SOMETHING DIFFERENT BANANA BREAD
Just a small amount of chocolate to complement the banana flavor - Yum! This recipe was submitted by a woman named Nicole for an event at my church. The original recipe called for "2 pinches of coconut," but since the instructions never said where or when to add the coconut, I've left it out. I've made this bread twice now without the glaze, and it's very good just as is. It's moist but still holds together when you slice it.

Steps:
- Heat oven to 350°F Grease bottom only of full size loaf pan. (9"x5"x3").
- Mix sugar and butter or margarine in a 2 and1/2 quart bowl.
- Stir in eggs until blended.
- Add bananas and water, and beat 30 seconds.
- Stir in remaining ingredients, except the chocolate chips.
- Pour into pan.
- Place chocolate chips in small bowl into microwave, and microwave on high, stirring at 15-second intervals, until smooth. Chocolate scorches fairly easily, so keep an eye on it.
- Now drip the melted chocolate down the center of the loaf lengthwise.
- With a butter knife or something similar, zigzag gently over the chocolate the full length of the loaf, piercing down only about one or two inches.
- Place pan in center of oven for approximately 55 minutes.
- Bread is done when a toothpick comes out clean.
- Let bread cool, then you can glaze it.
- Mix the confectioner's sugar with a drop or two of water at a time until you get the consistency you want.
- Drizzle glaze over the bread.

BANANA SOUR CREAM BREAD
I know, you're probably thinking, 'Oh no! Another banana bread recipe!' But this one is a little different: the sour cream makes this one so moist it melts in your mouth. The flavor is just wonderful! This one is great for gift giving and holidays. Loaves freeze well.

- Preheat oven to 300 degrees F (150 degrees C). Grease four 7x3 inch loaf pans. In a small bowl, stir together 1/4 cup white sugar and 1 teaspoon cinnamon. Dust pans lightly with cinnamon and sugar mixture.
- In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix in salt, baking soda and flour. Stir in nuts. Divide into prepared pans.
- Bake for 1 hour, until a toothpick inserted in center comes out clean.

SPICED BANANA BREAD
This is a very moist banana bread with a little kick of spice. Loved by my family and all who have tried it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8x3 inch loaf pans. Whisk together the flour, baking powder, and baking soda; set aside.
- Mash the bananas, eggs, sugar, cinnamon, salt, nutmeg, and cloves together in a large bowl with a fork until well combined. Stir in the melted butter and vanilla extract, then fold in the flour mixture until a batter forms and no dry lumps remain. Pour into the prepared loaf pans.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes, then remove from the pan, and allow to cool completely on a wire rack.
