Shou Zhua Bing is a deliciously wonderful cousin of the scallion pancake that translates to "Hand grab pancake" because you can easily pull apart the layers.

3 tablespoons oil
4 scallions ((white parts only; whole, not chopped))
3 star anise
1 tablespoon Sichuan peppercorns
3 tablespoons all-purpose flour
1/8 teaspoon five-spice powder
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup boiling water
3/4 cup cold water
1 1/2 tablespoons sesame seeds
1/4 cup finely chopped scallions ((optional))
Salt ((to taste))

Steps:

  • In a small saucepan over low heat, add the oil. Throw in the scallion pieces, star anise, and Sichuan peppercorns. Keep the pan over low heat for about 10 minutes, until fragrant. Pick out all the spices, so you essentially have a pot full of spiced oil. Stir in the flour and five-spice powder to create a thin roux. Set it aside, and let it cool completely.
  • In a mixing bowl, combine the flour and salt. Make a well in the flour and add the boiling water. Mix with a fork or a pair of chopsticks. Gradually add the cold water and knead everything together to form a smooth dough ball. Cover with a damp cloth and let it rest for 30 minutes.
  • Depending on the pancake size you want, divide the dough into 4-8 equal pieces. Lightly brush some oil on a clean work surface. Roll each piece of dough into a long rope, and then use a rolling pin to roll it flat. Brush a thin layer of the roux all over the dough, and then sprinkle it sparingly with sesame seeds, chopped scallion, and salt.
  • Start on one end and roll the dough up. Stand the roll upright and press it down with your palm. Lightly roll out the resulting circle until you get a pancake that's between 1/4-1/2" thick. It's ok of the outer edges break open a bit. Repeat for each pancake.
  • At this point, you can cook them, or freeze them by separating each pancake with a layer of plastic wrap or wax paper, and then putting them in a freezer bag. There's no need for thawing when you want to cook them.
  • Heat a pan over medium heat and add a tablespoon or two of oil. Place the pancake in the pan. Once the bottom starts to turn a little golden, add two teaspoons of water to the sides of the pan (don't pour the water on the pancake), and immediately cover with a lid. Cook 3 minutes. Uncover the pan, flip the pancake, and do the same steps with the other side.
  • To finish, uncover the lid again, turn up the heat slightly, and brown both sides while flipping the pancake occasionally. When it's golden brown, use a pair of chopsticks to squeeze and pinch the pancake a couple times to loosen the layers (this step is optional), because you ideally want to see the layers when you hand-pull it apart. The cooked pancake should be crispy and slightly chewy.

  • On a large, clean cutting board, place a dumpling wrapper in front of you. Brush the top lightly with oil, and stack another dumpling wrapper directly on top of it. Brush lightly with oil and repeat these steps until you have 8-10 layers. Each wrapper should be brushed with oil except the very top layer (the oil keeps the layers separated, even after rolling and steaming).
  • Gently press the stack with your palm to flatten. You can also gently press with the side of your rolling pin, moving the rolling pin up and down the circle so that it flattens evenly. Make an effort to keep the stack even! Turn the stack upside down and repeat the same actions on the reverse side.
  • Once the stack has increased by about 50% of its original diameter, start rolling. Every so often, turn the stack a quarter turn to the right or left to maintain its round shape. Roll until the diameter of the stack is around 7 inches (about 18 cm).
  • Repeat the above steps to ensure you make enough pancakes. You can steam up to 2 stacks together (just remember to brush oil between the two stocks so they don’t stick). If you need to make more, you can do so using a multi-level steamer or steam them in batches.

  • In a large bowl, combine the flour, salt, sugar, and five spice powder (if using). Add ¾ cup water and mix to form a dough. Knead the mixture for about 5 minutes, until it forms a smooth ball. Set the dough aside and cover with a damp cloth. Let it rest for about an hour. In a small bowl, add the soy sauce, water, sugar, and a few chopped scallions and sesame seeds to make the dipping sauce. You can also add the garlic if using.
  • After the dough has rested, cut the dough in half and leave the other half under the damp cloth. Roll out the dough into a big rectangle, as thin as you can get it. Rub about half a tablespoon of oil all over the surface of the dough and sprinkle with half of the scallions, salt, and sesame seeds (if using). Cut 2 slits on each long side of the dough.
  • With the rolled out dough oriented vertically, start at the bottom and fold the two side flaps of dough over the middle piece. Then fold that entire rectangle forward onto the middle level. Fold those to flaps over, and repeat.
  • When you have your nice, neat rectangle, take your rolling pin and roll it until almost doubled in area. Take care not to roll too firmly, as you don’t want the dough layers to bind and you want to keep some small pockets of air between them.
