1 stick (8 tablespoons) unsalted butter, room temperature
1/2 cup sugar
1/2 cup light brown sugar
2 teaspoons vanilla extract
1 large egg
2 1/2 cups baking mix
One 12-ounce bag dark chocolate chips
1/2 cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the butter, sugar and brown sugar in a stand mixer fitted with the paddle attachment. Mix until well combined and creamy. Add the vanilla and egg. Gradually add the baking mix and mix until combined. Add the chocolate chips and pecans; mix until just combined.
  • Drop heaping tablespoons of the dough onto parchment-lined baking sheets.
  • Bake until the cookies are lightly browned, about 15 minutes, rotating the baking sheets halfway through.
  • Remove from the oven and let the cookies cool on the baking sheets for 2 minutes, then transfer to a wire rack to cool completely. Store in an airtight container.

8 ounces good-quality semisweet chocolate, chopped into chunks
4 ounces good-quality dark chocolate, chopped into chunks
Sea salt, for sprinkling

Steps:

  • Line 3 baking sheets with parchment.
  • In the bowl of an electric mixer, cream together the butter, granulated sugar and brown sugar until light and fluffy, 2 to 3 minutes, scraping the sides of the bowl as needed. Add the vanilla and eggs and beat on medium speed until just combined. Add the flour, baking soda and kosher salt and mix on low speed until just combined. Remove the bowl from the mixer and stir in the chocolate chunks using a wooden spoon or spatula.
  • Use a 1/4-cup scoop to scoop the cookies, making sure to scrape the scoop against the side of the bowl to flatten off the top. Scoop onto the lined baking sheets about 2 inches apart to give them space to spread while baking. Sprinkle a pinch or two of sea salt on top of each cookie dough mound. Refrigerate, uncovered, at least 20 minutes.
  • Preheat the oven to 350 degrees F.
  • Bake until golden brown, 17 to 18 minutes. Let the cookies cool and crisp up on the baking sheets.

These cookies are so easy, I've been making them since I was 6 years old. My aunt is a professional baker, and gave me the recipe as a child. I still use, and now my kids do too. One bowl, one fork, one pan and a set of measure cups and spoons. - Note- Yes, these dooo flatten quite a bit, but I've also noticed that if there's even a teaspoon too much butter, or a bit less baking soda that happens, so when I mix the sugars into the butter, if the mix has any extra butter in it, I try to either drain it off, or spoon it out.... or I add more B.soda.... Seems to help a bit.
