Italian Ice image

A classic & delicious Italian dessert. It is very light, so it is good after a heavy meal. Serves 4

2 cups warm water
3/4 cup sugar
1/2 cup lemon juice, &
1 teaspoon lemon zest
1/2 cup lime juice, &
1 teaspoon lime zest
1 cup pureed strawberry
1/2 cup semisweet chocolate, grated & melted
maraschino cherries, with stems whole strawberries (to garnish) or chocolate shavings (to garnish)

Steps:

  • In a saucepan, dissolve sugar in water.
  • Add fruit juice, strawberries, or chocolate.
  • If adding fruit juice, let stand 5 minutes, then strain out rind.
  • Pour mixture into freezing tray & freeze, stirring frequently until mixture is thick & mushy.
  • Serve in chilled champagne glasses with appropriate garnish.

This light and frosty dessert is the perfect ending to a summer meal. It will take a few hours, so plan to make this espresso sorbet ahead of time so you can enjoy it later. Of course you can always use an ice crean maker if you have one.

6 tablespoons espresso ground coffee
4 tablespoons brown sugar
1 quart boiling water
1 cup whipped cream
cocoa powder (optional)

Steps:

  • In a bowl, combine the ground coffee and brown sugar.
  • Add boiling water and mix. Let steep until water has cooled, then strain out coffee grounds and add in the cream for a sorbetto or omitt it for am Italian Ice.
  • Pour the mixture into a shallow pan or dish, and freeze for at least 3 hours. A deeper container will take longer to freeze.
  • If you want the ice remenber to keed scraping the mix with a fork several times during freezing.
  • When the sorbet is nearly frozen (still scoop able), serve into tall chilled glasses and top with whipped cream and a sprinkle of cocoa if desired.

1 cup white sugar
⅔ cup unsweetened cocoa powder
⅛ teaspoon sea salt
2 cups water
2 tablespoons brewed espresso or strong coffee
½ teaspoon almond extract
2 tablespoons coffee liqueur (such as Kahlua®)

Steps:

  • Mix sugar, cocoa powder, and sea salt in a large saucepan. Stir in water, espresso, and almond extract. Bring to a boil over medium heat. Once the sugar has dissolved and mixture is smooth, remove from heat and stir in the coffee liqueur. Transfer mixture to a bowl, cover, and chill completely in the refrigerator or using an ice bath.
  • Pour mixture into an ice cream maker and churn until slightly thickened according to manufacturer's instructions, about 20 minutes. Transfer mixture to an airtight container and freeze until firm enough to scoop, 3 to 4 hours or overnight.

  • First combine your espresso, sugar, water, and extract and maple syrup in a small pot. Bring to a boil and then reduce to medium heat. Stir for about 15-17 minutes until the coffee/sugar combo thickens. It won’t caramelize, but it will turn into a thicker texture, almost like syrup. Remove from heat and set aside.
  • In another bowl, combine your cocoa powder and chocolate chips. Add a pinch of sea salt here if you’d like. Pour in your hot coffee/sugar mixture and whisk all together until chocolate is melted and combined with the coffee.
  • Pour this mixtures in a tin lined with parchment paper. Feel free to add a few tablespoons of coffee mean on top, etc. Place in the freezer to freezer for 8 hrs +.
  • Once the coffee chocolate mixture in frozen, cut or break up the frozen mixture into smaller pieces. This is so you can blend it together.

  • Pour the mixture into a 2.5 quart (2.36 liter) saucepan, using a spatula scrape the sides of the bowl. Place the saucepan on medium-high heat and cook, whisking continuously to prevent any burning or clumping. Whisk slowly in the beginning and increase speed as the mixture gets warmer and begins to steam and thicken. It should thicken without boiling after 8-12 minutes on the heat; watch carefully so it doesn't burn. Once the mixture has thickened enough to coat the back of a spoon, continue cooking 15 seconds longer, whisking vigorously. Then immediately remove from the heat.
  • Pour the mixture into a clean glass or stainless-steel bowl and lay plastic wrap directly on the surface to prevent a skin from forming on top. Allow the mixture to sit 30 to 45 minutes, until no longer hot. Then place in the refrigerator to cool completely, about 4 hours. If the mixture needs to be used right away, submerge most of the bowl in an ice bath and let it sit 30 to 40 minutes, refreshing the ice as necessary.
  • Enjoy the fresh gelato as soon as possible. If using after 1 day, allow 7 to 10 minutes for the gelato to soften outside of the freezer before eating.
