1 cup all-purpose flour
1 ½ tablespoons white sugar
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup vanilla soy milk
1 egg, lightly beaten
2 teaspoons vegetable oil
½ teaspoon vanilla extract
½ teaspoon almond extract

Steps:

  • In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a small bowl, mix the vanilla soy milk, egg, oil, vanilla extract, and almond extract. Pour the soy milk mixture into the bowl with the flour mixture, and whisk together until smooth.
  • Grease a skillet, and heat over medium low heat. Pour about 1/4 cup batter onto the heated skillet, and cook until bubbly. Flip with a spatula, and continue cooking about 1 minute, until golden brown. Repeat with the remaining batter.

Dairy-free pancakes image

Skip regular milk and replace it with coconut or hemp milk in these light pancakes suitable for people with dairy or lactose intolerance

125g plain flour
1 egg
300ml hemp or coconut milk (see tip)
sunflower or rice bran oil , for frying

Steps:

  • Put the flour in a bowl and make a well in the centre. Crack the egg in the middle and pour in a quarter of the milk. Use an electric or balloon whisk to thoroughly combine the mixture. Once you have a paste, mix in another quarter and once lump free, mix in the remaining milk. Leave to rest for 20 mins. Stir again before using.
  • Heat a small, non-stick frying pan with a splash of oil. When hot, pour a small amount of the mixture into the pan and swirl around to coat the base - you want a thin layer. Cook for a few mins until golden brown on the bottom, then turn over and cook until golden on the other side. Repeat until you have used all the mixture, stirring the mixture in between pancakes and adding more oil for frying as necessary. Pile the pancakes up between sheets of baking parchment or cook to order. Serve with the pancake filling of choice.

Steps:

  • Stir flour, soy milk, egg, flax seeds, baking powder, sugar, and vanilla extract together in a bowl.
  • Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

If you do not like to use soy flour, I'm sure you could substitute almond flour in this recipe. I found this on Bob's Red Mill's website. I've modified this recipe to make it low carb and vegetarian. These are not super fluffy and slightly dense. I found these to be very filling and taste great with my Blueberry Pancake Syrup, which is low carb also. ETA: I made this with almond flour and it tasted very good. I needed to add a few spoonfuls of additional coconut flour to thicken the batter.

1 cup soy flour
1/3 cup coconut flour
1 tablespoon baking powder
2 teaspoons cornstarch
1 teaspoon stevia powder (more if you like a sweeter pancake)
2 tablespoons oil
2 eggs
1 1/2 cups soymilk (vanilla)
1 teaspoon lemon juice

Steps:

  • Mix wet ingredients and mix dry ingredients.
  • Pour wet into dry ingredients and mix just until combined.
  • This batter will be thicker than normal pancake batter.
  • Cook in pan/griddle on med heat with oil. (it will not 'bubble' like regular pancakes).
  • Flip when underside is browned.
  • The middle of these pancakes will feel a bit soft on the inside. Once cooled a bit, it will firm up.
