BBQ CHICKEN PIZZA WITH SPICY SLAW

- For the dough: Sprinkle the yeast over 1 1/2 cups warm (not lukewarm) water in a bowl. Let stand for a few minutes.
- In a mixer with a paddle attachment, combine the flour and salt. With the mixer running on low speed, drizzle in the olive oil and mix until combined. Next, pour in the yeast/water mixture, add the pressed garlic and mix until just combined and the dough comes together in a sticky mass. Divide the dough into 2 balls and put each one in a separate ziptop bag. Set the dough aside for 1 to 2 hours, or store in the fridge until you need it.
- For the chicken: Heat the olive oil in a heavy pot over medium-high heat. Season the chicken with salt and pepper and sear it on both sides until the skin is golden brown. Remove the chicken from the pot and pour off all but 1 tablespoon of the grease.
- Add the onions and cook until softened, 2 to 3 minutes. Add the garlic and cook for another minute. Pour in the barbecue sauce and return the chicken to the pot. Cover and cook over medium-low heat until the chicken is falling off the bone, 45 to 50 minutes. Remove the chicken from the pot and set aside until cool enough to handle.
- When cool, use 2 forks to shred the meat from the bones, discarding the skin and bones. Skim off the excess fat from the top of the sauce and reserve.
- For the slaw: While the chicken is cooking, combine the shredded cabbage and sliced jalapeno in a bowl. In a separate bowl, mix the milk, mayonnaise, sugar, vinegar, cayenne and salt. Pour the dressing over the cabbage mixture and toss to combine. Cover and refrigerate.
- For the pizza: When you are ready to make the pizza, preheat the oven to 475 degrees F. Oil a baking sheet or pizza pan with olive oil.
- Grab one of the balls of pizza dough (the recipe makes 2 crusts, so you can refrigerate or freeze the other ball of dough for another recipe) and squeeze the dough toward the bottom to form a nice, tight, pulled ball. You can roll out the pizza with a rolling pin if you'd like, but sometimes it's just as easy to throw it around and pull and stretch until it feels right.
- When the crust is nice and thin, lay it on the oiled baking sheet. Drizzle a little olive oil on the dough and spread it with your fingers. Very lightly sprinkle some salt on top. Spread the reserved barbecue sauce and onion mixture over the crust, then cover with the mozzarella slices followed by the shredded chicken. Bake on the bottom rack until the crust is golden brown and the toppings are bubbly, 12 to 15 minutes.
- Stir the cilantro into the slaw. Top the pizza with the slaw, cut into pieces and serve.
SMOKY BARBECUE (BBQ) CHICKEN PIZZA
Had some leftover BBQ sauce and some left over chicken, but not much of either so I made pizza. Don't overcook the bacon before you put it on the pizza since it will cook in the oven, too. Use your favorite BBQ sauce but go easy on it...a little goes a long way. Adjust the amount to the thickness of your crust. I use about a third of a cup for a thin crust, use more for thick.

- Combine chicken breast with 2 T of barbecue sauce.
- Spread crust with 1/3 cup barbecue sauce; more if you like it saucy!

BBQ CHICKEN PIZZA
This is similar to the pizza available at the California Pizza Kitchen. It's great and really different from your traditional pizza.

- One hour before baking the pizzas, start preheating the oven at 500 degrees Coat chicken with 2 tablespoons barbecue sauce.
- Set aside in the refrigerator.
- Prepare dough into pizza shape.
- Precook if needed.
- Spread remainder of barbecue sauce over the surface of the dough.
- Spread cheese over the sauce.
- Spread chicken over the cheese.
- Place the onion rings over the chicken pieces.
- Place the pizza in the oven (on top of pizza stone if available or on pan).
- Bake until crust is crispy and cheese is bubbling (8-10 minutes).
- Remove pizzas from the oven and sprinkle each with 1/2 of the cilantro.

SPICY GARLIC CHICKEN PIZZA
This pizza is addicting--Chicken, cheese, and pine nuts with an Asian sauce and the zing of a little crushed red chili--and easy to make! This is also fabulous on a sliced sandwich roll instead of Boboli bread.

- Rinse chicken and pat dry with paper towels.
- Cut chicken into 1/2-inch pieces.
- In large mixing bowl combine HALF of the green onions, the minced garlic, vinegar, soy sauce, 1 tablespoon of the oil, the red pepper flakes and the black pepper.
- Add the chicken pieces and stir to coat.
- Let stand in refrigerator for about 30 minutes.
- After it has had time to marinate, drain chicken reserving the liquid.
- In a large skillet, heat 1 tablespoon oil, add chicken and sauté about 3 minutes or until chicken is no longer pink.
- Stir cornstarch into reserved liquid.
- Add to skillet.
- Cook and stir Place bread shell on a baking sheet and spoon chicken and sauce evenly over top.
- Sprinkle with cheeses.
- Bake, uncovered, in a 400°F oven for 12 minutes.
- Top with remaining 1/4 cup green onions and pine nuts.
- Return to oven for 2 minutes longer.

- To make BBQ Chicken: In a large frying pan, cook the chicken in olive oil over medium-high heat until just cooked, 5 to 6 minutes. Do not overcook. Set aside in the refrigerator until chilled through.
- Once chilled, coat the chicken with 2 tablespoons BBQ sauce; set aside in the refrigerator.
- To make the pizza: Place the pizza stone in the center of the oven and preheat to 500 degrees F for one hour before cooking pizzas.
- Use a large spoon to spread ¼ cup BBQ sauce evenly over the surface of the prepared dough within the rim. Sprinkle 1 tablespoon smoked Gouda cheese over the sauce. Cover with ¾ cup shredded Mozzarella. Distribute half the chicken pieces evenly over the cheese (approximately 18 pieces). Place approximately 18 to 20 pieces of red onion over the surface. Sprinkle an additional ¼ cup Mozzarella over the top of the pizza.
- Transfer the pizza to the oven; bake until the crust is crisp and golden and the cheese at the center is bubbly, 8 to 10 minutes. When the pizza is cooked, carefully remove it from the oven; sprinkle 1 tablespoon cilantro over the hot surface. Slice.

SPICY CHICKEN PIZZA
People either seem to love or hate this recipe. I, personally, love it!! I also think it would make a nice baked chicken ... though, I haven't tried that yet. Using low-sodium soy sauce has been asked of me ... it can be salty.

Steps:
- Mix ingredients 2-6 into a marinade.
- Stir in chicken and let marinate for 30 minutes.
- Drain and save marinade.
- Cook chicken in a frying pan until done.
- Stir cornstarch into marinade.
- Add marinade to chicken and cook until thick and bubbly. About 2 minutes.
- Add a small amount of water to make mixture less thick and easier to spread.
- Spoon onto a 12" pizza crust. You can use the pizza dough balls from the store, or make your own in your bread machine. I like to do this and add garlic and Parmesan cheese to the dough.
- I like to prebake my crust for about 10 minutes. It seems to make the finished product less doughy.
- Add cheese.
- Cook at 400°F for 20 minutes.
- After removing from oven, sprinkle top with additional green onion, if desired.
