SPICED APPLE CAKE

- For the apples: Preheat the oven to 350 degrees F. Butter a 9-by-13-inch glass baking pan.
- Mix together the apples, granulated sugar and cinnamon in a medium bowl. Set aside.
- For the cake: Combine the butter and granulated sugar in a large bowl. Using a hand-held mixer, beat on medium high until light and fluffy, about 3 minutes. Beat in the eggs one at a time until fully combined, then add the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, salt and buttermilk. Beat on low speed until a few streaks remain, then fold together with a rubber spatula until fully combined. (Do not overmix.)
- Sprinkle the bottom of the pan with half of the apple mixture. Spread the batter over the top of the apples. Top the batter with the remaining apples, making decorative rows across the cake. Bake, rotating the pan halfway through, until a toothpick inserted in the middle of the cake comes out clean, about 1 hour. Allow the cake to cool slightly before dusting with powdered sugar and serving.

- Preheat oven to 350 degrees F (175 degrees C). Butter a 10 inch tube pan. Cover raisins with warm water, let soak for 10 minutes and then drain. Whisk together flour, spices, and salt. Set aside.
- Cream together butter or margarine and sugar. Mix in eggs and vanilla. Stir together soda and 1 tablespoon warm water, and mix into the sugar mixture. Stir in flour mixture, apples, and strained raisins until well blended. Pour batter into prepared pan.
- Bake for approximately 1 hour, or until a tester comes out clean. Cool in pan. Once cool, shake pan to loosen cake. Turn onto plate, and dust with confectioners' sugar.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan. Sift together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.
- In a large bowl, cream together the shortening, brown sugar and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Stir in the chopped apples.
- Spread batter evenly in prepared pan. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
- To make the frosting: In a medium bowl, combine 1/4 cup shortening, confectioners' sugar, cinnamon and nutmeg. Beat until light and creamy. Beat in the milk, one tablespoon at a time, until desired spreading consistency is achieved. Spread over top of cooled cake.

SPICED APPLE AND YOGHURT CAKE

- Preheat your oven on 190c. Line and butter a 20cm springform cake tin.
- Weigh your eggs and weigh the same amount of butter, sugar and flour.
- Beat your butter and sugar together, until pale and creamy.
- Beat your eggs, then add half of the eggs to the butter and sugar, with a tbsp of flour and stir.
- Stir in the rest of your eggs. Sieve in your flour and fold the mixture with a metal spoon.
- Now add your milk, lemon juice and yoghurt and spice then stir. Set aside the mixture.
- Peel, core your apples and slice your apples. Then put them in a pan with the brown sugar and a bit of water. Cook the apples until tender.
- Once the apples are tender, cover the base of your cake tin with them, leaving small gaps around the edge of the tin and between the apple slices.
- Put the cake mixture into your tin and bake for 30- 35 minutes.
DANNON LOW-FAT APPLE SPICE CAKE
This is a great spice cake with no "guilty aftertaste"! It's good with the glaze listed or with a vanilla or lemon sauce like you make for gingerbread. It's moist enough to eat plain, too!

- In large bowl, mix flour, sugar, baking soda, baking powder, cinnamon, allspice, salt and cloves.
- Add applesauce, yogurt, egg, and oil; mix well.
- Stir in raisins (note: I like to soften the raisins in hot water for a few minutes before adding them-they're plumper and softer that way).
- Pour into greased and floured 12-cup Bundt or 13 x 9 inch pan.
- Bake at 325 F.
- for 50- 60 mins, or until toothpick inserted in center comes out clean.
- Cool 15 mins.
- Serve with Quick Yogurt Glaze: Glaze: In small bowl, combine Dannon Plain Nonfat Yogurt, brown sugar and vanilla.
- Beat with fork or whisk until smooth.
- (This is also good with orange or lemon extract instead of vanilla).

MUM'S EASY SPICED APPLE CAKE
Easily made using a food processor. Leftovers make a good addition to packed lunches. Can be made with whatever apples are available. Another from my old files of Alison Holst Recipes.

Steps:
- Make the topping first by placing all the topping ingredients into the food processor bowl and process with the metal chopping blade until the butter is chopped into small pieces. Do not over process or the rolled oats will be chopped too fine.
- Tip topping out of the bowl.
- Cake:.
- Without washing the bowl add in the apples which have been cored and cut into about 12 pieces. There is no need to peel them first.
- Process with metal blade until cut into fine pieces.
- Add the remaining cake ingredients. It is not necessary to sift the dry ingredients first but make sure the baking soda is not lumpy.
- Line the base of a 9"/23cm tin with baking paper & butter or spray the sides.
- Pour batter into prepared tin.
- Sprinkle over the topping mix.
- Bake at 350'F/180'C for approx 40-45 minutes or until the sides of cake shrink from the edge of the tin and the centre springs back when pressed lightly.
- Serve hot, warm, reheated or cold with whipped cream and/or custard as a dessert or cold in lunchbox.

- Preheat oven to 375 degrees. Brush a 9-by-3-inch baking dish with butter. Line bottom and 2 long sides with parchment, leaving a 2-inch overhang; butter parchment.
- Whisk together flour, baking powder, salt, baking soda, allspice, and ginger. In a large bowl, whisk eggs until pale and foamy. Whisk in sugar and vanilla until combined. Add half of flour mixture, then half of butter and sour cream, whisking just until combined. Repeat with remaining flour mixture, butter, and sour cream (do not overmix). Transfer batter to prepared baking dish, smoothing top with a spatula.
- Toss apples with lemon juice and scatter evenly over batter. Bake until apples are tender and golden brown in places and a toothpick inserted into center of cake comes out with moist crumbs, 40 to 45 minutes. Warm jam in a small saucepan over medium until it becomes thin and brushable. Immediately brush apples with jam. Let cool completely on a wire rack. Lift cake from pan using parchment and transfer to a board to slice; serve.
