Sonnys Tater Tot Casserole Recipes
SONNY'S TATER TOT CASSEROLE
A simple filling casserole, packed with flavor. Onions, mushrooms, and spinach add zing to this long time favorite of my family and all those I've served it to.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Crumble the ground beef into a large skillet over medium-high heat. When it starts to release some juices, add the onion. Season with Worcestershire sauce and pepper. When the beef is nearly completely browned, add the mushrooms, and saute them for a couple of minutes. Drain off any excess grease, and stir in the cream of mushroom soup and spinach.
- Transfer the beef mixture to a 9x13 inch baking dish. Top with slices of Swiss cheese. Neatly layer the potato rounds over the top.
- Bake for 45 to 60 minutes in the preheated oven, until the potato rounds are toasted.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Crumble the ground beef into a large skillet over medium-high heat. When it starts to release some juices, add the onion. Season with Worcestershire sauce and pepper. When the beef is nearly completely browned, add the mushrooms, and saute them for a couple of minutes. Drain off any excess grease, and stir in the cream of mushroom soup and spinach.
- Transfer the beef mixture to a 9x13 inch baking dish. Top with slices of Swiss cheese. Neatly layer the potato rounds over the top.

My mom had a way with taking inexpensive or left-over meat and cream soups and inventing wonderful casseroles. Here's one of my childhood favorites.

Steps:
- Preheat oven to 350 degrees.
- In medium skillet over medium heat, sauté celery and onion in butter.
- Pour into large bowl and set aside (do not add to casserole dish yet).
- In skillet, brown the beef.
- Add salt and pepper to taste (I sometimes add a dash of garlic salt).
- Combine meat with celery and onion mixture.
- Place 1 layer of Tater Tots in the bottom of a round casserole dish.
- Top with meat mixture.
- Add another layer of Tater Tots on top of the meat.
- In separate bowl, combine soup and milk.
- Pour soup mixture evenly over top of casserole.
- Bake at 350° for 1 hour.
- Cover with foil if Tater Tots get too brown.
