CHEESY SPAGHETTI SQUASH BOWL
I always think of spaghetti squash as a winter dish, but it is great year-round. This microwaveable side dish is a terrific time saver and a fantastic veggie that is just cheesy-good. Great served as a side with lemon grilled chicken or served atop some garlic pasta noodles with a choice glass of wine. Your choices are unlimited, so start creating and bon appetite!

Steps:
- Pierce squash several times with a fork and place on a microwave-safe plate.
- Microwave on High for 5 minutes. Turn and continue cooking until soft, about 5 minutes more. Let stand for 5 minutes.
- Cut squash in half lengthwise and remove and discard seeds. Using a fork, scrape insides of squash to form strands and place in a large bowl; reserve skins.
- Add tomatoes, mozzarella cheese, cilantro, and 2 1/2 tablespoons Parmesan cheese to squash; mix to combine. Season with salt and pepper. Spoon mixture into spaghetti squash shells and microwave on HIGH until heated through, about 2 minutes .
- Top with hot sauce and remaining Parmesan cheese.

CHEESY SPAGHETTI SQUASH RECIPE
This is my favorite thing to make spaghetti squash! It's like alfredo or macaroni and cheese but with a veggie instead of pasta. In other words it's seriously delicious comfort food!

Steps:
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
- Scoop seeds and stringy center portion of from squash and discard or reserve seeds for another use.
- Place squash cut side up on baking sheet. Brush flesh with olive oil. Sprinkle with salt and pepper. Turn upside down.
- Bake in preheated oven until tender, about 40 minutes.
- Let cool slightly or use and oven mitt to hold squash, and shred spaghetti squash with a fork while leaving about 1/4-inch border. Set strings aside and return unfilled boats to baking sheet.
- In a large saute pan melt butter over medium heat. Add garlic and flour and saute 1 minute.
- While whisking vigorously slowly pour in half and half. Let cook, stirring constantly, until just thickened.
- Reduce heat to low, add parmesan and stir until melted. If mixture seems too thick add in a splash or two of half and half. Season mixture with salt and pepper to taste.
- Remove from heat. Add shredded spaghetti squash and 3/4 cup mozzarella cheese and toss to evenly coat (taste again for salt).
- Divide mixture evenly among squash halves. Sprinkle with remaining 1/2 cup mozzarella cheese*.
- Return to oven and bake until cheese has melted, about 10 minutes.
- Sprinkle with parsley and serve warm.

- Preheat the oven to 450 degrees F.
- Split the squashes in half and scrape out seeds. Line an oven tray with aluminum foil. Season the spaghetti squash with olive oil, salt, and pepper. Place flesh side down and roast for 30 to 40 minutes until fully cooked. Remove from the oven and let rest until cool enough to handle.
- Meanwhile heat the marinara sauce in a large saute pan.
- When squash is cool enough to handle, using a large kitchen spoon scrape the strands of squash from the inside of the skin. Toss the spaghetti squash in the pan with the hot marinara for just long enough to get hot. Serve and enjoy.

- Preheat oven to 350°. Cook spaghetti according to package directions. , Meanwhile, in a large bowl, beat egg, milk and salt. Drain spaghetti; add to egg mixture and toss to coat. Transfer to a greased 13x9-in. baking dish., In a large skillet, cook beef, sausage, onion and green pepper over medium heat until meat is no longer pink; drain. - Preheat oven to 400 degrees. Set a large pot of salted water to boil. In a food processor, pulse tomatoes until coarsely chopped. In a large skillet, heat oil over medium-high. Add garlic and cook until fragrant, about 1 minute. Add tomatoes and bring to a boil. Cook at a rapid simmer until sauce thickens, about 12 minutes. - Cut the squash in half lengthwise and scoop out the seeds. Place squash, cut side down, in a baking dish. Add 1/2 in. water and cover tightly with foil. Bake at 375° until squash can be easily pierced with a fork, 20-30 minutes., Meanwhile, melt butter in a large skillet. SPAGHETTI SQUASH WITH VEGETABLES & MOZZARELLA

- Preheat oven to 375°F Mix the cheese together, set aside.
- Heat olive oil in a skillet and add the onion, pepper and garlic.
- Sauté over medium heat for about 5 minutes.
- Add crushed tomatoes, basil, and crushed red pepper (if using).
- Simmer uncovered for about 15 minutes.
- Mix squash well with the cooked vegetables and put half in the bottom of a large (13 x 9 inch) baking dish.
- Top with half the cheese mixture, followed by the other half of the squash mixture, then the rest of the cheese.
- Bake for 30 minutes or until cheese is bubbly and slightly browned.
- Let cool 10-15 minutes before serving.
PASTA WITH FRESH VEGETABLES AND MOZZARELLA

- Bring water to a boil for the pasta. In a serving mixing bowl combine the tomatoes, scallions and mozzarella and set aside. Add fresh pasta to water and cook quickly just until al dente; drain and place in serving bowl. In a medium size skillet melt butter with olive oil. Add watercress and arugula and saute for a couple of minutes just to wilt. Add yellow bell pepper and saute a minute just to begin cooking and remove from heat. Add arugula mixture and toss the ingredient together with salt and pepper red flakes. Transfer to a bowl and sprinkle fresh radish and cucumbers on top.
MOZZARELLA SPAGHETTI
I got this recipe from a "Canadian Dairy Farmers" card from the 1990's. My hubby loves this as he is a cheese fanatic. I like it because the spaghetti cooks right in the pot with the sauce so I have one less pot to wash.

- ***VARIATION***Colby Macaroni Replace the spaghetti with 1-1/2 cups (375 ml) macaroni.
- Replace the Italian seasoning with 1-1/4 tsp (7 ml) Worcestershire sauce.
- Replace the Mozzarella with an equal amount of Colby cheese.
- In a large pan, brown the beef, mushrooms, onion and pepper.
- Cook over medium heat until the veggies are tender.
- Drain any fat.
- Cut up tomatoes, add with the juices to the pan.
- Add the water, spaghetti, Italian seasoning and salt.
- bring to a boil.
- Reduce heat, cover and let simmer for 15-20 minutes or until the spaghetti is cooked.
