ANGEL HAIR PASTA WITH GARLIC SHRIMP AND BROCCOLI
This makes the best cream sauce I've ever had. It's a quick meal that is a sure way to impress company without the hassle.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Melt 1.5 tablespoons butter in a medium saucepan over medium heat. Stir in flour and cook for 2 minutes. Slowly stir in milk and cream; simmer, stirring constantly, until thickened. Mix in pesto, parsley, 3 cloves minced garlic, Parmesan cheese, 1 teaspoon salt, white pepper, Worcestershire sauce and hot sauce. Reduce heat to low and allow to simmer.
- Meanwhile, place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
- Melt 1 tablespoon butter in a large skillet. Saute shrimp, remaining 3 cloves minced garlic, and 1 teaspoon salt for 5 minutes, or until shrimp are pink.
- In a large bowl, toss pasta, shrimp and broccoli; pour sauce over and serve.

SPAGHETTI AND BROCCOLI AGLIO OLIO

Steps:
- Add the broccoli florets to a large pot of boiling, salted water and cook until al dente, 3 to 4 minutes. Prepare a bowl of ice water. Remove the florets from the pot, reserving the cooking water. Stop the cooking process by shocking them in the ice water. Remove the florets and pat dry.
- Add the spaghetti in the same pot of water. Cook until al dente, about 8 minutes.
- Meanwhile, add the oil, sliced broccoli stems, red pepper flakes and garlic to a large skillet over medium-low heat and sprinkle with salt. Cook until the garlic is lightly toasted and fragrant, about 8 minutes. Add the florets, toss to coat and warm through.
- Drain the pasta in a colander set in the sink, and add the pasta to the skillet. Increase the heat to medium-high. Toss the ingredients and adjust the seasoning if needed. Transfer the pasta to a large serving bowl. Squeeze the lemon juice over the top and sprinkle with the Parmigiano-Reggiano. Serve.
SPAGHETTI WITH GARLICKY SHRIMP AND BROCCOLI
I used to love shrimp scampi, with its rich butter, parsley and garlic sauce.

- 1 Cook the pasta according to the package directions in a large pot of salted water
- 2 While the pasta is cooking, heat 1 tablespoon of the oil in a large saute pan over medium heat
- 3 Add the garlic and reduce the heat to low
- 4 Let the garlic cook until it softens but does not brown
- 5 Ideally, it will cook for 3 to 4 minutes
- 6 Meanwhile, steam the broccoli in the microwave or on the stove top in a steamer or a covered pot with just a half-inch of boiling water
- 7 It should take about 4 to 5 minutes on the stove top
- 8 When the garlic has softened, increase the heat to medium-high and let the pan heat up
- 9 Add the shrimp and cook for 2 to 3 minutes, turning the shrimp over until they have lost their raw look
- 10 Add the wine, and add the salt
- 11 Cook for 3 to 4 minutes; the shrimp will be cooked through and the wine will have reduced by about one-third
- 12 Season with the pepper to taste and add the steamed broccoli pieces; toss to combine
- 13 Drain the pasta, then transfer to a large serving bowl
- 14 Add the shrimp mixture and toss to combine
- 15 Drizzle the remaining tablespoon of oil over the pasta and sprinkle the parsley on top; serve hot

- Heat 2 tablespoons oil in a large saucepan over medium heat. Add half the garlic and cook until beginning to brown, about 1 minute. Add broccoli, bell pepper and 1/4 teaspoon each salt and pepper. Cover and cook, stirring once or twice and adding 1 tablespoon water if the pot is too dry, until the vegetables are tender, 3 to 5 minutes. Transfer to a bowl and keep warm.
- Increase heat to medium-high and add the remaining 1 tablespoon oil to the pot. Add the remaining garlic and cook until beginning to brown, about 1 minute. Add shrimp and the remaining 1/4 teaspoon each salt and pepper; cook, stirring, until the shrimp are just cooked through, 3 to 5 minutes. Return the broccoli mixture to the pot along with lemon juice and stir to combine.

Steps:
- Put the garlic and stock in a small sauce pan and bring to boil.
- Reduce the heat to low and cover.
- Simmer for about 20 minutes or until the garlic is soft enough to mash with a fork.
- Transfer the contents of the pan to a food processor or blender and puree until smooth.
- Set aside Bring large pot of water to boil.
- Add the pasta, stirring to make sure the strands don't stick together, and cook over high heat to desired tenderness.
- Meanwhile, put 1 Tbs of the water in a nonstick frying pan and bring to a boil over medium.
- Add the broccoli and onion, reduce the heat to low, cover, and cook for 3 minutes.
- Add the shrimp, dill, and the remaining Tbs of water.
- Stir, recover and cook for 4-5 minutes until shrimp is pink.
- Remove from heat When the pasta is done, drain and return it to the pot over very low heat.
- Add the garlic puree and mix well to coat the pasta.
- Add the broccoli shrimp mix and the seasonings.
- Toss together until well blended and serve immediately.

Carefully add the reserved pasta-cooking water to the galic and oil and bring to a boil. Then lower the heat, add 1 t. salt, and simmer for about five mnutes, until the liquid is reduced by about a third.
