SPINACH AND BACON STUFFED MUSHROOMS RECIPE



Spinach and Bacon Stuffed Mushrooms Recipe image

Number Of Ingredients 12

12 ea white button mushrooms with stems, all about the same size
1 cup baby spinach, packed
2 slices thick-cut bacon
2 cloves roasted garlic, minced
1 Tablespoon yellow onion, minced
2 Tablespoons Italian bread crumbs
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 teaspoon freshly ground pepper
1/2 Tablespoon pine nuts
2 Tablespoons fresh grated parmesan cheese

Steps:

  • Preheat oven to 400 degrees, and make sure oven rack is in the center
  • Add pine nuts to a large skillet over medium heat. Toast, tossing occasionally, until pine nuts are lightly browned. Pay attention, because pine nuts go from toasted to burnt very quickly. Remove from skillet and set aside
  • Add bacon to same skillet, and cook till desired level of done. Remove bacon and drain on paper towels. When cool, dice into small pieces. Reserve a few larger pieces for garnish at the end
  • While bacon cooks, remove stems from mushrooms. Wipe mushroom caps with a towel. Dice mushroom stems finely. Depending on the size of the stems, you may not need to use all of them. YOU WANT A YIELD OF 1/3 CUP DICED MUSHROOM STEMS
  • Discard all but 1/2 Tablespoon of bacon fat. Add onion, and cook for 2 minutes until translucent. Add garlic and cook for 1 minute. Rinse spinach thoroughly, and add to skillet.Cook until wilted, about 2 minutes. Transfer spinach mixture to cutting board and chop into small pieces
  • Add mushroom stems, bacon, spinach to large bowl. Combine with Italian bread crumbs, garlic powder and onion powder, and stir to fully combine
  • Line a baking sheet with aluminum foil. Place mushroom caps side down on the foil, leaving space between each mushroom so they cook evenly. Fill each mushroom cap with the filling.
  • Cook mushrooms for 17-20 minutes. Remove from oven, and top with fresh Parmesan, pine nuts, and reserved bacon. Serve immediately

4 slices bacon
2 (12 ounce) packages fresh white mushrooms
3 tablespoons butter, melted
6 pitted black olives, finely chopped
¼ cup finely chopped green onion
1 teaspoon oil-packed minced garlic
½ teaspoon salt
¼ teaspoon ground black pepper
1 pinch cayenne pepper
1 tablespoon all-purpose flour
¼ cup milk
4 slices Swiss-flavored American cheese, chopped
3 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon slices to paper towels, reserving bacon drippings in the skillet. Crumble bacon when cooled.
  • Remove stems from mushrooms and set stems aside. Place mushrooms, hollow sides up, on a baking sheet; brush the insides with melted butter.
  • Chop mushroom stems; cook and stir chopped stems, black olives, green onion, and crumbled bacon in the bacon drippings over medium heat until mushroom stems release their liquid, about 5 minutes. Add garlic, salt, black pepper, and cayenne pepper; stir to coat.
  • Tilt the skillet slightly; move vegetable-bacon mixture to one side, allowing the bacon drippings to pool to the other side. Whisk flour into bacon drippings until smooth and paste-like; slowly stir in milk until gravy is smooth. Mix vegetable-bacon mixture into the gravy. Add American cheese and Parmesan cheese; cook and stir until cheeses melt, about 5 minutes. Spoon filling into mushroom caps.
  • Bake in the preheated oven until mushrooms are tender and filling is lightly browned, about 20 minutes. Remove mushrooms from baking sheet and cool on platter for 2 minutes before serving.

2 tablespoons butter
5 slices bacon
1 (10 ounce) package frozen chopped spinach
12 large mushrooms
3 tablespoons butter
2 tablespoons finely chopped onion
2 cloves garlic, peeled and minced
.4 cup heavy cream
¼ cup grated Parmesan cheese
salt and pepper to taste
2 tablespoons butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch baking dish with 2 tablespoons butter.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Place frozen spinach in a medium saucepan with 1/4 cup water. Bring water to a boil, then reduce heat to medium and cook spinach covered 10 minutes. Uncover and stir. Remove from heat and drain.
  • Remove stems from mushrooms. Arrange caps in the baking dish. Finely chop stems.
  • Melt 3 tablespoons butter in a medium saucepan over medium heat, and mix in onion and garlic. Cook 5 minutes, or until tender, then mix in bacon, spinach, chopped mushroom stems and heavy cream. Bring cream to a boil. Remove from heat and mix in Parmesan cheese, salt and pepper.
  • Stuff mushroom caps generously with the mixture. Drizzle with 2 tablespoons melted butter. Bake in the preheated oven 30 minutes until lightly browned.

24 large white or cremini mushrooms, wiped clean, stems finely chopped for the filling
2 tablespoons extra-virgin olive oil
Kosher salt
1/4 cup extra-virgin olive oil
1/2 cup finely chopped celery
1/2 cup finely chopped onion
Kosher salt and freshly ground black pepper
1/2 cup grated mozzarella
1/2 cup cooked, crumbled spicy Italian sausage
2 tablespoons finely chopped fresh basil, plus more for garnish (optional)
2 tablespoons finely chopped pepperoncini
1 cup coarse fresh white breadcrumbs

Steps:

  • Preheat the oven to 425 degrees F.
  • For the mushrooms: If your mushrooms caps are very rounded, trim a very thin slice from the top of the caps to help them sit upright for baking. Toss the mushroom caps with the olive oil and 1/4 teaspoon salt in a large bowl.
  • For the filling: Heat the oil over medium-high heat. Add the chopped mushroom stems, celery and onion and cook, stirring occasionally, until just soft, 6 to 8 minutes. Scrape into another large bowl, season with 3/4 teaspoon salt and a few grinds of pepper and set aside to cool.
  • Add the mozzarella, sausage, basil and pepperoncini to the cooled mushroom stem mixture. Stir in the breadcrumbs until well moistened.
  • Pack each mushroom with an equal amount of filling and transfer the filled mushrooms to a rimmed baking sheet. Bake until the mushrooms are tender and the filling is brown and crispy on top, about 15 minutes. Let cool 5 minutes before removing from the baking sheet. Sprinkle with basil leaves if using.

8 ounces cream cheese

1/2 cup parmesan cheese, grated

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Put a little water on a paper towel and wipe the mushroom caps clean.
  • Put the spinach in a sieve and set it over the sink and squeeze out as much liquid as you can. You don't want that extra spinach juice making your mushroom caps soggy.
  • In a large bowl, mix together the spinach, bacon, cream cheese, scallions, salt and black pepper.
  • Fill the mushroom caps with the mixture and set them on a baking sheet. Sprinkle the parmesan cheese on top.
  • Bake until the topping is golden brown, about 15 minutes.
  • Let the mushrooms cool a bit on the baking sheet. While they are still warm, arrange on a platter and serve.
