SPAGHETTI WITH ZUCCHINI RIBBONS AND SHRIMP - CATELLI®

Spaghetti with Zucchini Ribbons and Shrimp - CATELLI® image

Catelli SuperGreens® pasta is made with all-natural ingredients, like dried spinach, zucchini, parsley, broccoli, and kale. That means it's not only full of flavour, but it also gives you a boost of fibre, iron, and magnesium, all of which are essential in your daily diet.

Provided by CATELLI®

Yield 4

Number Of Ingredients 13

1 pkg (300 g) Catelli SuperGreens Spaghetti -
medium zucchini - 1
olive oil - 2 tsp (10mL)
each small onion and red pepper, thinly sliced - 1
jumbo shrimp, peeled and deveined - 12
10% cream - 11/2 cups (375 mL)
cornstarch - 1tbsp (15 mL)
cornstarch - 1tbsp (15 mL)
cloves garlic, minced - 2
each salt and pepper - 1/4 tsp (1 mL)
each salt and pepper - 2 tbsp (30 mL)
lemon juice - 1/4 tsp (1 mL)
each finely grated lemon zest and chopped fresh dill(approx.) - 1tbsp (15 mL)

Steps:

  • Trim off ends of zucchini. Use a vegetable peeler to shave thin ribbons, rotating zucchini until inner core and seeds are exposed. Set ribbons set aside. (Reserve core for another purpose.)
  • Heat oil in a large, nonstick skillet set over medium heat. Add peppers and onions and sauté for 5 minutes. Whisk cream with cornstarch, garlic, salt and pepper. Add to skillet and bring to the boil. Add zucchini and shrimp. Cover and cook for 1 minute.
  • Meanwhile, prepare spaghetti according to package directions for al denté.Add hot cooked pasta to skillet along with lemon juice, lemon zest and dill. Toss gently until spaghetti is coated in sauce and shrimp are pink. Divide between four serving bowls, arranging shrimp decoratively on top. Garnish with extra dill. Tips: - Creamy pasta sauces tend to soak up into the noodles quickly. Reserve some of the pasta water before draining to help "loosen" up the sauce if not served immediately. - Replace the shrimp with sliced, cooked chicken breast.

GARLIC SHRIMP WITH PEAS

Garlic Shrimp With Peas image

Seek out shrimp in the shell and use the shells for a quick, easy seafood broth. Freeze what broth you don't use in the dish; it comes in handy when you need a seafood broth for a risotto or a stew.

Provided by Martha Rose Shulman

Categories     dinner, lunch, main course

Time 45m

Yield 6 servings

Number Of Ingredients 9

1 1/2 pounds medium shrimp with shells, shelled and deveined; retain shells
Salt to taste
1 1/2 pounds fresh English peas, shelled (1 1/4 to 1 1/2 cups depending on size)
3 tablespoons extra-virgin olive oil
1 head green garlic or 6 garlic cloves, minced
1/4 to 1/2 teaspoon red chile flakes, to taste
1/3 cup finely chopped cilantro
1/3 cup finely chopped parsley
Cooked rice for serving, optional

Steps:

  • Place shrimp shells in a medium saucepan, add 1 quart water and salt to taste. Bring to a boil. Skim off foam, reduce heat, cover partly and simmer 30 minutes. Strain broth into a bowl and discard shells. Return broth to saucepan.
  • Meanwhile, sprinkle shrimp with salt, toss and let sit for 15 minutes.
  • Return broth to a boil and add peas. Boil 2 minutes, until just wrinkled and slightly tender. Scoop out with a skimmer or slotted spoon and set aside. Measure out 1/2 cup broth and set aside.
  • Heat oil over medium heat in a wide heavy skillet. Add garlic and chile flakes. Cook, stirring, until garlic is fragrant and beginning to color, about 1 minute. Turn heat to medium-high and add shrimp. Cook, stirring, until shrimp turns pink, about 2 minutes. Add peas, cilantro and parsley and continue to toss in the pan for another minute. Stir in 1/2 cup broth and heat through while stirring to deglaze pan. Remove from heat, taste and adjust seasoning. Serve.

Pasta alla Pamela with Shrimp and Peas image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 11

Kosher salt and freshly cracked black pepper
1 pound medium shrimp (U41-50), shelled and deveined
1/4 teaspoon baking soda
1 pound spaghetti
1/4 cup olive oil
2 tablespoons unsalted butter
4 cloves garlic, minced
1/4 cup dry white wine
1 cup frozen peas, defrosted
1/3 cup grated Parmesan
1 tablespoon chopped fresh parsley

Steps:

  • Bring a big pot of water to a boil. Salt liberally.
  • In a large bowl, toss the shrimp with 1 teaspoon salt, 1/2 teaspoon pepper and the baking soda and marinate in the fridge for 15 minutes (this keeps the shrimp moist with a nice crust on the outside).
  • Add the pasta to the pot of boiling water and cook according to the package instructions. Drain, reserving about 1 cup of the pasta cooking water.
  • Meanwhile, heat a large skillet over medium-high heat until hot. Add the oil to the skillet, then arrange the shrimp in a single layer in the oil. Reduce the heat to medium. Cook, undisturbed, until a nice crust is formed, about 2 minutes. Flip the shrimp, then add the butter and garlic. Cook gently until fragrant, about 1 more minute. Add the wine to deglaze and let simmer for 1 more minute. Add the peas and pasta. Toss to combine. Taste for seasoning and adjust with salt and pepper. Add a generous amount of Parmesan and toss again, adding the pasta water as necessary.
  • Transfer the pasta to a large serving bowl. Garnish with more Parmesan and the parsley. Serve.

Spaghetti With Peas, Zucchini Ribbons, and Garlic Shrimp image

This is a combination of 2 recipes from the April 2007 issue of Martha Stewart Living. Each can certainly stand on its own, but together, they are a fabulous meal. Add a salad, possibly some crusty garlicky bread, and dessert and it would be complete, company worthy meal that is actually very, very simple.

LEMON ZUCCHINI SPAGHETTI WITH SHRIMP

Lemon Zucchini Spaghetti with Shrimp image

We just love our zucchini pasta at home. I go every Sunday to our farmers market and stock up! Today I even had some leftover fresh spinach from the week and decided to add it in as well. You can omit, but if you have spinach or any other leftover veggies, go ahead and add them in! Enjoy.
