SOUTHWEST FRITO PIE
I found this recipe in TOH Magazine, by Janet Scoggins, and I am posting for safe keeping, as I want to try it out for our football snacking time. It sounds perfect for me, as it probably isn't overly spicy/hot. I am not a fan of having my mouth on fire/numb and unable to taste things, but for those of you less whimpy, add hot peppers or cayenne pepper to taste and also any other toppings of choice.

SOUTHWEST FRITO PIE
I got a real culture shock when we moved to New Mexico several years ago, but we grew to love the food. Now, back in South Carolina, we still crave New Mexican dishes, and this is one of my go-to favorites.-Janet Scoggins, North Augusta, South Carolina

Steps:
- Preheat oven to 400°. Prepare meat according to directions on taco mix packet. Heat chili in saucepan. Spray a large casserole dish or stoneware dish with nonstick cooking spray and layer ingredients in the following order: layer of Fritos, lightly mashed to settle, layer of prepared meat. Sprinkle onion over layer and spoon chili over layer. Cover layer with cheese. Repeat layering until all ingredients are added (usually 2 or 3 layers). The Fritos should be soaked, but firm and crisp at serving. Bake covered for 20 minutes. Serve with salad, avocados, and salsa. Note: Moisture is the key to this dish. Do not cook the meat too dry and a 1/4 cup water in the chili will add enough moisture.
