Light-tasting and delicious! My mother's famous dessert recipe has completed many holiday meals and makes a stunning summery cake. This works beautifully with strawberries as well.

1 (9 inch) angel food cake
2 (3 ounce) packages raspberry-flavored gelatin mix (such as Jell-O®)
1 ¼ cups boiling water
1 (15 ounce) package frozen raspberries in syrup, thawed and undrained
1 pint heavy whipping cream

Steps:

  • Butter a 9-inch tube pan. Break angel food cake into chunks; set aside.
  • Stir raspberry gelatin and boiling water together in a bowl until gelatin is dissolved; place gelatin in the refrigerator to cool slightly, about 10 minutes. Stir raspberries with syrup into gelatin.
  • Beat cream in a chilled glass or metal bowl with an electric mixer until soft peaks form; fold whipped cream into raspberry mixture.
  • Pour about 1/4 cup of raspberry mixture into prepared pan. Place 1/3 of cake chunks into pan; pour 1/3 of remaining raspberry mixture over cake. Repeat layering with remaining ingredients, ending with the raspberry mixture. Chill in refrigerator until firm, about 2 hours.
  • To remove from pan, center a serving plate over tube pan; invert.

Four 1/4-ounce packets gelatin
1 1/4 cups sugar
2 1/2 cups prosecco
1 cup club soda
3 tablespoons black raspberry liqueur
One 6-ounce container raspberries, plus additional raspberries for serving, optional

Steps:

  • Pour 2 cups water into a small saucepan and sprinkle the gelatin over the top. Let sit until the gelatin has absorbed liquid, about 1 minute. Bring to a boil over medium heat, stirring often with a wooden spoon to fully dissolve the gelatin. Pour the mixture into a bowl and add the sugar, stirring until dissolved. Let cool until just warm to the touch. Then add the prosecco, club soda and raspberry liqueur; stir until combined. Ladle 2 cups of the liquid into a Bundt pan. Sprinkle with the raspberries and refrigerate until pretty much set, 1 hour.
  • Once the first layer is set, pour the remaining liquid over the top. Refrigerate for another 3 hours, until fully set.
  • To unmold, dip the Bundt pan in a small amount of warm water for a few seconds, then cover the pan with a plate and invert so the mold releases onto the plate.
  • Serve with more raspberries if desired.

1 (6 ounce) package raspberry gelatin powder
1 cup boiling water
2 cups sparkling wine or 2 cups spumante, chilled
1 1/2 cups frozen raspberries, not thawed
1/3 cup mascarpone cheese, room temperature
1/2 cup walnuts, toasted and chopped

Steps:

  • Whisk the gelatin and boiling water in a medium bowl until the gelatin is dissolved, about 2 minutes.
  • Refrigerate until lukewarm, about 25 minutes.
  • Stir in the Prosecco. Cover and refrigerate until the gelatin thickens but does not set, stirring occasionally, about 1 hour.
  • Stir in the raspberries (bubbles will form in the gelatin mixture). Divide the gelatin among 6 Champagne flutes or individual dessert bowls.
  • Cover and refrigerate until the gelatin is set, at least 2 hours and up to 2 days.
  • Dollop the mascarpone cheese atop each serving, then sprinkle the walnuts over and serve.

3/4 cup thawed COOL WHIP Whipped Topping

Steps:

  • Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Add raspberries; stir until gelatin starts to thicken.
  • Pour 1/2 cup gelatin mixture into separate medium bowl. Add COOL WHIP; whisk just until blended. Spoon into dessert cups; top with remaining gelatin mixture.
  • Refrigerate 15 min. or until firm.

This jello may be the hit of your next party or buffet. It may take a little time and patience to make -but believe me it is well worth it! I am ask for this recipe whenever I bring this to family gatherings or church dinners.

4 box (3 oz. each) jello in 4 different colors- like cherry- orange-lime-and blueberry
14 oz can sweetened condensed milk not evaporated milk
3 pkg knox unflavored gelatin
5 1/2 c boiling water
1/2 c cold water

Steps:

  • 1. Using 4 jello colors of your choice or those listed here. Dissolve each jello flavor or color in 4 different bowls and add 1 cup of boiling water to each bowl. Mix and stir each until dissolved.
  • 2. Pour jello into 4 different 8-inch square pans and chill at least 3 hours, until firm. (I chill overnight)
  • 3. After chilling and firm, cut each flavor into small squares and scatter pieces in a lightly oiled Bundt pan with canola oil and then wipe out 99% of it. Set aside.
  • 4. In a separate bowl, sprinkle the 3 unflavored gelatin packets(Knox) into 1/2 cup of the cold water. After the gelatin puffs up(blooms), add the 1 1/2 remaining boiling water and stir until the unflavored gelatin(Knox) dissolves.
  • 5. Add the can of condensed milk to the unflavored gelatin mixture. Stir and cool(not set). Pour cooled milk mixture over the jello in the Bundt pan and chill overnight. Unmold by dipping the pan very briefly in warm water then invert onto a serving plate. Beautiful!!

2 cups diet carbonated lemon-lime soda

2 pkg. (0.3 oz. each) JELL-O Raspberry Flavor Sugar Free Gelatin
1/4 cup cold water
36 fresh raspberries (about 1-1/3 cups)

Steps:

  • Mix unflavored gelatine and granulated sugar substitute in medium microwaveable bowl until blended. Stir in soda. Let stand 3 min. or until gelatine is softened. Microwave on HIGH 3 min. or until gelatine and sugar substitute are dissolved, stirring after each minute. Pour into 8-inch square dish sprayed with cooking spray.
  • Refrigerate 25 to 30 min. or until set but not firm. Meanwhile, add boiling water to raspberry gelatin mixes in separate medium bowl; stir 2 min. until completely dissolved. Stir in cold water. Cool 15 min.
  • Pour raspberry gelatin gently over clear gelatine layer in dish. Refrigerate 1 hour or until firm. Cut into 36 squares; top with raspberries just before serving.

1 cup graham cracker crumbs
3 tablespoons sugar
1/4 cup butter, melted
FILLING
1 package (10 ounces) frozen raspberries, thawed
1/4 cup cold water
1 envelope unflavored gelatin
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
1 cup heavy whipping cream, whipped
Fresh raspberries and mint

Steps:

  • In a large bowl, combine the crumbs, 3 tablespoons sugar and butter. Press onto the bottom of a 9-in. springform pan. Bake at 350° for 10 minutes. Cool. , Meanwhile, for filling, drain raspberries, reserving the juice. Set berries aside. In a small saucepan, combine the juice, cold water and gelatin. Let stand for 5 minutes. , Cook and stir over low heat until gelatin is dissolved. Remove from the heat; cool for 10 minutes. , In a small bowl, beat cream cheese and sugar until smooth. Add berries and gelatin mixture; beat on low until thoroughly blended. Chill until partially set. Watch carefully, as mixture will set up quickly. , Gently fold in whipped cream.   • Prepare the jello by heating 2 cups of water in the microwave for 4-5 minutes until boiling. Stir in the powdered gelatin until dissolved, then add the remaining 2 cups of cold water and stir. Place in the fridge for 30-60 minutes until thickened and syrupy.
  • Crush the Nilla Wafers into fine crumbs using a food processor, blender, or by hand with a rolling pin and heavy duty ziploc bag. Set aside 1/2 cup of the crumbs and pat the remaining crumbs into the bottom of a 9x13-inch pan.
  • Whisk 1 and 1/2 cups of the powdered sugar, melted butter, and 1/4 cup of the cream in a medium bowl until thick but drizzly. If the mixture is too thick to drizzle add a little additional cream, one tablespoon at a time. Drizzle this over the Nilla Wafer crumbs. It's okay for some of the crumbs to peek through and there is no need to spread the creamy layer to the edges.
  • Sprinkle the raspberries evenly over the creamy layer, reserving your best looking raspberries for decorating the top of the dessert when it's done.
