DEEP-FRIED CHICKEN WINGS
A soy sauce mixture with sesame seeds and green onion adds flavor to these deep-fried wings. My mom got the recipe from a friend in Vancouver, British Columbia and passed it on to me. My husband just loves chicken wings, and these are by far his favorite. -Tami McLean, Brampton, Ontario

- Cut chicken wings into three sections; discard wing tip section. , In a large bowl, combine the cornstarch, flour, sugar, sesame seeds and salt. Combine the eggs, oil and soy sauce; gradually whisk into dry ingredients until blended. Stir in onions. Add chicken wings and stir to coat. Cover and refrigerate for at least 3 hours., Remove wings and discard the batter. In an electric skillet or deep-fat fryer, heat 1-1/2 in. of oil to 375°. Fry wings, 8-10 at a time, for 5-6 minutes on each side or until juices run clear. Drain on paper towels.

SPANISH-STYLE DEEP-FRIED CHICKEN WINGS
These Spanish-style deep-fried chicken wings are great for a party and go really well with sherry-especially Amontillado abocado. Normally you don't use too much chili pepper, but I love to add a real kick of heat to my ajillo (garlic dressing.)

- Heat enough oil to reach at least 2 inches deep in a large, deep-sided pot until it registers 350°F (177°C) on an instant-read thermometer.
- Cut off the pointy tips from each chicken wing and discard or reserve for chicken stock. Pat the wings completely dry with paper towels.
- Add about 1/4 of the chicken wings to the oil and cook for 6 to 7 minutes, until cooked through, crisp, and golden.
- Meanwhile, place the garlic cloves on a cutting board and, using the flat side of a large chef's knife, smash them and remove the papery skins. Sprinkle with some salt and use the side of a large knife to mash the garlic into a smooth paste. Put the extra-virgin olive oil and the garlic in a small pan, and place it over medium-low heat. As soon as the garlic begins to sizzle, add the red pepper flakes and cook very gently for about 2 minutes, until the garlic is very lightly golden. Stir in the paprika and sherry vinegar and remove from the heat.
- As soon as the first batch of chicken wings is cooked, drain them briefly on brown paper bags and then transfer them to a serving bowl or platter. Drizzle with some of the warm garlic dressing, toss well, sprinkle with a little sea salt, and start snitching some while you repeat with the remaining wings.

SPANISH-STYLE FRIED CHICKEN WITH GRILLED AVOCADO
Inspired by Spanish flavors, this fried chicken from chef Suzanne Goin of Los Angeles' A.O.C. gets a spicy boost in both the marinade and the seasoned breading. At A.O.C., Goin serves the dish with a romesco aioli. For a similar sauce, combine equal parts romesco and mayonnaise.

- Combine garlic, buttermilk, Aleppo-style pepper, cumin, coriander, 1 tsp. paprika, 1 tsp. salt, and 1/2 tsp. black pepper in a large resealable plastic bag. Add chicken and toss to coat, then chill at least 4 hours and up to overnight.
- Whisk flour, cayenne, and remaining 3 Tbsp. paprika in a medium shallow bowl.
- Fit a large heavy pot with deep-fry thermometer. Pour in oil to a depth of 2"; heat over medium-high until thermometer registers 350°F. Reduce heat to medium and raise or lower as needed to maintain a temperature of 350°F. Working in batches, remove chicken from marinade, shaking off excess, and dredge in flour mixture. Fry chicken, turning once, until golden brown and cooked through, about 3 minutes per batch. Transfer to a paper towel-lined rimmed baking sheet; season with salt.
- Heat a grill pan over medium. Brush avocado with oil; season with remaining 1/4 tsp. salt and 1/4 tsp. pepper. Grill, turning occasionally, until lightly charred, about 3 minutes per side. Transfer chicken to a platter and arrange avocado alongside; serve with spicy mayonnaise, if desired.

- Heat the olive oil in a large skillet over high heat. If you want your wings spicier, add a pinch of red pepper flakes to the oil.
