Papaya-Spinach Salad image

The honey-ginger dressing brings an unlikely combination of ingredients together in this tropical delight.

2 tablespoons lime juice
2 tablespoons honey
2 teaspoons vegetable oil
1/2 teaspoon grated gingerroot or 1/4 teaspoon ground ginger
5 cups bite-size pieces fresh spinach
1/2 cup julienne strips jicama
1/2 cup sliced radishes
1 medium papaya or mango, peeled, seeded and cut up
2 tablespoons sunflower nuts

Steps:

  • In tightly covered container, shake all dressing ingredients.
  • In large bowl, toss dressing and remaining ingredients except nuts. Sprinkle with nuts.

1 red pepper, seeded, julienned
2 garlic cloves, crushed
10 allspice berries
1 tablespoon coriander seeds
8 peppercorns
1 Scotch bonnet, whole
3 cups white wine vinegar
1 cup water
1 1/2 cups sugar
1/2 cup salt

Steps:

  • Divide papaya, ginger, peppers, and garlic into 2 sterilized pickling jars.
  • Bring all other ingredients to a boil in a saucepan. Reduce to a simmer for 5 minutes then pour over vegetables in jar. Seal when cold.

4 cups cubed papayas (if fresh is unavailable you can use 2 cans, drained)
2 cups almond milk (or coconut or rice milk-original recipe used dairy milk)
3 tablespoons sugar
1/4 teaspoon cardamom
1 pinch ground ginger (or use fresh ginger, grated)
1 -2 cup ice, as desired

Steps:

  • Place cubed papaya along with spices(start with just a little and add more to taste) into the blender.
  • Pour in cold milk with ice to make as thin or thick as you like it.
  • Blend till nice and smooth.
  • Great to cool off with!

  • In a deep and heavy bottomed pan, put the papaya purxe9e, the sugar, salt and chili flakes and bring to a boil. Now turn down the heat, and let the papaya mixture thicken while stirring occasionally making sure it doesn't stick to the bottom of the pan.
  • In the meanwhile soak the agar flakes in about 2 tbsp of water. Once the jam has thickened quite a bit, add the soaked agar flakes (with the water) and the garam masala.
  • Mix well and allow the jam to thicken a little further (another 10 minutes on the stove. Cool completely and bottle in sterilized jars.
