An old family favorite salvaged from our 30-plus-year-old cookbook. We like this served over egg noodles. I like to increase the tomatoes to a 15 ½-ounce can, and I use a full green pepper and add a teaspoon of paprika.

¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
1 (2 pound) beef round steak, 1 inch thick
2 tablespoons vegetable shortening
¼ cup water, or as needed
1 (8 ounce) can diced tomatoes
1 onion, minced
½ green bell pepper, chopped
salt and ground black pepper to taste

Steps:

  • Mix flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle half the flour mixture on one side of round steak pieces; pound steak until coating is absorbed. Flip steak and coat with remaining flour mixture; pound steak until coating is absorbed. Cut steak into 6 pieces.
  • Melt shortening in a large skillet over medium heat; place steak pieces in the hot shortening. Cook until browned, 7 to 10 minutes per side. Cover and simmer until tender, about 1 hour, adding water as needed.
  • Turn steak pieces over and add tomatoes, onion, and green bell pepper to the skillet. Season with salt and black pepper. Simmer until vegetables are tender, about 30 more minutes.

1/4 cup all-purpose flour
1 tablespoon ground mustard
1 teaspoon salt, divided
1/4 teaspoon pepper, divided
1-1/2 pounds beef top round steak (about 1 inch thick), cut into serving-size pieces
2 tablespoons canola oil
1 cup diced carrots
1/2 cup chopped onion
1/2 cup chopped green pepper
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
1/4 cup cold water

Steps:

  • Combine the flour, mustard, 1/2 teaspoon salt and 1/8 teaspoon pepper; set aside 2 tablespoons for gravy. Rub remaining flour mixture over steak. Pound meat with a mallet to tenderize. , In a large skillet, brown steak in oil over medium-high heat. Transfer to a greased 2-1/2-qt. baking dish. Top with the carrots, onion, green pepper, brown sugar and Worcestershire sauce. Pour tomatoes over all. , Cover and bake at 350° for 1-1/2 to 2 hours or until meat and vegetables are tender. , Transfer meat and vegetables to a serving dish; keep warm. Strain pan juices into a measuring cup; add water to measure 1 cup. , In a small saucepan, combine reserved flour mixture with cold water until smooth. Whisk in pan juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Add remaining salt and pepper. Serve with steak.

Cube Steak gets coated in flour and then browned in a pan. It's slow-cooked with tomatoes, green peppers, onions, and seasonings until tender. Serve it over rice or mashed potatoes for a filling meal that won't break the bank.

2 tablespoons butter
1 large onion (cut in half and sliced into 1/2 moon shapes)
1 green pepper, (sliced)
1 1/2 pounds cube steak
salt and pepper
1 cup flour
4 tablespoons Vegetable oil, (divided)
2 (14.5-ounce) cans stewed tomatoes
1 cup water
2 beef bouillon cubes, (crumbled)
1 teaspoon Worcestershire sauce
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon seasoned salt

Steps:

  • Melt 2 tablespoons of butter in a cast iron Dutch oven. Add onion and green pepper and cook until soft, about 5 minutes. Remove onion and green pepper to a bowl and set aside.
  • Season both sides of cube steak with salt and pepper and dredge in flour. You want a thick coating of flour because it will help thicken the sauce.
  • Add 2 tablespoons vegetable oil to Dutch oven. Working in 2 batches, cook cube steak until browned on both sides (it will not be cooked through).
  • Leave the second batch of cube steak in the Dutch oven and return the first batch plus the onion and green peppers to the Dutch oven.
  • Add remaining ingredients and stir to mix. Cover Dutch oven (I leave a little gap) and cook for 1 hour and 15 minutes over low heat, stirring occasionally to make sure nothing on the bottom burns.

2 (14 1/2 ounce) cans cut green beans, drained
3 (15 ounce) cans whole potatoes, drained
1 (11 1/2 ounce) can spicy hot V8
2 medium white onions, cut in rings
2 tablespoons canola oil
1/4 cup flour
2 tablespoons lime pepper
1 tablespoon sea salt
1 cup water
2 tablespoons cornstarch

Steps:

  • Season the round steak with the sea salt.
  • cut the steak into palm size pieces.
  • coat the steak pieces in the flour generously.
  • In a skillet pour the canola oil and set on medium heat.
  • When the oil is hot add the steak and cook until browned.
  • remove the steak and set in a 9 x 13 inch casserole dish.
  • top the steak with the onion rings.
  • and pour the V8 juice over the meat.
  • arrange the drained potatoes around the meat
  • evenly arrange the drained green beans through out the casserole dish.
  • combine the water and cornstarch until smooth and pour around the casserole dish. this will make the gravy thicker.
  • sprinkle the lime pepper on top of the vegetables to season.
  • cover with foil
  • bake in a preheated 350 degree oven for 90 min then uncover bake for 30 min more to brown.

For dinner tonight, try Alton Brown's Swiss Steak cutlets from Good Eats on Food Network, cooked in bacon drippings and smothered in an oniony beef gravy.

2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks celery, chopped
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
  • Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

This is my variation of the Swiss steak that my dad used to fix as a lunch special at his restaurant. He used the cap meat off of uncooked prime ribs, which can't hardly be found unless you are on real good terms with your butcher, but these are almost as good.

2 onions, finely chopped,or halved lengthwise,thinly sliced lengthwise,and slices separated (preferred)
1 1/2 lbs mushrooms, cleaned and thinly sliced
1/2 cup extra virgin olive oil, divided
2 -3 lbs good quality lean round steak or 2 -3 lbs chuck steaks, about 1 inch thick
Lawry's Seasoned Salt
garlic granules
fresh ground black pepper
salt, to taste
msg (Accent, or equivalent, optional)
1 cup flour, about
2 (14 ounce) cans beef broth
1 (28 ounce) can peeled whole tomatoes

Steps:

  • While you prepare the meat, heat 2 Tsp olive oil in a large nonstick skillet over medium heat.
  • Add onions and mushrooms, and stir to coat with oil.
  • Cook, stirring occasionally, until onions are softened and lightly browned and mushroom juices have evaporated.
  • Remove from pan, and set aside.
  • Trim all excess fat from steak and cut into 2" by 3" pieces.
  • Season generously on both sides with seasoned salt, granulated garlic, pepper, salt, and optional MSG.
  • ,if desired, and set aside for about 10 minutes.
  • Dump flour on counter or heavy cutting board, coat each piece of meat with flour, and set aside.
  • Return a piece of meat to the flour, mounding more on top, and beat the flour into the meat with the edge of a heavy saucer or small heavy plate, making a crisscross pattern on both sides of the meat.
  • Continue doing this until you can actually feel the meat starting to tenderize and the thickness is reduced to about 1/2".
  • Repeat with remaining pieces of meat, and flour all pieces of meat one last time after tenderizing last piece.
  • Preheat oven to 350 degrees F.
  • Return nonstick skillet to medium heat, and add half of the remaining olive oil.
  • When oil is hot enough that a small pinch of flour sizzles, add enough meat to form a single layer without crowding.
  • When bottom side is about half browned, rearrange meat in the pan without turning over.
  • When browned, turn meat, and repeat for other side.
  • Remove meat and as much of the browned bits as possible to a plate.
  • Add remaining oil to pan, and brown remaining meat as above.
  • Set meat aside, drain all excess grease from skillet, leaving browned bits in pan and adding reserved browned bits from first batch of meat.
  • Return skillet to heat, and add one can beef broth.
  • Stir and scrape bottom of pan to loosen and soften crusted breading.
  • Add onion mixture and remaining beef broth.
  • Add the juice from the peeled whole tomatoes, and use your hands to squeeze the tomatoes into pulp as you add them to the skillet.
  • Bring to a simmer and cook about 5 minutes, breaking up piece with the back of a wooden spoon.
  • Place meat in a small Dutch oven, arranging so pieces form sort of a lattice work.
  • Add all of the tomato-onion mixture, and move meat around to ensure that all the meat is in contact with the liquid.
  • If liquid does not cover the meat, add a little more broth, tomato juice, water, or wine.
  • Place Dutch oven over medium-high heat until liquid starts to boil.
  • Cover, remove from heat, and place in preheated oven.
  • Reduce oven temperature to 300 degree F, and cook for 1 hour.
  • Rearrange meat, stir liquid gently, and continue cooking 1 more hour or until meat is tender, but not falling apart.
  • Remove meat from Dutch oven, and set aside.
  • Degrease gravy; it should not be necessary to add more flour to thicken it.
  • It should have thicken enough from the breading on the meat.
  • Blend gravy thoroughly with a hand blender or mixer.
  • It does not need to be smooth, but all of the bigger chunks should be broken up.
  • Return meat to the gravy and Dutch oven to the oven until ready to serve with a salad, bread, and mashed potatoes.

COPYCAT MCCORMICK SWISS STEAK BAG AND SEASONING



Copycat Mccormick Swiss Steak Bag and Seasoning image

Found this on eHow submitted by Athena Hessong. Thank you Athena!! I have such a hard time finding the Swiss Steak bag and seasoning at my grocery store that I got annoyed and did some searching online. Found this recipe and it is even better than the original. Was not able to find dehydrated green bell peppers so I broke out the dehydrator and did it myself. Made "flakes" for measuring purposes and then put all the ingredients in a small chopper and powdered it. Seems like A LOT to put on 1 1½ lbs of eye round but it came out fantastic. The swiss steak preparation directions I followed were McCormicks rather than Athena's. I put the powder on both sides of the steak piercing it with a fork. Let it sit 5 minutes as I mixed the water and tomato sauce. Put steak in a cooking bag and poured the sauce/water over the steak. Pierced the bag in several places (top) and baked at 350 for 45-50 minutes. Use coarse ground black pepper. (Prep time=cooking time after powder mix is made).

Steps:

  • Combine the flour, minced onions, dried green bell peppers, garlic powder, salt, ground black pepper and paprika in the resealable jar. (I modified Athena's directions slightly and put mine in a small electric chopper to "powder" as I prefer to sprinkle mine on the steak from an old plastic spice bottle with a sprinkle top).
  • Close the jar and shake to combine the ingredients.
  • Store the dry Swiss steak seasoning in a dry, dark place for up to one month.
  • To prepare Swiss steak using your seasoning mixture. Combine the dry mix with 8 oz of tomato sauce and 1 cup of water. Pour this over 1 1/2 lb. of round steak in a baking dish and cover. Bake the steak for 45 minutes at 350 degrees Fahrenheit. (Please see recipe description for instructions closer to McCormicks original).

  • In a large skillet, heat 4 T. of the oil over medium-high heat; add the steak and cook for 6-8 minutes, turning halfway through. (If your skillet is not large enough to cook all the steak at once, cook it in two batches, adding more oil if needed.) Remove the steak from the skillet and set aside.
  • In the same skillet, heat the remaining 2 T. of oil over medium-high heat and saute the celery and onion for about 5 minutes or until tender. Add the carrot slices, spaghetti sauce, and the remaining salt and pepper; mix well.   • Heat oil in a Dutch oven over medium heat. Dredge steak strips in flour. Working in batches, place strips in hot oil. Fry until browned on both sides. Remove to a warm platter. When all meat is browned, return meat to Dutch oven, and stir in onions, mushrooms, salt, pepper, gravy mix, and stewed tomatoes. Bring to a boil, then simmer about 30 to 45 minutes.
  • About 20 minutes before steak is finished, fill a large pot with water and bring to a boil. Add pasta, and cook until al dente, about 8 to 10 minutes; drain.
  • Serve Swiss steak over noodles.

My Favorite Swiss Steak image

This is the recipe my mom made and I always looked forward to. It is different than most I have seen posted and is very easy to make. The gravy is delicious on mashed potatoes.

flour
1 -2 lb boneless round steak
salt and pepper
1 -2 tablespoon vegetable oil
1/2 medium onion, chopped
1/2 cup catsup
1/2 cup water
1 tablespoon Worcestershire sauce
2 tablespoons wine
1 clove garlic, minced
1 teaspoon sugar
1 (10 1/2 ounce) can cream of mushroom soup, undiluted

Steps:

  • Beat flour into steak.
  • Sprinkle with salt& pepper.
  • Place oil in large pan and heat; brown steak on both sides in pan.
  • Remove steak from pan.
  • Add onion to pan and cook until tender.
  • Add catsup, water, worcestershire sauce, wine, garlic, sugar and mushroom soup to pan and blend.
  • Bring to boil, then add steak and turn heat down to simmer.
  • Simmer for about 45 minutes or until steak is tender.

It sounds too simple to be good... TRUST me! This gets RAVE reviews when we make it! The amount of vegetables is only an estimate. Use as many or as few as you choose. When it's done, you will have a yummy gravy, and will have to carefully dig for the steak pieces.

2 cups all-purpose flour

paprika to taste
2 pounds beef cube steaks
3 green bell pepper, sliced into rings
3 red bell pepper, sliced into rings
4 onions, sliced into rings
4 (14.5 ounce) cans crushed tomatoes

Steps:

  • Heat the oil in a skillet over medium heat. In a bowl, mix the flour, salt and pepper, and paprika. Dredge the steaks in the flour mixture, and place in the skillet. Brown steaks on both sides, and remove from heat.
  • In a slow cooker, alternate layers of steak, green bell pepper, red bell pepper, onion, and tomatoes.
  • Cover, and cook 6 to 8 hours on Low, until steaks are very tender.

1/2 teaspoon salt

2 beef flank steaks (1 pound each), halved
2 tablespoons butter
1 cup thinly sliced onion
1 can (28 ounces) stewed tomatoes
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar

Steps:

  • In a bowl or shallow dish, combine the flour, mustard, salt and pepper. Add steaks and turn to coat. In a large nonstick skillet, brown steaks on both sides in butter. Transfer to a 5-qt. slow cooker. Top with onion. , In a bowl, combine the tomatoes, Worcestershire sauce and brown sugar; pour over meat and onion.
