3 lbs (1,4 kg) chicken wings
2 tablespoons (30 ml) Abokichi Okazu spicy chili miso
1/2 teaspoon (2,5 ml) sesame oil
2 tablespoons (30 ml) lemon juice
2 tablespoons (30 ml) chinese rice vinegar
2 tablespoons (30 ml) soy sauce
2 tablespoons (30 ml) brown sugar
1 1/2 tablespoon (22,5 ml) hoisin sauce
1/4 cup (60 ml) ketchup
4 garlic cloves, minced
1 tablespoon (15 ml) ginger, finely grated
1/2 teaspoon (2,5 ml) five-spice powder
scallions, sesame seeds, red chili, cilantro for garnish

Steps:

  • Preheat oven to 350°F.Add all ingredients, except wings and garnishes to a measuring cup. Whisk to combine well.Place wings in a large plastic bag or bowl.Pour 2/3 of marinade over top of wings and mix to coat evenly. Let marinate for 20 minutes.Double line a baking tray with foil and parchment paper. Spread wings onto baking tray and bake for 50 minutes, basting with reserved marinade after 25 and 40 minutes.Optional: before serving, baste again with Spicy Chili Miso. Garnish with scallions, red chilis, sesame seeds, and cilantro. Enjoy!Source: @dineandfash

3 pounds of chicken wings
1/2 cup miso
2 tablespoons honey
1 tablespoon rice vinegar
some freshly ground black pepper
a splash of hot water

Steps:

  • Cut 3 pounds of chicken wings into 3 sections; save the wing tips for stock. Toss the wings with a little neutral oil to keep them from sticking.
  • Heat a charcoal or gas grill; the fire should be moderately hot and the rack 4 to 6 inches from the heat. Leave one side of the grill cooler for indirect cooking.
  • Put the wings on the cool side of the grill. Cover the grill, and cook, checking and turning once or twice, until most of the fat has been rendered and the wings are cooked through, 15 to 20 minutes.
  • While the wings cook, combine 1/2 cup miso, 2 tablespoons honey, 1 tablespoon rice vinegar and some freshly ground black pepper in a large bowl. Whisk, adding a splash of hot water to thin it out, until smooth.
  • When the wings are cooked, add them to the bowl with the sauce, and toss to coat. Now put the wings on the hot part of the grill, and cook, uncovered, turning as necessary, until they're nicely browned on both sides.
