Bread Pudding & Whiskey Sauce - Mimi's Cafe Recipe - (4.1/5) image

Bread Pudding:
1 loaf French bread (cut into 1" cubes)
1/2 cup Raisins (soak 1/2 hour in
warm water and drain)
1 pinch Nutmeg
1/4 lb. Butter (melted)
1/4 cup Sugar
2 tsp. Vanilla
1 qt. Half & Half
4 Eggs (beaten)
Whiskey Sauce:
1/2 lb. Butter
2 cups Sugar
1/4 cup Whiskey
4 eggs (beaten in a small bowl with
the whiskey)

Steps:

  • Bread Pudding Fill a 9"x 9"x 2-½" baking pan with the bread cubes and sprinkle the raisins on top. (Use enough bread to come to the top of the pan. You might not use the whole loaf). Whisk the remaining ingredients together to make a batter, pour over the top of the bread and stir lightly. Allow the bread to soak ½ hour. The pan will be very full. If you have too much batter, discard the excess. If there's not enough, add a little more milk to the pan. Bake in a 325° oven for about 40 minutes, until the pudding is golden brown and puffed up around the edges. The center should be "set" but still a little soft. You can make this ahead of time and heat it in the microwave oven later. Whiskey Sauce: Melt butter in a small saucepan over low heat. Add sugar and stir well. Remove from heat, let cool slightly, then quickly whisk in the beaten eggs and whiskey. Put the sauce back on the stove over low heat and whisk constantly until the sauce has thickened slightly. (If it's overcooked, the sauce will curdle). Keep the sauce warm until serving. If you like, you can serve the bread pudding with a sprinkle of powdered sugar and a scoop of your favorite ice cream. NOTE: This sauce contains egg yolks, which can carry salmonella bacteria if not fully cooked. As with other foods like beef tartar, Caesar salad, or eggs cooked "sunny side up," caution is advised when eating raw or lightly cooked eggs

1 onion, roughly chopped
4 potatoes, peeled and cubed
1/2 teaspoon salt
2 green bell peppers, cut into 1 1/2 inch long strips
1/2 teaspoon ground black pepper
1 (16 ounce) package beef kielbasa, diced into bite size pieces

Steps:

  • Heat oil in a large skillet over medium low heat, and stir in the onion. Cook onion until tender and golden brown, about 5 to 10 minutes.
  • Place potatoes, salt and green bell peppers into the skillet with the onion. Cover and fry for 3 to 5 minutes. Stir in ground black pepper. Place the kielbasa pieces on top of mixture, cover and let cook for 15 to 20 minutes, stirring occasionally.
  • Stir kielbasa into the mixture and cook an additional 10 to 15 minutes, or until potatoes are tender. Allow to sit covered for an additional 15 minutes before serving.

1 rustic style sourdough bread, cubed
1 quart whole milk
6 eggs
2 egg yolks
2/3 cup sugar
2 teaspoons ground cinnamon
1/8 teaspoon ground nutmeg
1/2 cup butter
1/2 cup raisins
1/2 cup butter
1/4 cup whiskey
1 cup sugar
1 cup heavy cream (optional)

Steps:

  • Grease a 9 by 13 pan with butter.
  • Cube the bread and place in a large casserole dish.
  • beat together the eggs, yolks, milk, melted butter, cinnamon and nutmeg.
  • Sprinkle the Raisins on the cubed bread and pour the milk mixture over the bread.
  • Press the bread down into the pan making sure it is absorbing the milk mixture.
  • Cover with foil.
  • Bake for 50 min at 350 degrees.
  • For the sauce.
  • Combine butter and sugar, microwave for 2 min and stir.
  • Add the whiskey, stir and microwave again for 1 minute Drizzle the sauce over each individual piece of bread pudding and then drizzle with heavy cream.

2 tablespoons cooking oil
2 tablespoons butter (Kerry Irish Gold)
48 ounces beef tenderloin steaks
salt & freshly ground black pepper
1 tablespoon butter
2 tablespoons minced shallots
1/2 cup beef broth
1/3 cup bourbon whiskey
3 tablespoons butter, softened

Steps:

  • Heat oil and 2 TBS butter over medium-high heat.
  • Saute fillets 3-4 minutes on each side for medium rare and longer for more well-done meat.
  • Remove to a warm platter. Season with salt and pepper.
  • Pour oil out of the skillet; add 1 TBS of butter adn the shallots and cook 1 minute.
  • Add beef broth and boil rapidly for 2 minutes, scraping the pan for bits of brown flavor.
  • Add the bourbon; boil 1-2 minutes more.
  • Remove from the heat; stir in remaining 3 TBS of butter, 1 TBS at a time.
  • Pour sauce over the steaks and serve.
