This quick and easy recipe is lots of fun to make and very tasty as well. Spanish chorizo is very different from Mexican chorizo but Mexican chorizo can be used in this dish.

1 leek, sliced thinly
4 ounces spanish chorizo sausage, sliced
2 tablespoons olive oil
12 ounces dry penne pasta
4 eggs
2 ounces parmesan cheese, freshly grated
1/2 teaspoon paprika
salt & freshly ground black pepper, to taste

Steps:

  • In a large frying pan, heat olive oil until hot. Add leeks and saute them for 6-8 minutes, until soft. Lower heat and add chorizo. Fry over very low heat, turning occasionally until crisp.
  • Cook the pasta in a large saucepan of salted boiling water until al dente.
  • Meanwhile, crack the eggs into a bowl, add the Parmesan cheese and paprika, season well with salt and black pepper. Mix together with a fork.
  • Just before the pasta is ready, increase the heat under the drying pan so that the oil and melted fat start to sizzle. Drain the pasta thoroughly, return to the pan and immediately stir in the egg mixture and the sizzling hot contents of the frying pan.
  • Stir vigorously so that the eggs cook evenly. Serve immediately with a scattering of grated Parmesan cheese.

Number Of Ingredients 6

1 pound (~500 grams) uncooked pasta (I used thick spaghetti)
2 large eggs
4 large egg yolks
2 ounces (60 g) freshly-grated Pecorino Romano
sea salt and freshly-cracked black pepper
7 ounces (200 g) diced guanciale*

Steps:

  • Heat a large stockpot of generously-salted water until boiling.
  • In a measuring cup or medium mixing bowl, whisk together the eggs, egg yolks, grated cheese, plus a few twists of freshly-cracked black pepper until combined. Set aside for later.
  • Meanwhile, cook the guanciale (or pancetta/bacon) in a large sauté pan over medium-high heat until browned and slightly-crispy, about 7 minutes. Remove pan from the heat, use a slotted spoon to transfer the guanciale to a clean plate (leaving the leftover grease in the pan) and set both aside for later.
  • Add the pasta to the boiling water and cook until 1 minute shy of al dente. Midway through, use a measuring cup to carefully scoop out about 1 cup of the starchy pasta water. Then while vigorously whisking the egg mixture with one hand, very slowly drizzle the hot water into the eggs with your other hand until the water is incorporated. (Be sure to constantly whisk the eggs, or else they will scramble!)
  • Once the pasta is nearly al dente and ready to go, use tongs or a spider spoon to transfer the pasta immediately from the stockpot to the large sauté pan with the bacon grease. Place the sauté pan over medium heat, add an additional 1/2 cup of the starchy pasta water to the pasta, then toss, toss, toss the pasta for 1 minute until it is al dente.
  • Then, using one hand to continue tossing the pasta, use your other hand to slowly drizzle the egg mixture into the pasta and toss until combined. (Do not add the eggs too quickly or they will scramble!) Continue tossing until the eggs form a glossy sauce that coats all of the pasta, adding in extra scoops of starchy pasta water if needed to thin out the sauce. Add the guanciale and toss to combine.
  • Serve immediately, garnished with an extra crack of black pepper (plus extra grated cheese, if desired).

This intensely flavourful chorizo spaghetti carbonara is made with 5 ingredients and only 20 minutes of your time. A perfect weeknight dinner treat.

160 g (from 225g pack) chorizo, sliced into small cubes ((£1.70))
300 g spaghetti ((£0.20))
2 garlic cloves, minced ((£0.69/3)=(£0.23))
3 egg yolks + 1 whole egg ((£0.88))
80 g parmesan, grated ((£1.75/2)=(£0.87))
1 tsp olive oil
Salt Pepper

Steps:

  • Start by adding the chorizo cubes into a large/deep frying pan on a low heat with the olive oil. Gently fry on a low heat to render the delicious fat out of the chorizo. Fry on low for around 8 minutes and add the minced garlic for the last 2 minutes of fry time.
  • Meanwhile, add your spaghetti into heavily salted boiling water, timer set to 2 minutes minus the packet time.
  • In a bowl, combine 3 egg yolks, 1 whole egg and the parmesan. Season generously with pepper and a pinch of salt. Whisk to combine.
  • Add a ladle of pasta water into the egg/parm mix and whisk to temper the eggs.
  • Reserving the pasta water, add the undercooked spaghetti into the pan with the chorizo for one minute. Stir to coat the spaghetti in the chorizo oil, cooking for one minute before turning off the heat.
  • Now that the heat is off and the pan is less hot, add the egg/cheese mix into the spaghetti whilst continuously stirring. We don't want the pan to be too hot here as it will scramble the eggs. Add pasta water when necessary to loosen the sauce.
  • Serve immediately with an extra sprinkle of parmesan, black pepper, salt and some optional chilli flakes.

8 ounces uncooked spaghetti
3 eggs
2 tablespoons milk (or heavy cream)
1/3 cup freshly-grated Manchego cheese, plus extra for topping
Kosher salt and freshly-cracked black pepper
4 ounces spicy (or sweet) Spanish chorizo, finely diced

Steps:

  • Cook the pasta in a large stockpot of generously-salted water according to package instructions. Reserve 1/2 cup of the starchy pasta water for later, then drain the remaining water, and set the pasta aside.
  • Meanwhile, as the pasta water is heating, whisk together the eggs, milk, 1/3 cup cheese, plus a generous pinch of salt and pepper in a small bowl until smooth. Set aside.
  • At the same time that you add the pasta to the boiling water, add the chorizo to a large sauté pan. Sauté over medium heat for 5-6 minutes, stirring and flipping occasionally. Remove from heat, drain off excess grease, and leave the cooked chorizo in the pan.
  • Once the pasta is drained and ready to go, transfer it immediately (you want the pasta to still be very hot!) to the sauté pan with the chorizo. Then slowly pour the sauce mixture into the pasta, while tossing the pasta continually with a pair of tongs, until the pasta is evenly coated and the sauce is creamy and cooked. (It's very important that you toss the pasta while the sauce is being added, otherwise the eggs can scramble.) If you think that the sauce seems too thick, you're welcome to add in a bit of the reserved starchy pasta water until the sauce reaches your desired consistency.
  • Serve immediately, garnished with extra Manchego and black pepper, if desired.

We don't use cream, milk, garlic, onions or other strange ingredients; we use only guanciale, eggs, pecorino cheese, and lots of black pepper (carbonaro is the Italian for coal miner). 1 pound guanciale (cured pork cheek), diced
1 (16 ounce) package spaghetti
3 eggs
10 tablespoons grated Pecorino Romano cheese, divided

Steps:

  • Heat olive oil in a large skillet over medium heat; add guanciale (see Cook's Note). Cook, turning occasionally, until evenly browned and crispy, 5 to 10 minutes. Remove from heat and drain on paper towels.
  • Bring a large pot of salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until tender yet firm to the bite, about 9 minutes. Drain and return to the pot. Let cool, stirring occasionally, about 5 minutes.
  • Whisk eggs, half of the Pecorino Romano cheese, and some black pepper in a bowl until smooth and creamy. Pour egg mixture over pasta, stirring quickly, until creamy and slightly cooled. Stir in guanciale. Top with remaining Pecorino Romano cheese and more black pepper.

Macaroni and chorizo is classic Spanish comfort food. While iterations abound, it typically starts by frying smoked chorizo with a little onion, adding canned or fresh tomato and maybe some oregano, then letting it simmer into a thick tomato sauce. It's often topped with cheese and baked like a mac and cheese. Instead of fresh tomatoes, this recipe uses highly concentrated tomato paste, which is made by cooking down tomatoes for ages so you don't have to. The paste fries in the chorizo's rendered drippings for a very fast, silky, smoky and spicy sauce. When shopping for this recipe, look for Spanish chorizo, a shelf-stable sausage usually found near salami and other cured meats in the grocery store. Mexican chorizo is sold fresh and is made with different chiles and spices.

1 pound orecchiette or other short pasta
1/4 cup olive oil
4 ounces Spanish chorizo, casing removed (see Tip), if necessary, and thinly sliced
3 tablespoons double concentrate tomato paste (or 6 tablespoons canned tomato paste)
3 garlic cloves, peeled and smashed
1/2 teaspoon red-pepper flakes

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook, according to package directions, until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta.
  • Meanwhile, in a large Dutch oven, heat the olive oil and chorizo over medium-high. Cook, stirring occasionally, until chorizo is crisp and brown, 2 to 3 minutes. Turn off the heat and use a slotted spoon to transfer the chorizo to a plate.
  • Return the pot to medium heat and add the tomato paste and garlic. Cook, stirring, until the tomato paste is caramelized and a shade darker, 3 to 5 minutes, covering the pan if the splattering is wild. Add the red-pepper flakes and a few grinds of black pepper, then remove from heat.
  • Add the cooked pasta and 1/2 cup of the reserved pasta water to the tomato mixture. Return the pot to the medium-high heat, and stir vigorously until the pasta is well coated. Add more pasta water until the sauce is glossy. Stir in the chorizo and season to taste with salt and pepper.
