This is a very unique sweet potato pie recipe, given to me by my mother. It's quite sweet, with a lighter texture than your typical sweet potato pie. If you like sweet potatoes and you have a sweet tooth, this one's for you!

2 sweet potatoes
2 cups white sugar
¾ cup evaporated milk
½ cup butter, melted
¼ cup dark corn syrup
2 eggs, lightly beaten
3 tablespoons all-purpose flour
2 teaspoons vanilla extract
1 teaspoon apple pie spice
¼ teaspoon salt
1 (9 inch) unbaked deep dish pie crust

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place sweet potatoes in an aluminum foil-lined baking dish.
  • Bake in preheated oven until potatoes are easily pierced with a fork and skin loosens, 30 to 45 minutes. Allow potatoes to cool.
  • Peel potatoes and mash with a potato masher in a large bowl. Beat sugar, evaporated milk, butter, corn syrup, eggs, flour, vanilla extract, apple pie spice, and salt into mashed sweet potatoes with an electric mixer until fluffy, about 5 minutes. Pour sweet potato batter into pie crust. Excess batter can be reserved for another use.
  • Bake in preheated oven until pie is set and crust is browned, 45 to 50 minutes.

1 sheet refrigerated pie crust
1-2/3 cups sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground nutmeg
Pinch salt
1 cup mashed sweet potatoes
2 large eggs, room temperature
1/2 cup butter, softened
1/4 cup light corn syrup
3/4 cup evaporated milk

Steps:

  • Preheat oven to 350°. Unroll crust into a 9-in. pie plate; flute edge. In a small bowl, combine sugar, flour, nutmeg and salt. In a large bowl, beat potatoes, eggs, butter, corn syrup and flour mixture. Gradually stir in milk. Pour into crust., Bake for 55-60 minutes. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving. Refrigerate leftovers.

Traditional Southern-style sweet potato pie. This is my mother's recipe, but she's Mimi to my kids, so in our house we call this dish Mimi's sweet potato pie. It's delicious right out of the oven, at room temp, or right out of the refrigerator.

2 sweet potatoes, scrubbed
2 cups white sugar
8 ounces sweetened condensed milk
½ cup unsalted butter, softened
2 eggs
2 teaspoons all-purpose flour
1 pinch ground cinnamon, or to taste
1 pinch ground nutmeg, or to taste
1 pinch ground allspice, or to taste
1 pinch ground cloves, or to taste
2 (9 inch) pie crusts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a pot of water to a boil; add sweet potatoes and boil until soft, 20 to 30 minutes. Remove and discard skin; mash potatoes in a bowl until lumps are removed.
  • Mix 1 cup mashed sweet potatoes, sugar, condensed milk, butter, eggs, flour, cinnamon, nutmeg, allspice, and cloves together in a bowl. Divide batter evenly between the 2 pie crusts.
  • Bake in the preheated oven until firm, about 45 minutes.

4 cups all purpose flour
1 3/4 cups butter flavored Crisco
3 Tablespoons white sugar
2 teaspoons salt
1 egg
1/2 cup ice water
The Sweet Potato Filling
2 cups sweet potatoes (2 medium sweet potatoes usually does it. I always have a bit extra left)
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup evaporated milk
2 eggs
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoons ginger
1 Tablespoon flour
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 Let's Make The Crust! Step 1) In a bowl add the flour and cut in the Crisco, until it resembles bread crumbs. Step 2.) Stir in the sugar & the salt. Step 3.) Mix the egg up inside the ice cold water. Pour into the crust mixture and stir until combined. Step 4.) Turn the crust mixture out onto a flour surface and gather it into a large ball. You may need to kneed it lightly just to get all of the dry crumbs to incorporate into a ball. Step 5.) Divide the ball into two pieces. (Store the other ball in the refrigerator and use it for another yummy pie in the future!) Step 6) Roll the dough out about 1/4 inch thick and then place it into a deep dish pie pan. Shape the crust into place with your hands. Step 7.) Refrigerate until ready to use. You can brush it with egg whites to get that shiny crust look if you'd like. Let's Make the Sweet Potato Pie Filling! Step 1.) Place sweet potatoes in a large pot and fill with water just until it covers them. Bring to a boil and boil for 45 -50 minutes or until they are fork tender. Step 2.) When done, let cool and then remove the skin. It should peel off very easily. Step 3.) 5 Sweet Potatoes (I'm using 5 medium sized potatoes because I'm making two sweet potato pies. )
1 stick of unsalted butter
2 large eggs
1 cup of sugar
1 cup of whole milk
1/2 teaspoon of ground cinnamon

Steps:

  • First, began by washing your potatoes.
  • Then, put them in a large pot to boil on high heat for about 30 minutes or fork tender.
  • After your sweet potatoes have boiled, and they are fork tender set them aside in a bowl.
  • Allow your potatoes to cool a bit before you begin to peel them.
  • After you've peeled your sweet potatoes, place them in a separate bowl.
  • Chop your 1 stick of unsalted butter into chunks and add them to your sweet potatoes. The unsalted butter should melt over the potatoes, because they are still warm.
  • Next, add in your 1 cup of sugar, 1/2 teaspoon of cinnamon, and a 1 tablespoon of vanilla or lemon extract.
  • Then, add in your 1 cup of whole milk, and 2 eggs.
  • Using a mixer, mix all of your ingredients together.
  • When you've finished use a large wooden spoon to ensure, you have no lumps in your pie mixture.
  • For your store bought pie crusts, cut about 4-5 slits in your pie crust, so the crust remains flat. Place the pie crusts in the oven on 325 degrees for about 10 minutes. This will ensure that the bottom of your pie crust will be done.
  • Remove the pie crusts from the oven and allow them to cool. Then, begin to pour your pie mixture into your crust.
  • Use your wooden spoon to smooth out any lumps.
  • Next, place your pie or pies in the oven on 325 degrees for about 45 minutes or until the sweet potato pies are firm to the touch.
  • After you remove your pies from the oven you can set them aside and allow them to cool.
