SPICY CHICKEN KEBABS WITH MANGO, CUCUMBER AND KIDNEY BEAN SALAD AND CHILLI MAYONAISE
If you prefer you can use curry paste instead of the chilli paste.

Steps:
- Combine the chicken, oil, garlic, chilli paste, lemon juice, honey and cumin in a large bowl. Cover with cling film and place in the fridge for 30 minutes to marinate if you have time. When you are ready to cook the kebabs, season the chicken then thread onto the skewers, don't pack the pieces of chicken too tightly together. To cook the kebabs: Heat a barbecue or grill to medium-high. Cook the kebabs for 5-6 minutes, then turn and cook for another 5-6 minutes until cooked through. For the chilli mayonnaise: Combine the mayonnaise, lemon juice, garlic and chilli paste in a small bowl. Taste and season. For the salad: Place all the ingredients in a serving bowl, stir to combine, taste and season.

- Cut corn from cobs. In a large skillet, heat butter over medium-high heat; saute cut corn until crisp-tender, about 5 minutes. Stir in 1/3 cup green onions. Keep warm., Toss chicken with salt and pepper. Alternately thread chicken and mango onto 4 metal or soaked wooden skewers. Brush with oil., Grill, covered, over medium heat or broil 4 in. from heat until chicken is no longer pink, 10-12 minutes, turning occasionally. - Grind the garlic, ginger, orange zest and spring onions to a paste in a food processor. Add the honey, orange juice, soy sauce and oil, then blend again. Pour the mixture over the cubed chicken and leave to marinate for at least 1 hr, but preferably overnight. Toss in the mushrooms for the last half an hour so they take on some of the flavour, too.
- Thread the chicken, tomatoes, mushrooms and peppers onto 20 wooden skewers, then cook on a griddle pan for 7-8 mins each side or until the chicken is thoroughly cooked and golden brown. Turn the kebabs frequently and baste with the marinade from time to time until evenly cooked. Arrange on a platter, scatter with chopped spring onion and eat with your fingers.

- Mix together the jerk seasoning, olive oil and lime juice. Toss the chicken in it and leave to marinate in the fridge for at least 20 mins, or up to 24 hours.
- Make the salsa by mixing all the ingredients together with some seasoning - add a chopped red chilli if you like extra heat.
- Heat the grill or barbecue to Medium. Thread the chicken onto 8 metal skewers divided by the yellow peppers - aim for 3 of each per skewer. Cook for 8 mins each side until cooked through and lightly charred. Serve with the salsa and rocket leaves.

- Mix the marinade ingredients with some seasoning. Add the chunks of chicken, mix well, cover and chill. Leave to marinate for at least 2 hours or overnight.
- Soak 12 bamboo skewers in cold water - this will prevent them burning when cooking (or use metal skewers). Thread the marinated chicken onto the skewers (discard any remaining marinade), alternating with pieces of pepper and onion. Brush the skewers lightly with oil and season.
- Heat the grill to high. Grill the kebabs for 15 minutes, turning every few minutes, until golden and lightly charred. The veg should be tender, and the chicken cooked through, so it easily slides off the skewers.
- Warm the flatbreads in a griddle pan or dry frying pan on a medium heat until golden and toasted. Serve with the kebabs, lettuce, chilli sauce, extra yogurt and squeeze over some lemon just before eating.
