This homemade Pineapple Sauce is a delicious accompaniment that is made using pantry staples and comes together in under 10 minutes. Drizzle it on a scoop of ice-cream, crushed ice, or smother it on ham for the main course, it is going to make your holiday table shine.

2 cups peeled and chopped fresh pineapple
1 teaspoon chopped garlic
1/2 cup pineapple juice (fresh or canned)
1/4 cup rice vinegar
1/4 cup lemon juice
1 teaspoon lemon zest
1 cup brown sugar
2 teaspoon red chili flakes
1 teaspoon salt
3 tablespoon cornflour
1/4 cup water

Steps:

  • Peel the pineapple using a sharp knife and chop the flesh into small cubes. To save time, you can buy already peeled and chopped pineapple. Add 2 cups of cubed pineapple and 1 tsp chopped garlic in the medium jar of a blender and blend to make a coarse mixture.
  • Do not blend the pineapple too much. We are looking for a coarse texture here.
  • Add the pineapple mixture in a heavy bottom pan along with ½ cup pineapple juice, ¼ cup vinegar, ¼ cup lemon juice, 1 tsp lemon zest, 1 cup brown sugar, 2 tsp red chili flakes, and 1 tsp salt. Bring the mixture to a boil and cook for 5-6 minutes on medium heat. Cover the pan with a lid of the mixture is spluttering too much. Keep stirring frequently.
  • Mix 3 tbsp cornflour in ¼ cup water in a small bowl to make a thin slurry and add it to the pan.
  • Cook on medium heat until the sauce thickens. Remove the pan from heat and let the sauce cool down. Store in a glass jar in the refrigerator and use as desired.

1 (20 ounce) can crushed pineapple in heavy syrup, drained with syrup reserved
1 tablespoon cornstarch
1 teaspoon ground ginger
¾ cup orange juice
2 tablespoons maple syrup

Steps:

  • In a medium bowl, mix the crushed pineapple, cornstarch and ground ginger. Gradually stir in enough of the reserved pineapple juice to make the mixture smooth.
  • In a medium saucepan over medium heat, blend orange juice and maple syrup. Cook and stir 5 minutes, until clear and thickened. Mix in the pineapple mixture. Continue to cook and stir until well blended and thick, about 15 minutes.

2-15 ounce cans pineapple chunks
1 cup sugar
¾ cup apple cider vinegar
¼ teaspoon ground cloves
¼ teaspoon ground cinnamon
dash of salt
2-3 teaspoons cornstarch mixed with 1-2 Tablespoons water to form a paste

Steps:

  • Drain pineapple juice from the cans into a medium saucepan. Set pineapple chunks aside.
  • Add the sugar, apple cider vinegar, cloves, cinnamon, salt, and cornstarch mixture to the syrup in the sauce pan and cook over medium heat for 10-15 minutes.
  • Add pineapple chunks back to the mixture. Heat to boiling until the sauce starts to thicken, around 2-5 minutes longer.
  • Remove from heat and cool. Sauce will thicken more upon standing.
  • Serve in dessert sauce dishes.

1 cup unsweetened pineapple juice
1/2 teaspoon whole cloves
1 cinnamon stick (3 inches)
3 tablespoons brown sugar
1 tablespoon cornstarch
2 tablespoons cider vinegar
1 cup unsweetened pineapple tidbits, drained
6 boneless fully cooked ham steaks (4 ounces each)

Steps:

  • In a saucepan, bring pineapple juice, cloves and cinnamon stick to a boil. Reduce heat; cook, uncovered, for 5 minutes. Strain juice, discarding cloves and cinnamon. Return juice to the pan. , In a bowl, combine brown sugar and cornstarch; stir in vinegar until smooth. Stir into pineapple juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in pineapple; heat through., In a large nonstick skillet, cook ham steaks until browned and heated through. Serve with the pineapple sauce.

1 tablespoon peanut oil
1 garlic clove, minced
1 red onion, chopped
1/4 cup rice vinegar
1 (8 ounce) can crushed pineapple, undrained
1/4 teaspoon allspice
1/4 teaspoon red pepper flakes
2 1/2 teaspoons mustard
2 tablespoons fresh basil, chopped
1/4 cup red bell pepper, diced

Steps:

  • Heat oil in a saute pan to medium temperature.
  • Add garlic and onion.
  • Saute about 2 minutes.
  • Stir in rice vinegar and crushed pineapple, juice included.
  • Add allspice, red pepper flakes and mustard.
  • Heat, stirring, about 4 minutes or until bubbly and slightly thickened.
  • Blend mixture, either by hand blender or container, until smooth,
  • Just before serving, stir in chopped basil and diced red bell pepper.

1 can pineapple chunks
1 habanero pepper, minced
4 fresh mint leaves, cut into chiffonade
1 cup corn oil
2 large corn tortillas, cut into wedges
1 cup sugar and cinnamon mixture

Steps:

  • In a small saucepan, combine pineapple chunks, habanero pepper, and mint leaves. Simmer for 5 minutes. Cool thoroughly and remove mint.
  • In a large saute pan, bring 1 cup of corn oil to 325 degrees F. Add wedges of corn tortillas and cook until golden brown on each side, approximately 3 minutes. Drain on paper towels.
  • Liberally dust warm corn wedges with sugar and cinnamon mixture.
  • Serve pineapple salsa over ice cream with the fried corn tortillas.

SPICED PINEAPPLE PORK

2 tsp vegetable oil
4 pork steaks , trimmed of excess fat
2 tbsp light muscovado sugar
1 tsp tomato purée
432g can pineapple rings in juice, drained, but juice reserved
½ tsp chilli powder
1 tsp Chinese five-spice powder
coriander leaves, to serve
1 tbsp dark soy sauce

Steps:

  • Add the oil to a large non-stick pan, season the steaks well, then fry for 5 mins on each side until golden and almost cooked through. Mix the sugar, soy, tomato purée and most of the pineapple juice in a bowl.
  • Add the pineapple rings to the pan and let them caramelise a little alongside the pork. Add the chilli and five-spice to the pan, then fry for 1 min until aromatic. Tip in the soy mix and let it bubble around the pork and pineapple for a few mins until slightly reduced and sticky. Sprinkle with coriander, and serve with rice and Chinese greens.

Packed 1/3 cup (80g) light brown sugar
2 cups (480g) pineapple juice
15 whole cloves
2 cinnamon sticks

  • Peel and chop the ginger. Put it in a saucepan with the sugar, pineapple juice, cloves, and cinnamon and bring to a boil. Reduce the heat and simmer until the sauce is syrupy and reduced by half, about 1 hour. Strain, cover with plastic wrap, and store in the refrigerator for up to 3 days.
