4 cups cubed rotisserie chicken
2 cups frozen corn, thawed
1 cup chopped roasted sweet red peppers
1 cup chopped red or sweet onion
1 cup minced fresh cilantro
DRESSING:
3 tablespoons lime juice
3 tablespoons olive oil
4 teaspoons honey
2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon coarsely ground pepper
SALADS:
Torn mixed salad greens and sliced almonds
PITAS:
Whole wheat pita pocket halves and lettuce leaves
WRAPS:
Whole wheat tortillas and sliced ripe avocado

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, whisk the dressing ingredients; pour over chicken mixture and toss to coat. Refrigerate until serving. Serve as desired., Salads: Top salad greens with chicken salad; sprinkle with almonds., Pitas: Line pita halves with lettuce leaves; fill with chicken salad., Wraps: Place chicken salad off-center on tortillas; top with avocado. Roll up.

8 cups chopped romaine lettuce
1/2 medium jicama, peeled, cut into matchstick pieces (about 1 cup)
3 cups chopped cooked chicken
1 can (15.25 oz) corn, drained
2 large red bell peppers, chopped (about 2 1/2 cups)
2 ripe avocados, pitted, peeled and chopped (about 3 cups)

Steps:

  • In medium bowl, mix dressing ingredients until well blended.
  • In 4-quart glass serving bowl, layer lettuce, jicama, chicken, corn and bell peppers. Just before serving, top salad with avocados. Serve with dressing.

2 cups shredded deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
1 can (11 oz) Southwestern style corn, drained, liquid reserved
2 tablespoons Old El Paso™ taco seasoning mix (from 1-oz package)
1/2 cup shredded Mexican cheese blend (2 oz)
1/2 cup ranch or French dressing
1 cup corn chips (1 1/2 oz)
Old El Paso™ salsa, if desired

Steps:

  • Arrange lettuce on large platter. In 10-inch nonstick skillet, place chicken and reserved liquid from corn. Sprinkle with taco seasoning mix. Cook over medium heat 2 to 3 minutes, stirring constantly, until blended and thoroughly heated.
  • Arrange chicken mixture over lettuce. Sprinkle with cheese and corn. Drizzle with dressing; top with corn chips. Garnish with salsa.

8 cups shredded romaine
8 hard-boiled large eggs, sliced
3-1/2 cups cherry tomatoes, quartered
2 cans (11 ounces each) whole kernel corn, drained
1 can (16 ounces) black beans, rinsed and drained
1/2 cup thinly sliced green onions
1 tablespoon lime juice
2 medium ripe avocados, peeled and diced
CILANTRO DRESSING:
1-1/2 cups mayonnaise
2/3 cup salsa
2 tablespoons lime juice
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1-1/4 cups minced fresh cilantro
Sliced ripe olives, cherry tomatoes and shredded cheddar cheese, optional

Steps:

  • Place the romaine in a large salad bowl. Arrange some egg slices around edge of bowl; place remaining eggs over romaine. Top with tomatoes. In a large bowl, combine the corn, beans and onions; spoon over tomatoes. In another large bowl, drizzle lime juice over avocados; gently toss to coat. Sprinkle avocados over tomatoes; spreading to sides of bowl. , In a small bowl, whisk the mayonnaise, lime juice, cumin and chili powder. Stir in cilantro. Pour dressing over salad. 2 boneless skinless chicken breast halves (6 ounces each)
1/4 cup frozen corn
3 cups chopped romaine
1/4 cup chopped sweet red pepper
1/4 cup chopped seeded tomatoes

1/2 cup tri-color tortilla strips

Steps:

  • Place the first 5 ingredients in a jar with a tight-fitting lid; shake well. Refrigerate until serving., Place chicken on oiled grill rack. 1 (15 ounce) can black beans, rinsed and drained

2 medium Roma tomatoes, diced
4 stalks green onions, sliced
¼ cup chopped fresh cilantro
⅔ cup plain Greek yogurt
½ cup mayonnaise
1 tablespoon taco seasoning mix
1 tablespoon dry ranch dressing mix
1 cup crushed tortilla chips

Steps:

  • Combine lettuce, chicken, corn, beans, bell pepper, avocados, tomatoes, green onions, and cilantro for salad in a large bowl.

3 tomatoes, divided
1/2 red onion, diced
1 jalapeno pepper, seeded and chopped
salt (optional)
fresh ground black pepper, to taste
1 (15 ounce) can black beans, drained and rinsed
4 cups lettuce leaves, torn into bite-sized pieces
1 medium green bell pepper, chopped
1 cup frozen corn kernels, thawed
1/4 cup de-fatted chicken stock
2 tablespoons fresh lemon juice
4 teaspoons extra virgin olive oil
4 medium garlic cloves, minced
salt, to taste (optional)
fresh ground black pepper, to taste

Steps:

  • Make the salad: Chop 2 of the tomatoes.
  • Add onion, jalapeno pepper, salt and pepper. Taste and adjust seasoning, if necessary. Add in the black beans.
  • Layer the salad in a large bowl: lettuce, green pepper, half the black bean mixture, corn.
  • Slice remaining tomato and arrange the slices on top of the salad.
  • Spoon the remaining black bean mixture over the tomatoes.
  • Make dressing: In small bowl, combine chicken stock, lemon juice, olive oil, and garlic. Add salt and pepper to taste.
  • Pour half of the dressing over the salad. Serve the rest of the dressing on the side.
