Homemade Meatless Spaghetti Sauce image

When my tomatoes ripen, the first things I make are BLTs and this homemade spaghetti sauce. -Sondra Bergy, Lowell, Michigan

4 medium onions, chopped
1/2 cup canola oil
12 cups chopped peeled fresh tomatoes
4 garlic cloves, minced
3 bay leaves
4 teaspoons salt
2 teaspoons dried oregano
1-1/4 teaspoons pepper
1/2 teaspoon dried basil
2 cans (6 ounces each) tomato paste
1/3 cup packed brown sugar
Hot cooked pasta
Minced fresh basil, optional

Steps:

  • In a Dutch oven, saute onions in oil until tender. Add the tomatoes, garlic, bay leaves, salt, oregano, pepper and basil. Bring to a boil. Reduce heat; cover and simmer for 2 hours, stirring occasionally., Add tomato paste and brown sugar; simmer, uncovered, for 1 hour. Discard bay leaves. Serve with pasta and basil, if desired.

1/4 c Extra Virgin Olive Oil
1 large white onion, chopped
2 tbs minced garlic
1/2 c red cooking wine
3 TBS basil chopped
1 TBS Chicken bouillon
2 tsp Italian Seasoning
1 tsp Parsley flakes
1 tsp Black pepper
1 tsp oregano
1/2 tsp fennel seed
1 28 oz can crushed tomatoes
1 8 oz can tomato paste
Salt to taste
1 lb whole wheat pasta

Steps:

  • Heat oil in 3 qt pot. Add onion and garlic. Cook until onions aretranslucent (Approx 15-20 minutes). Add wine, basil, bouillon, italian seasoning, parsley, pepper, oregano, and fennel. Reduce until wine is half original amount, stirring occasionally (approximately 15-20 minutes). Add crushed tomatoes and tomato paste. Simmer until ready to eat, but at least 2 hours for best flavor. Cook pasta according to package directions. Place pasta in bowls. Top with sauce, parmesan cheese, parsley flakes for garnish. Serve with garlic bread.

1 small green bell pepper, diced
1 (28 ounce) can diced tomatoes
1 (16 ounce) can tomato sauce
1 (6 ounce) can tomato paste

2 teaspoons dried basil
1 teaspoon salt
½ teaspoon black pepper

Steps:

  • Combine ground beef, onion, garlic, and green pepper in a large saucepan. Cook and stir until meat is brown and vegetables are tender. Drain grease.
  • Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.

This is very good, and it was a great way to use those garden tomatoes for later. I used a combination of beef and turkey, but I would have used all 3 if it was handy. 30 lbs tomatoes
2 1/2 lbs ground beef or 2 1/2 lbs ground sausage
5 garlic cloves, minced
1 cup chopped onion
1 cup chopped seeded green bell peppers or 1 cup celery
1 lb mushroom, sliced
4 tablespoons chopped fresh parsley
1/4 cup lightly packed brown sugar
2 tablespoons dried oregano
4 teaspoons salt
2 teaspoons fresh ground black pepper

Steps:

  • Wash tomatoes, removing stems and any bruised or discolored portions.
  • Core and quarter 6 tomatoes and place in a large stainless steel saucepan.
  • Bring to a boil over high heat. Using a potato masher, crush tomatoes to release juices, stirring constantly.
  • While maintaining a boil and stirring to prevent scorching, core and quarter additional tomatoes, adding them to the saucepan as you work. Make sure the mixture continues to boil vigorously while you add, stir and crush the remaining tomatoes.
  • When all tomatoes have been added, reduce heat and boil gently until tomatoes are soft, about 10 minutes.
  • Working in batches, press tomato mixture through a fine sieve, electric strainer, or food mill. Discard peels and seeds. Set puree aside.
  • Prepare weighted-gauge pressure canner, jars, and lids.
  • In a large stainless steel skillet, over medium heat, brown ground beef, breaking it up with a fork, until no longer pink.
  • Drain off excess fat. Add garlic, onion, green pepper, and mushrooms. Saute until vegetables are tender, about 3 minutes.
  • In a large stainless steel saucepan, combine reserved tomato puree, meat mixture, parsley, brown sugar, oregano, salt, and pepper.
  • Bring to a boil over medium high heat. Reduce heat to medium-low and simmer sauce, stirring occasionally, until the texture of the sauce is to desired consistency and heated through.
  • Ladle hot sauce into hot jars, leaving 1 inch headspace. Reduce air bubbles and adjust headspace, if necessary, by adding hot sauce.
  • Wipe rim. Center lid on jar. Screw band down until resistance is met, then increase to figertip-tight.

My Sil gave me this recipe years ago and it's always a hit. Sometimes I add more spices and more cheese than the recipe calls for.. Served with a salad, garlic toast you can't go wrong.. Also You can use cheddar or colby cheese whatever your preference is.

1 green pepper
1 onion
1 (10 3/4 ounce) can tomato soup
1 (15 ounce) can tomato sauce
1 (8 ounce) package grated cheddar cheese

Steps:

  • Saute chopped green pepper, onion in margarine or butter until soft.
  • Cook spaghetti and drain.
  • Grease a casserole dish well and put drained spaghetti, onion, green pepper, garlic powder, tomato soup, tomato sauce and grated cheese in casserole.
  • Bake uncovered at 350 for one hour.

1 teaspoon red pepper flakes
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large skillet over medium heat. Add onion and celery; saute until onion has softened and turned translucent, about 5 minutes. Stir in diced tomatoes, tomato paste, sugar, basil, oregano, red pepper flakes, salt, and black pepper. Bring to a boil.
