3 cups chopped cooked chicken
1 (10 ounce) can condensed cream of chicken soup
1 cup sour cream
½ cup milk
1 (6 ounce) package dry bread stuffing mix
½ cup melted butter
hot water as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Arrange chicken in the bottom of a 2-quart casserole dish.
  • Combine cream of chicken soup, sour cream, and milk in a small bowl; mix well. Pour over the chicken.
  • Toss stuffing mix with melted butter in a bowl, adding hot water to moisten. Sprinkle stuffing over chicken in the casserole dish.
  • Bake in the preheated oven until bubbly, about 30 minutes.

2 cups torn bread
2 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
4 cups packed flat-leaf spinach, washed
1 medium yellow onion, finely chopped
1 garlic clove, minced
1/4 cup white wine
2 tablespoons all-purpose flour
1 1/2 cups half-and-half
1/2 teaspoon fresh lemon juice
1 cup shredded rotisserie chicken

Steps:

  • Preheat oven to 450 degrees. In a medium bowl, combine bread with 1 tablespoon oil; season with salt. Set aside. In a medium pot, heat 1 1/2 teaspoons oil over medium-high. Add spinach; season with salt. Cook, stirring, until wilted, 2 minutes. Transfer to a colander, let cool, then squeeze out water. Coarsely chop.
  • Wipe pot clean and heat 1 1/2 teaspoons oil over medium. Add onion, garlic; season with salt and pepper. Cook, stirring occasionally, until onion is soft, about 8 minutes.
  • Add wine to pot and cook until almost evaporated, about 5 minutes. Add flour and cook, stirring, 30 seconds. Gradually whisk in half-and-half. Add lemon juice and bring mixture to a boil over high.
  • Remove from heat and stir in chopped spinach and chicken; season with salt and pepper. Transfer to a 2-quart baking dish and top with bread pieces. Bake until bread is golden brown and mixture is bubbling, 8 to 10 minutes.

2 boneless skinless chicken breast halves (6 ounces each)
1 egg, lightly beaten
1/2 cup seasoned bread crumbs
2 tablespoons butter
4 slices sourdough bread
2 to 3 teaspoons mayonnaise, optional
2 lettuce leaves
2 Swiss cheese slices
2 tomato slices
2 bacon strips, cooked

Steps:

  • Flatten chicken to 1/4-in. thickness. Place egg in a shallow bowl. Place egg crumbs in another shallow bowl. Dip chicken in egg, then coat with crumbs. Let stand for 5 minutes. , In a large skillet, cook chicken in butter over medium-high heat for 4 minutes on each side until a thermometer reaches 170°. , Spread bread with mayonnaise if desired. Top two slices with lettuce, cheese, tomato, bacon and chicken. Top with the remaining bread.

6 tablespoons melted butter, divided
4 cups cubed sourdough rolls
1/3 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
2 medium-size sweet onions, sliced
1 (8-ounce) package sliced fresh mushrooms
1 cup white wine
1 (10 3/4-ounce) can cream of mushroom soup
1/2 cup drained and chopped jarred roasted red bell peppers
2 1/2 cups shredded cooked chicken

Steps:

  • Toss 4 tablespoons melted butter with next 3 ingredients; set aside.
  • Sauté onions in remaining 2 tablespoons butter in a large skillet over medium-high heat 15 minutes or until golden brown. Add mushrooms, and sauté 5 minutes.
  • Stir in wine and next 3 ingredients; cook, stirring constantly, 5 minutes or until bubbly. Spoon mixture into a lightly greased 9-inch square baking dish; top evenly with bread mixture.
  • Bake at 400° for 15 minutes or until golden brown.

1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained

2 cups shredded pepper Jack cheese, divided
½ cup sour cream
½ cup salsa verde
2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with nonstick spray.
  • Heat chicken broth in a small pan over medium heat, about 5 minutes.
  • Combine black beans, corn, and rice in a large bowl. Add hot chicken broth, condensed soup, 1 cup pepper Jack cheese, sour cream, and salsa; stir to combine. Stir in chicken. Pour mixture into the prepared baking dish.
  • Bake, uncovered, in the preheated oven for 45 minutes. Top with remaining pepper Jack and bake until center is set, chicken is cooked through, and cheese is golden brown, 15 to 25 more minutes.

2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
3/4 cup milk
1 egg, beaten
1/2 cup sourdough starter
1/4 cup oil or 1/4 cup melted shortening
2 quarts boiling water
2 tablespoons all-purpose flour
3 tablespoons shortening, melted
1 (6 ounce) can evaporated milk
1/2 cup milk
1 can cream of chicken soup
2/3 cup water
salt
1/4 teaspoon white pepper
1/4 chopped pimiento
2 -3 boned cooked chicken, cut into bite-size pieces

Steps:

  • Chicken: Over medium heat add flour to melted shortening.
  • Stir constantly while adding all other ingredients except chicken.
  • Add chicken, pour into a 3-quart casserole dish.
  • Dumplings: In large mixing bowl thoroughly stir together flour, salt, baking soda and baking powder.
  • Combine milk, egg, sourdough starter, and oil.
  • Add to dry ingredients all at once, stirring just till moistened.
  • Drop dough from tbsp into boiling water (dip spoon in hot liquid before dropping dumpling each time to help batter slide right off).
  • Cover and simmer for 15 minutes.
  • Remove with slotted spoon, drain and place on top of cooked chicken.
  • Cook, uncovered in over, at 350º for 10 minutes.
  • Serve hot.

CHICKEN NOODLE CASSEROLE

3 boneless skinless chicken breast halves
1 carrot peeled
2 stalks celery
1 medium onion
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
8 ounces uncooked wide noodles
butter for coating bread bowl
1/4 cup butter
3 tablespoons all purpose flour
2 teaspoons Worcestershire sauce
salt to taste
black pepper to taste
1/2 cup chopped fresh or canned mushrooms
8 ounces shredded Monterey Jack cheese
1 teaspoon paprika
1 to 1 3/4 pound Bread Bowl

Steps:

  • 1. Place the chicken, carrot, celery, onion, thyme, and rosemary in a medium pot with enough water to cover. Place over medium-high heat and bring to a boil. Reduce the heat to medium-low and cook for 5 to 7 minutes. Remove the cooked celery and carrot from the pot and let cool. 2. Continue to cook the chicken and onion another 5 to 10 minutes, or until thoroughly cooked, then remove from the pot and let cool. Reserve the broth. When cool enough to handle, cut the chicken and vegetables into bite-sized pieces and set aside. 3. Cook the noodles according to package directions until al dente. Do not overcook. Drain and set aside. 4. Preheat the oven to 350°F. Butter the inside of the bread bowl and set aside. 5. In a medium skillet, melt the 1/4 cup butter over mediumlow heat. Stirring constantly, add the flour and enough of the broth to form a thick sauce. Continuing to stir, add the Worcestershire sauce, salt, pepper, mushrooms, and half the cheese. Cook about 3 minutes or until thick. Remove from the heat. 6. Place half the noodles on the bottom of the bread bowl. Top with half the chicken and vegetables, and half the sauce. Repeat the layers. Top with the remaining cheese, and sprinkle with paprika. 7. Wrap the bowl with aluminum foil, leaving the top uncovered. Place the bowl on a baking sheet in the middle of the oven, and bake for 12 minutes or until the casserole is heated through. Carefully remove the foil and continue to bake another 3 minutes. 8. To serve, spoon the casserole onto individual plates, then cut the bread bowl into pieces to serve with it.
