Red onion adds color and tanginess to this sauteed green-bean side dish.

2 tablespoons olive oil
1 teaspoon coarse salt
1/8 teaspoon ground pepper
1 pound green beans, trimmed and halved
1 medium red onion, cut into 1/2-inch wedges
2 teaspoons balsamic vinegar

Steps:

  • In a large skillet, bring 1 cup water, oil, salt, and pepper to a simmer over medium heat.
  • Add green beans and onion. Cover, and cook until beans are crisp-tender, 8 to 10 minutes.
  • Uncover, and continue cooking, stirring frequently, until water has evaporated, beans are tender, and onions are beginning to brown, 5 to 8 minutes more. Stir in vinegar and serve.

1 pound green beans, trimmed
2 tablespoons extra-virgin olive oil
1 large shallot, chopped

Steps:

  • Bring a medium saucepot of salted water to a boil. Add the green beans and cook until crisp-tender, about 4 minutes. Drain and rinse under cold water until the beans are cool. Drain well.
  • Heat the olive oil in a large skillet over medium heat. Add the shallot and cook, stirring occasionally, until lightly browned and tender, about 2 minutes. Add the green beans and garlic and increase the heat to medium-high. Cook, stirring occasionally, until the garlic has softened and the beans are heated through, about 4 minutes. Season with salt and pepper.

1 pound fresh green beans, trimmed
1 pinch salt
4 tablespoons extra-virgin olive oil
1 medium onion, finely diced
1 shallot, chopped
½ teaspoon garlic salt
½ teaspoon soy sauce
salt and ground black pepper to taste

Steps:

  • Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
  • Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

Steps:

  • In large skillet heat 1 t. oil over medium heat. Add garlic and pepper flakes; cook, stirring occasionally, until garlic softenes, about 4 minutes.
  • Add beans, onion, vinegar, salt and 1 T. oil. Cover; reduce heat to medium-low. Cook until green beans and onion soften, 6-7 minutes.

1 pound of fresh string beans - washed, ends clipped and discarded
1/2 large onion - chopped
1/4 cup of extra virgin olive oil
1/8 tsp. organic cayenne pepper
salt, pepper, and garlic powder to taste

Steps:

  • Heat olive oil in a large non-stick skillet and on moderate heat. Add the onions and sauté, stirring often, until they are golden, and caramelized about 5 to 8 minutes.
  • Add string beans (while still wet).
  • Add cayenne pepper. Cover the pan and lower the heat to simmer. This will also steam the beans while simmering.
  • Cook for 10 to 12 minutes, stirring occasionally.
  • Add salt, fresh cracked pepper, and garlic powder to taste.
  • Taste the beans for tenderness, then remove and transfer to a bowl. Serve.

1 pound green beans
4 tablespoons olive oil (divided)
1 onion (peeled and sliced)
3 tablespoons breadcrumbs ( Panko is ideal)
1/2 teaspoons za'atar
Salt and pepper to taste

Steps:

  • Gather the ingredients.
  • Trim the ends of the green beans and add to a pot of boiling water. Cook on high heat for approximately 10 minutes or until the beans are fork tender. Drain.
  • While the beans are cooking, Add 2 tablespoons of the olive oil to a skillet or cast iron pan along with the peeled and sliced onions. Saute for about 10 minutes until the onions are lightly caramelized.
  • When the onions are done, remove from the pan and add to the cooked and drained green beans. Add the remaining 2 tablespoons of olive oil to the pan along with the breadcrumbs and za'atar. Saute for about 2 minutes, stirring often, until lightly browned.
  • Toss the green beans and onions with the breadcrumbs and season with salt and pepper to taste.
