CHEESY SOUTHWEST APPETIZERS
Steps:
- Cut cheddar and monterey jack cheeses into small triangles. Top each cracker with some cheddar cheese, monterey jack cheese, bell pepper, jalapeno pepper and olives. Place on baking sheet.
- Broil 4 to 5 inches from heat for 1 to 3 minutes or until cheese begins to melt.

This is great little zippy appetizer that I made recently from Southern Living Magazine. It went over real well with my guests.

Steps:
- Whisk together first 3 ingredients until mixture is blended; stir in diced red peppers and next 6 ingredients.
- Set marinade aside.
- Cut block of cheddar cheese in half lengthwise.
- Cut halves crosswise into ¼-inch thick slices.
- Repeat procedure with Monterey jack cheese and cream cheese.
- Arrange cheese slices alternatively in a shallow baking dish, standing slices on edge.
- Pour marinade over cheeses.
- Cover and chill at least 8 hours.
- Transfer cheese to a serving plate, and spoon remaining marinade over top.
- Serve with assorted crackers or even tortilla chips.

Steps:
- In a large bowl, beat cheeses until fluffy. Stir in 1 cup sour cream and taco seasoning. Add eggs; beat on low speed just until combined. Fold in chilies. Pour into a greased 9-in. springform pan. Place on a baking sheet., Bake at 350° for 35-40 minutes or until center is almost set. Remove from oven; let stand for 10 minutes (leave oven on). Spoon remaining sour cream over top of filling. Bake 5 minutes loner. Cool completely on wire rack for 10 minutes. Carefully run a knife around the edge of pan to loosen; cool 1 hour longer. Refrigerate overnight., Remove sides of pan. Place on serving plate. Top with salsa. Serve with tortilla chips. Refrigerate leftovers.

Steps:
- In a large skillet over medium heat, cook the beef, onion, salt and pepper until meat is no longer pink, 5-7 minutes; crumble beef; drain. Add the beans, cheese, salsa and jalapenos. Cook and stir over low heat until the cheese is melted. Remove from the heat; cool for 10 minutes., Place a teaspoonful of beef mixture in the center of 1 wonton wrapper. Moisten edges with water. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Fold wonton in half, forming a triangle; press edges to seal. Repeat., In an electric skillet or deep fryer, heat oil to 375°. Fry wontons, a few at a time, until golden brown, 2-3 minutes. Drain on paper towels. Serve warm with additional salsa.

Steps:
- Preheat oven to 325.
- Stir together chips and margarine and press into a 9-inch springform pan.
- Bake for 15 minutes.
- Beatg cream cheese and eggs in large bowl at medium speed until well blended.
- Stir in the co-jack cheese and the chilis and pour over crust.
- Bake for 30 minutes.
- Cool completely.
- Spread sour cream over cheese cake and sprinkle on toppings.
- Chill 1-2 hours.
- Remove from cake pan after chilling.
- Let sit out to"soften" a little or you'll break your tortilla chips!
- before serving.
- Serve on platter surrounded by tortilla chips and celery sticks.
