THAI DRUNKEN NOODLES



Thai Drunken Noodles image

Quick and easy Thai noodles make a tasty meal. You can easily change the ingredients to suit your own tastes. Different veggies can be added or substituted such as mushrooms, snow peas etc

Yield 1 platter of Thai noodles

Number Of Ingredients 12

8 ounces flat rice noodles
2 tablespoons kikoman soy sauce
1 tablespoon oyster sauce
1 teaspoon brown sugar
1 tablespoon canola oil
1 cup diced extra firm tofu
2 teaspoons minced garlic
1 sliced Thai chiles or thai chili paste (just use very little the first time and then you'll know how much to increase or decrease it by the)
1 1/2 cups sliced broccoli
1/2 cup thinly sliced red onion
1 cup bean sprouts
1 cup Thai basil (you can use regular basil leaves in its place if you can't find this ingredient but it will give it)

Steps:

  • Soak noodles for 15 minutes in warm water.
  • In a large pot of boiling water, cook rice noodles until just tender, about 1 minute; drain and set aside.
  • In a small bowl, combine the Kikoman sauce, oyster sauce and sugar and put it aside.
  • Heat oil in a large skillet or wok over medium-high heat.
  • Add tofu and cook until its a golden colour which should take about 30 seconds to a minute and set this aside.
  • Add garlic and cook 10 seconds.
  • Add chili, broccoli, onion and stir fry for 30 secs.
  • Add the soy sauce mixture, noodles, sprouts, basil and reserved tofu and stir-fry for 1 minute, or until hot.
  • Serve in a serving platter.

½ pound dried rice noodles
1 pound skinless, boneless chicken breast halves
1 dash soy sauce
1 green bell pepper, sliced
1 red bell pepper, sliced
1 cucumber, coarsely chopped
1 carrot, grated
10 mushrooms, halved
1 onion, chopped
2 cloves garlic, minced
1 tablespoon minced fresh ginger root
1 ½ tablespoons red chile sauce
¾ cup peanut sauce
2 tablespoons oyster sauce
1 tablespoon sesame oil
1 tablespoon sesame seeds

Steps:

  • Cook rice noodles according to package directions.
  • Slice chicken breasts into strips. Marinate in soy sauce for about 1/2 hour.
  • In a large saucepan or wok, heat sesame oil over medium heat. Cook chicken until no longer pink. Add garlic, ginger, and onions; cook until onions are tender. Add mushrooms and cucumbers; cook until mushrooms are tender. Add peppers, carrot, peanut sauce, oyster sauce, and hot chili pepper sauce. Heat through.
  • Toss cooked rice noodles with saute. Garnish with sesame seeds.

Number Of Ingredients 12

2 tablespoons yellow bean sauce
2 cups water
8 tablespoons vegetable oil
1/4 cup flour
3 tablespoons sugar
4 tablespoons soy sauce
2 teaspoons of crushed garlic
250 g fresh flat rice noodles
500 g chinese broccoli
200 g pork, thinly sliced
200 g sliced chicken
1 cup bean sprouts

Steps:

  • Coat the chicken and pork well with the flour.
  • Mix the garlic and 2 cups of water with the remaining flour and mix well.
  • Heat a wok or large fry pan and add the oil. Fry the meat in small batches until brown. When finished drain the excess oil and add the flour and water mixture and add all the meat.
  • Turn to a low heat until a gravy mixture is formed. To thicken the gravy add a little more flour and water in a light paste form.
  • In a large saucepan cook the noodles as per instructions on the packet.
  • Mix the soy sauce with the sugar and mix the yellow bean paste with a little hot water then mix into the meat mix.
  • 5 minutes before serving add the Chinese broccoli.
  • Mix in the noodles and serve.
  • NOTE:.
  • yellow bean paste isn't necessarily yellow. it is made with yellow soy beans. you can find it in Asian stores.
