Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper. Place squash, cut sides down, on baking sheet.
- Bake squash in the preheated oven until it starts to soften, about 25 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and continue baking until easily pierced with a knife, about 25 minutes more. Remove from the oven and cool until easily handled.
- Cook sausage in a large skillet over medium heat until browned, about 5 minutes; remove from skillet. Add onion, celery, and carrot to the skillet; cook and stir in sausage drippings until starting to soften, about 5 minutes. Stir cooked sausage, diced tomatoes, chicken broth, tomato paste, and garlic into the skillet. Simmer sauce until flavors combine, about 15 minutes.
- Use a fork to scrape insides of squash into spaghetti strands. Transfer strands to a 9x13-inch casserole dish. Spoon sauce over strands and stir to combine. Cover with mozzarella cheese.
- Bake in the preheated oven oven until bubbly and golden brown, about 25 minutes.

- Cut squash lengthwise in half; discard seeds. Place halves on a microwave-safe plate, cut side down. Microwave, uncovered, on high 15-20 minutes or until tender., Meanwhile, in a large skillet, heat oil over medium heat. Add sausage; cook and stir 4-5 minutes or until lightly browned., When squash is cool enough to handle, use a fork to separate strands. Add squash, pico de gallo, salt and pepper to sausage; heat through, tossing to combine.

- Preheat an oven to 350 degrees F (175 degrees C). Coat a baking sheet with cooking spray, and place squash halves cut-side down on the sheet. Bake until squash is tender but still crunchy, about 40 minutes. Set aside to cool.
- Once cool enough to handle, shred squash flesh from rind using a fork. Set aside.
- Melt butter in a skillet over medium heat. Cook onion and garlic in butter until soft. Add squash to the skillet, and cook until hot. Season with salt and pepper.

- Pierce squash all over with the tip of sharp knife. Put in a microwave-safe dish and microwave 15 minutes on high, or until slightly soft. Let cool 10 minutes or until cool enough to handle, then cut in half crosswise, scoop out and discard seeds. Flesh will be in long spaghetti-like strands.
- Scoop squash into large bowl and season with butter, parsley, oregano, salt, pepper and red pepper flakes. This stage alone yields a delicious side dish.
- While squash cooks and cools, make your sausage and peppers.
- Slice red bell pepper and red onion into lengthwise strips. You may need to cut the pepper strips in half to be fork-size.
- Heat 1 T olive oil in a large non-stick pan over med-high heat. Squeeze sausage out of casings in little meat balls and fry until browned and cooked through. You may need to do this in two batches depending on the size of your pan. Remove sausage and set aside to keep warm.
- Toss peppers and onions into pan. Cook until softened. You may need to add a bit more oil, or a few tablespoons of wine to deglaze the pan. When vegetables are about 2 minutes away from being done, add minced garlic to pan and heat till fragrant. Then return sausage to pan and add several handfuls of spinach. Toss to coat spinach until just wilted and sausage is reheated.
- Serve immediately over prepared squash. If you can tolerate dairy, I'm sure fresh parmesan would be great, but it was already delicious without it.

- Cook pasta according to package directions; drain. , Meanwhile, in large skillet, cook sausage and onion over medium-high heat until sausage is no longer pink, 5-7 minutes. CREAMY SPAGHETTI SQUASH WITH SAUSAGE AND VEGETABLES
I wanted to cook a one dish spaghetti squash meal without using tomatoes. I came up with this colorful creation that is full of veggies. Note: I chose veggies that we had on hand with color in mind. This was a first round try. I might be making changes in the future. It got a thumbs up though, so I'm posting for further reference. (Note: cooking time does not include baking the spaghetti squash)

- Cut the squash in half lengthwise and place it cut side down in a baking pan. Cover with foil. Cook at 350 degrees until done (30 -40 minutes in the oven 6-8 minutes in the microwave). (To check for doneness, I just poke it to see if it's soft or that a fork will easily puncture the squash) When cooked the meat of the squash will be stringy and can easily be separated and removed with a fork. Set these aside. (I did mine a day or two before).
- Cook Italian sausage until meat is no longer pink. Set aside.
- Heat butter in a pan over medium-low heat until bubbly. (NOTE: if there is grease in the pan the amount of butter can be cut in half).
- Add diced onions and cook until translucent.
- Stir in flour and cook for a minute more.
- slowly add milk and vegetable broth while stirring. The sauce will be very thick and will thin out as you add milk. More milk or broth may be added as needed to thin sauce as desired.
- Stir in Parmesan cheese. Add salt and pepper to taste.
- Steam cut up vegetables as desired or place them in a microwaveable dish and microwave on high until just tender. (approx. 2 minutes).
- Gently stir vegetables, squash, and sausage into sauce and heat until bubbly.

- Preheat your oven to 400°, line a medium baking sheet with foil, and lightly mist with cooking spray.
- On a work surface, drizzle about 2 tablespoons worth of the olive oil over both of the cut-sides of the spaghetti squash halves, then sprinkle over a generous amount of salt (squash needs it!), black pepper, the 1/2 teaspoon of granulated onion, 1/2 teaspoon of the granulated garlic, plus the Italian seasoning, equally.
- Place the two squash halves cut-side down onto the baking sheet and roast for 1 hour, or until easily pierced with a small paring knife and tender.
- While the spaghetti squash roasts, make your toasted breadcrumbs: add the panko breadcrumbs to a small bowl, add a sprinkle of salt, the remaining 1/4 teaspoon of granulated garlic, plus 1 teaspoon of olive oil, and use a fork to combine. Place a small pan over high heat, and once hot, add the seasoned crumbs to it, stirring constantly until golden-brown and toasted, about 1-2 minutes; set the toasted breadcrumbs aside.

- Preheat oven to 400 degrees. Cut squash in half and scoop out the seeds. Wrap in plastic wrap and cook one at a time in the microwave on a plate until tender. Depending on your microwave, this will take anywhere from 7-12 minutes, start checking it around 6 and add a minute or two based on how it’s feeling. I also flipped mine halfway through cooking. Once you remove them from the microwave, poke a hole in the plastic wrap to let steam escape and let cool.
- In the meantime, heat the olive oil in a large pan and saute the sausage, peppers, mushrooms and onions together over medium-high heat until veggies are soft and sausage is browned. Add the spinach and garlic and continue to took about another minute and then remove from heat. Stir in marinara sauce and red pepper flakes.
- Use a fork to pull the squash out of the shells but leave the shells intact by leaving a little squash around the edges. Mix the squash into the sausage mix and season to taste with salt and pepper. Divide the filling between the two shells and place in a baking dish or on a baking sheet.
- If you’re using cheese, sprinkle each half with 1/4 cup parm before baking. If not, put them straight in the oven. Bake uncovered for about 20 minutes or until heated through. You’ll have to go longer with the cooking time if the squash has been in the fridge. To serve, cut the squash half in two and place on a plate.
