SPARKLING SANGRIA
This is my sixth attempt at re-creating a sangria my friends and I enjoyed at a Pennsylvania inn. We all agree it's as good as-if not better than-the one we remember!-Pam Mele, Franklin, New Jersey

Steps:
- In a small saucepan, combine the sugar, water and vanilla. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 3-5 minutes or until sugar is dissolved, stirring occasionally. Remove from the heat; cool to room temperature. Discard vanilla bean., Divide the fruits between 2 large pitchers. Add the wine, orange juice, liqueur, Cognac, lemon juice, lime juice and vanilla mixture. Refrigerate for at least 4 hours. Just before serving, stir in carbonated water.

SPARKLING CHRISTMAS SANGRIA
Quick and easy, Sparkling Christmas Sangria is lightly spiced and refreshingly fruity. Loaded with blood oranges, apples and cranberry, this fun cocktail is tasty and festive!

Steps:
- Add the fruit to a large pitcher and pour the wine over the fruit.
- Stir in the orange liquor, cinnamon sticks and cranberries.
- Chill the wine mixture for 1 hour.
- Right before serving add the sparkling water. Serve with more fresh fruit, if desired.

- In a large pitcher, combine the brandy, and orange liqueur. Pour in the sugar, stir or shake the pitcher thoroughly to mix until the sugar dissolves. Add all the fruit at once. Add the cava and serve as is or on ice.

- Combine 1 cup white grape juice, 1/2 cup cognac, the juice of 1 lemon, 3 tablespoons superfine sugar and 1 cup water in a pitcher. Add 1 cup each halved grapes and pitted cherries, and 1 sliced peach. Chill 3 hours or overnight. Before serving, add a bottle of cold sparkling wine. Pour into flutes.
