CHOCOLATE BREAD
An easy one bowl Chocolate Bread filled with chocolate chips.

Steps:
- Grease and line your 9 by 5 inch loaf pan with baking or parchment paper. Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced.
- In a large mixing bowl, sift together flour, cocoa, baking soda, baking powder and salt. Add sugars and gently stir.
- In the microwave, heat the butter in a large heatproof bowl until just melted, stirring in between 20 second bursts. Add your vanilla and eggs to your butter and whisk gently until combined.
- Make a well in the middle of your dry ingredients, add wet ingredients along with buttermilk. Very gently fold the mixture using a spatula or wooden spoon until the mixture is just combined - be careful not to over mix. Add 75 grams (1/2 cup) of chocolate chips to the batter.
- Pour mixture into prepared tin and sprinkle extra 35 grams (1/4 cup) of chocolate chips on top. Bake for approximately 45 minutes or until a knife inserted into the middle comes out clean. Leave to cool completely on a wire rack.

SOUR CREAM CHOCOLATE CHIP NUT LOAF
At any point during the 1980s, you could've opened the middle pantry drawer in our kitchen and discovered a treasure trove of baked goods from our supermarket's Entenmann's display: fudge-frosted doughnuts, mini chocolate chip cookies, thick-glazed cupcakes. My father had--and still has--an epic sweet tooth that deserves a three-hundred-page volume all to itself. The king of the drawer, though, was the Sour Cream Chocolate Chip Nut Loaf, because it only made rare appearances at the supermarket, and, much to our dismay, eventually disappeared from shelves across the country. (We never did find out why.) My father and I were the biggest fans of the loaf, and in the twenty-five years since I've seen it, I don't think I've ever walked by the Entenmann's section without secretly hoping I'll spy one amid the doughnut holes and crumb cakes. Until then, I have this homemade version, which comes about as close as you can get.

- Preheat the oven to 375 degrees F. Butter a 9-by-5-inch standard loaf pan.
- Make the cinnamon sugar: In a small bowl, mix together the sugar and cinnamon
- Make the batter: In a large bowl, using an electric mixer at medium speed, beat the eggs until frothy, about 3 minutes. Add the sugar and vanilla, beating until smooth. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the melted butter and sour cream to the egg-and-sugar mixture; beat until well combined. At low speed, add the dry mixture to the wet mixture a spoonful at a time, beating just until smooth. Fold in the chocolate chips.
- Spread half of the batter in the prepared pan and sprinkle evenly with about two-thirds of the cinnamon sugar. Sprinkle with the walnuts. Top with the remaining batter, spreading evenly, then sprinkle with the remaining cinnamon sugar.
- Bake for 50 to 55 minutes or until a knife or skewer inserted in the center comes out clean.

- Cream the butter, sugar and vanilla together.
- Then add the eggs and mix.
- Then put in the dry ingredients and mix well.
- Add the bananas and sour cream and mix.
- Then add in the chocolate chips and pour into 3 greased loaf pans.
- Bake at 350 for 1 hour, or until a toothpick that has been inserted into the center comes out clean.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
- In a large bowl, cream together margarine, sugar and eggs. Stir in bananas and vanilla. Sift in flour, baking soda and cocoa; mix well. Blend in sour cream and chocolate chips. Pour batter into prepared pans.

- Preheat oven to 350 degrees F. Lightly grease a 9- x 5-inch loaf pan with non-stick spray.
- In a large bowl, cream butter and sugar together until light and fluffy. Stir in egg, mashed bananas, sour cream, and vanilla until well blended. Add baking soda, cocoa, and flour. Mix everything until well incorporated (about 3 minutes in a Kitchenaid mixer). Add chocolate chips and walnuts, if used.
- Transfer batter into loaf pan and bake for 50-60 minutes. Test by inserting a toothpick into center of loaf and checking to see if it comes out clean when you pull it out.
- Remove from heat and allow bread to rest in loaf pan for 10 minutes. Invert the loaf pan onto a cooling rack. Serve bread warm or cold.

- Preheat oven to 350°. Beat eggs, sugar and sour cream until well blended. Gradually stir in flour. Fold in chocolate chips. Transfer to a greased 9x5-in. loaf pan., Bake until a toothpick comes out clean, 65-75 minutes. Cool in pan 5 minutes before removing to a wire rack to cool.

SOUR CREAM BREAD (BREAD MACHINE)
After trying a lot of really bland white bread recipes for bread makers, I found this one in the original Black and Decker book that came with my machine. It's by far the best recipe I've tried. The bread tastes like a fresh bakery loaf and is almost impossible to resist hot out of the machine with butter. Enjoy!

- 2. I use "Regular Light Crust" setting but recipe calls for "French Bread" setting.
- 3. Press start and hang around the machine asking, "Is it done yet? Is it done yet?" for a couple of hours.
- 3. Try not to eat a slice the second you take it out of the machine.

- Put the chocolate in a small microwave-safe bowl and microwave at 50% power, stirring every 30 seconds, until melted and smooth. Set aside to cool slightly.
- In a mixing bowl, beat the butter and sugar until creamy. Add the eggs one at a time, beating for at least 30 seconds after each egg and scraping the bowl often. Mixture should become slightly fluffy. Beat in the vanilla extract.
