There's nothing better than classic, crispy, oven-fried Southern-style chicken. This recipe is so easy, you'll want to make it all the time!

2 lbs chicken
1/4 cup hot sauce
1 medium egg
1 cup all purpose flour
3/4 cup plain bread crumbs
1 tbsp garlic powder
1 tbsp onion powder
2 tsp seasoning salt
1 tsp ground black pepper
1 1/2 tsp poultry seasoning
Vegetable oil to spritz the chicken (I used peanut oil)

Steps:

  • Preheat the oven to 400 F.
  • Make sure that the chicken is nice and clean, then set to the side.
  • Next, combine the hot sauce and egg in a bowl. Mix until well combined.
  • Pour the hot sauce and egg mixture all over the chicken, and make sure that the chicken is nicely coated.
  • Now combine the flour, bread crumbs, seasoning salt, black pepper, onion powder, garlic powder, and poultry seasoning. Mix until well combined.
  • Once the flour and seasonings are well combined, coat all of the pieces of chicken.
  • Now grab a cookie sheet or sheet pan and cooling rack. Place the cooling rack on top of the cookie sheet.
  • Spray the rack with with vegetable oil, then place the chicken on top of the rack.
  • Spray each piece of chicken with oil until it's well coated. Make sure to get both sides.
  • Place the chicken in the oven, and bake for 35-40 minutes, or until it's golden brown and cooked throughout!
  • Serve and enjoy!

She and I are always on the hunt for new chicken dishes for us to try that require not a lot of work but is still delicious. She likes spicy stuff, so I know she's gonna like this. I know I did! Marinating time is included in the passive time

1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon salt and pepper
3 lbs chicken pieces
1 1/2 cups buttermilk
1 1/2 cups plain breadcrumbs
1/2 cup yellow cornmeal

Steps:

  • Combine the first 7 ingredients in a small bowl; blend well. Rub the chicken pieces with 3 tablespoons of the spice mix and set aside the remaining mix.
  • Place the chicken in a 9x 13 dish and let stand 10 minutes. Pour the buttermilk over the chicken, turning to coat. Cover and marinate 2 hours in the refrigerator, turning occasionally. Remove the chicken from the dish and discard the buttermilk.
  • Preheat the oven to 400 degrees.
  • Combine the remaining spice mixture, breadcrumbs, and cornmeal in a a dish and stir well. Dredge each chicken piece in the cornmeal mixture. Place on a baking sheet coated with cooking spray.
  • Bake 20 minutes 40 minutes (do not turn) or until juices run clear.

I don't remember where I got this recipe, but I've had for at least 10 years and it's still one of our favorites. The boys actually request this chicken. Cooking time includes marinade time.

1 lb chicken breast
1/4 cup fresh lemon juice
1 garlic clove, minced
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon cumin
pepper
3 tablespoons flour
1/4 cup cornmeal
1/2 teaspoon paprika
2 tablespoons butter

Steps:

  • In a large sized zip lock bag, combine marinade ingredients, shake to mix well. Add the chicken and turn to coat on all sides. Refrigerate for at least one hour (the longer the better.).
  • Preheat oven to 375. Lightly oil a shallow baking dish large enough to hold the chicken in a single layer.
  • On a piece of waxed paper, combine the flour, cornmeal and paprika.
  • Remove the chicken from the marinade and pat dry with paper towels. Roll in the cornmeal mixture, coating on all sides. Place in the prepared baking dish and dot with bits of butter.
  • Bake for 30-40 minutes or until juices run clear.

1 tablespoon oil
4 -6 chicken drumsticks, depending on size (I prefer smaller pieces)
2 teaspoons chili powder
1 teaspoon cumin
3/4 teaspoon kosher salt
3/4 teaspoon fresh ground black pepper
1/2 teaspoon smoked paprika
1/4 teaspoon red pepper flakes
1/4 teaspoon oregano
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Steps:

  • In a small bowl, stir together all of the spices. Pour the oil into a large stainless or cast-iron skillet over medium heat. Generously sprinkle the chicken all over with the spices. Use your hands to rub it into the skin. Place the chicken in the hot skillet, skin side down. Cook uncovered* for about 20-25 minutes. Let the pieces cook until the fat has rendered and the skin is deep golden brown and crisp; this could take as long as 30 minutes. Reduce the heat as needed if the skin starts to burn before it is evenly golden brown.
  • (If you are cooking drumsticks, I like to cook them for 15-20 minutes, then turn a third of the way over and cook another 15 minutes and then turn the final third of the way over and let them finish cooking for about 15 minutes more.) When the meat closest to the bone is cooked through, the chicken is done. Enjoy!

I love fried chicken, but it takes so long and is such a big mess. I came up with this one, and have been making it ever since! Everyone I have given the recipe to has loved it as well.

12 chicken thighs
3 eggs
1 cup all-purpose flour
1 cup Italian seasoned bread crumbs
salt and pepper to taste
1 teaspoon paprika
½ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.
  • Dredge the chicken piece by piece in the flour, then the egg, then the bread crumbs, until all pieces are coated. Pour the oil into a 9x13 inch baking dish. Add the chicken to the dish and sprinkle with paprika to taste. Bake in the preheated oven for 30 minutes, then turn pieces over and bake for another 30 minutes. Remove from oven and drain on paper towels. Enjoy!

1/2 cup all-purpose flour
1/4 teaspoon table salt
1/2 teaspoon cayenne pepper (or to taste)
3 ounces buttermilk
3/4 cup corn flake crumbs (leave some big pieces, DO NOT crush the flakes into a fine powder)
1 lb boneless skinless chicken breast (four 4 oz pieces)

Steps:

  • Preheat oven to 365ºF.
  • Lightly coat an 8 X 8 X 2-inch baking dish with nonstick cooking spray; set aside.
  • Combine flour, salt and cayenne pepper together in a medium-size bowl.
  • Place buttermilk and corn flakes crumbs in 2 separate shallow bowls.
  • Roll chicken breast halves in flour mixture and evenly coat each side.
  • Next dip chicken into buttermilk and then corn flakes crumbs.
  • Place coated chicken breasts in prepared baking dish.
  • Bake until chicken is tender and no longer pink, about 20 minutes (there is no need to flip the chicken during baking).
  • NOTE: The first time I made this my chicken breasts were about 6-8 ounces a piece.
  • It ended up taking about 45-50 minutes to cook.
