Amazing potato salad

3-4 small potatoes ( ,tiny sliced)
3 garlic cloves ( ,finely chopped)
2 scallions ( ,chopped)
2 tbsp. Chinese chili oil
2 tbsp. light soy sauce
1 tbsp. vinegar
1 tbsp. toasted sesame oil
1/2 tsp. sugar
2 tbsp. cumin powder
pinch of salt
4-5 coriander

Steps:

  • Thinly slice the potatoes and then soak in clean water for couple of minutes to remove the extra starch.
  • Bring water to a boil and then cook the potato slices for 2-3 minutes. Transfer out and soak in cold water. Drain and set aside.
  • Prepare another small pan, add 1 tablespoon of cooking oil and fry garlic and scallions until aromatic. Place light soy sauce, cumin powder, chili oil, salt, sugar, vinegar, sesame oil and sesame seeds in. Mix well
  • Mix the sauce with the potato slices with a small bunch of coriander. Serve directly.

My husband had this dish on a recent trip to China and came home raving about how delicious it was. It is super spicy, tangy, simple, and oh-so tasty.

⅔ pound waxy potatoes
1 tablespoon vegetable oil
2 teaspoons dried crushed red pepper flakes
1/2 teaspoon ground Sichuan pepper
1 clove garlic, minced
1 tablespoon black rice vinegar (such as Chinkiang)
1 tablespoon soy sauce
1 pinch flaked salt
1 teaspoon fresh cilantro leaves, or to taste

Steps:

  • Peel potatoes and cut into 1/4-inch matchsticks. Rinse under running water until water runs clear. Soak potatoes in water for 5 to 10 minutes.
  • Drain potatoes and pat dry.
  • Heat a wok over medium-high heat. Add oil. Add pepper flakes and ground Sichuan pepper to the hot oil; cook and stir until fragrant, about 30 seconds. Add potatoes and garlic; toss and cook until potatoes begin to soften, about 5 minutes. Add vinegar, soy sauce, and salt; toss to combine. Cook until flavors have infused, 1 to 2 minutes.
  • Serve garnished with cilantro leaves.

  • Peel off the potatoes’ skin and cut them (julienne) into equal sized matchsticks.5 Soak them in cold water for about 5 minutes to further remove starch from potatoes. Wash and drain thoroughly.
  • Wash the fresh chili peppers (if using). Cut it open and discard the seeds. Then cut the chili peppers into long thin slices. For dried chili pepper, break it into half and discard the seeds.
  • Heat the 2 tablespoons of vegetable oil over medium heat in a skillet or wok. When the oil is getting warm, add the Sichuan peppercorns and let cook for a few minutes until most of the peppers have turned to a darker hue but not burnt (see images). Use a wood or metal spatula to scoop out the cooked peppercorns and discard.
