooked egg noodles.

1 tablespoon unsalted butter
8 ounces cremini mushrooms, sliced
Kosher salt and freshly ground black pepper
1 1/2 pounds boneless, skinless chicken breasts, cut into chunks
1 tablespoon olive oil
1 yellow onion, thinly sliced
3 tablespoons all-purpose flour
3 cups chicken broth
1 tablespoon Worcestershire sauce
1 packet French onion soup mix
1/3 cup sour cream, plus more for serving
Cooked wide egg noodles, for serving
3 tablespoons minced fresh chives

Steps:

  • In a large skillet, melt the butter over medium heat. Add the mushrooms and cook, stirring occasionally, until golden brown, 5 to 7 minutes. Season with salt and pepper. Remove from the skillet and set aside.
  • Season the chicken with salt and pepper. Return the skillet to the stove, add the olive oil and increase the heat to medium high. Add the chicken, working in batches if necessary, and cook until it begins to brown on each side, about 5 minutes. Add the onions and cook until tender, 3 to 4 minutes. Stir in the flour and cook for an additional 2 minutes. Stir in the broth, scraping up any browned bits with a wooden spoon. Stir in the Worcestershire sauce, soup mix and cooked mushrooms. Reduce the heat to low and simmer until the broth is thickened to a gravy, about 7 minutes. Stir in the sour cream.
  • Serve over egg noodles with a dollop of sour cream and garnish with fresh chives.

1 boneless skinless chicken breast
2 ounces sliced mushrooms, and half the liquid from that can (half a can)
1/4 cup onion, diced
1/4 cup sour cream
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
1/4 teaspoon dried thyme
1 cup dried flat noodles
1 tablespoon olive oil (divided)
1 tablespoon butter
1 tablespoon flour

Steps:

  • Start cooking the noodles in 2 quarts of salted water.
  • Cover both sides of the thawed Chicken Breast with the salt, pepper, and just a little olive oil.
  • Fry whole, in a deep pan (I like Cast Iron) 4 minutes per side.
  • Set aside and allow to rest for at least 5 minutes before cutting into bite pieces.
  • Add the rest of the olive oil, and the butter into the pan, and saute the onion and the mushrooms.
  • In a seperate bowl, mix the Sour Cream, the liquid from the Mushroom Can (about 1/4 cup) and the Nutmeg and Thyme.
  • When the onions and mushrooms are done, add the flour and stir.
  • Add the sour cream mixture, and stir to make a sauce.
  • If the sauce is too thick, add small amounts of water from the pasta pot.
  • When the pasta is done (about 8 minutes), add to the sauce, follwed by the chicken, and stir.
  • Serve with a salad of a green vegetable.

1/3 green bell pepper, stem and seeds removed
1/3 cup onion, diced
1 (4 ounce) can mushroom stems and pieces

1/2 cup white wine

Steps:

  • Saute the onion and mushrooms in butter until the onion is nearly transparent.
  • Cut the chicken breast and the bell pepper into thin slices and add along with the nutmeg and salt.
  • When the the chicken turns white and the peppers become limp, add the rest of the ingredients and cook over a medium heat until the chicken is completely cooked through, about 10 minutes.
