GRANDMA'S RICE PUDDING
My sisters and I always loved the recipe for rice pudding our grandma made. After she passed away, I took it upon myself to try and find the secret to her rice pudding. It took quite a bit of experimentation, but I finally got it right! And I'm glad to share this easy recipe here. -Margaret DeChant, Newberry, Michigan

Steps:
- Place rice and raisins in a greased 1-qt. casserole. In a small bowl, whisk the eggs, milk, sugar and nutmeg; pour over rice. , Bake, uncovered, at 375° for 45-50 minutes or until a knife inserted in the center comes out clean. Cool. Pour milk over each serving if desired. Refrigerate leftovers.

WORLDS BEST SOUTHERN RICE PUDDING
This makes old fashioned southern rice pudding into something decadent. When I make this, I sometimes serve it with a strawberry or raspberry sauce...helps to cut the richness while at the same time adding those calories we all need so much :p I sometimes double this & in my household of 7, it lasts one full day tops. The Southern U.S. grows and eats a LOT of rice and recipes like this are much loved down here.

Steps:
- In medium saucepan over medium heat, heat milk and salt to boiling.
- Stir in rice; reduce heat.
- Simmer about 5 minutes, stirring constantly.
- Cover; cook about 45 minutes or until milk is almost absorbed and rice is tender and creamy, stirring occasionally.
- Add vanilla, almond extract and sugar, stirring until sugar dissolves.
- Pour into large bowl; cover.
- Refrigerate until chilled, about two hours.
- Fold in whipped cream.
- Cover; refrigerate until ready to serve.
- If serving with a sauce, spoon a little bit of the sauce into your serving dishes and layer it with tthe pudding.
- Doing that makes for a pretty visual effect to go along with the wonderful taste.

RICE PUDDING
Steps:
- In a medium heavy bottomed saucepan add rice, 2 cups milk, granulated sugar, cinnamon, nutmeg, cardamom and salt, Mix well, simmer over medium-low heat for 12-15 minutes or until beginning to thicken.
- In a small bowl, whisk together remaining 1/2 cup milk and egg. Add a heaping tablespoon of warm rice to the bowl, mix well.
- Whisking constantly, add egg mixture to the saucepan along with the raisins. Mix well, simmer while stirring for 2 minutes.
- Remove from heat adding butter and vanilla. Mix to combine.
- Serve immediately.

Mama Reed's Southern Style Rice Pudding is baked to develop a wonderful custard which transforms it into a rich and comforting dessert.

Steps:
- Cook up your rice. Beat eggs. Stir in sugar. Add other ingredients. Stir.
- Spray oven proof casserole dish with Pam. Pour mixture into dish.
- Set dish in pan of hot water and bake at 300 degrees for 90 minutes.
- After 30 minutes of cooking insert spoon at edge of pudding and stir from the bottom to distribute rice and raisins.
