Steps:
- Combine red onion and vinegar in a small bowl; add ½-1 chile, depending on the heat of your chile and your preference; season with salt and pepper. Let sit 10 minutes. Whisk in garlic, yogurt, oil, and lemon zest and juice; set dressing aside.
- Cut cabbage in half through core. Remove core; discard. Tear leaves into 2" irregular pieces and place in a large bowl. Season with salt and massage and scrunch firmly with your hands for a minute or so to soften. Pour reserved dressing over cabbage and toss with your hands to coat. Season with more salt if needed (cabbage can take a good amount of salt).
- Toss in dill just before serving.
- Do Ahead: Dressing can be made 12 hours ahead; cover and chill. Slaw (without dill) can be made 1 day ahead; cover and chill.
SPICY SOUTHWESTERN SLAW
Great topping for tacos--also a nice side dish for any type of Mexican or Tex-Mex entree! Hint: The measurements are approximate- I usually make this without any. You can use green or purple cabbage, or a combination of the two. Same goes for green or red bell peppers. For extra heat, use an additional jalapeno pepper.

SPICY ASIAN SLAW
This colorful, piquant slaw is made with an assortment of vegetables and herbs commonly used in Asian cuisines. If you don't feel like chopping all the vegetables by hand, use the grater attachment on your food processor.

Steps:
- Make the dressing: In a medium bowl, whisk together mayonnaise, sesame oil, vinegar, chili sauce, lime juice, ginger, salt, pepper, and sesame seeds; set dressing aside.
- Make the slaw: Core the red and napa cabbages, quarter, and slice very thinly. Transfer to a large bowl. Fill bowl with cold water to cover cabbage. Swish cabbage around with hands so any dirt settles to the bottom of the bowl. Lift cabbage, and transfer to a colander to drain. Place in large bowl; set aside.
- Using the large holes of a box grater, grate the turnip, daikon, and carrot. Add to bowl of cabbage along with scallions, red bell pepper, mint, and cilantro. Add reserved dressing, and toss to combine. Cover with plastic wrap, and let sit at least 2 hours in the refrigerator, but preferably overnight. Serve chilled. Will keep in refrigerator for up to 4 days.
FIREWORKS SPICY SLAW
This is my favorite slaw recipe. I try to use ingredients that everyone has in there pantry. This is pretty spicy but not overpowering. You can really kick it up with more cayenne and hot sauce. This has a nice balance of spicy and sweet.

- Using a mandoline, or a grater attachment julienne your carrots (if you don't have one, simple grate coarsely).
- In a small saucepan, heat the oil and a crushed garlic clove. Once hit, let the garlic sizzle in the oil for 2 minutes on low heat - this will infuse your oil. Tip the hot oil over the julienned carrots and mix. Leave the garlic clove in. Let everything cool down for a few minutes.
- Mix in the sugar, salt, pepper, vinegar, coriander and chilli. Cover and leave at room temperature for approx 6 hours to infuse. After that, store in the fridge.
- Mix the slaw again and take out the garlic clove before serving. Sprinkle some sesame seeds on top if you like.
