50 grams dried noodles. (Use noodles that don't stick together)
25 grams shredded lettuce
25 grams julienne cut carrots
25 grams julienne cut cucumbers
50 grams shredded cooked chicken
2½ Tbsp peanut butter (Preferably without sugar and salt)
2 Tbsp rice vinegar
1 Tbsp sesame oil
2 tsp honey. (Can use sugar if you don't have honey)
1½ Tbsp light soy sauce
1 tsp chili sauce. (Like Sriracha)
1 scallion
1 clove garlic
⅛ tsp salt
⅛ tsp white pepper
2 Tbsp water
Crushed roasted peanuts (optional)
Toasted sesame seeds (optional)

Steps:

  • Cook noodles al dente according to noodle cooking instructions
  • Run under cold water to stop cooking.
  • Thinly slice lettuce
  • Julienne cut carrots lengthwise.
  • Julienne cut cucumbers lengthwise.

4 tablespoons low-sodium soy sauce, divided
2 teaspoons toasted sesame oil, divided
1 pound skinless, boneless chicken breasts
1/2 head napa cabbage, thinly shredded (about 6 cups)
1/4 head red cabbage, shredded (about 2 cups)
1 large carrot, shredded (about 2 cups)
3 scallions, trimmed and thinly sliced, greens included (about 1/2 cup)
1 (8-ounce) can sliced water chestnuts
1 (11-ounce) can Mandarin oranges in water, drained
1/3 cup rice wine vinegar
1 teaspoon minced garlic
1 teaspoon minced ginger
2 tablespoons canola oil
2 tablespoons brown sugar
1 1/2 teaspoons chili-garlic sauce or chili sauce
1/4 cup sliced almonds, toasted

Steps:

  • Preheat oven to 350 degrees F.
  • Combine 1 tablespoon soy sauce and 1/2 teaspoon sesame oil and brush onto chicken breasts. Arrange in a baking dish and bake until juices run clear, about 13 to15 minutes. Remove from oven, cool completely, and cut into 1/4-inch slices.
  • In a large bowl, combine Napa cabbage, red cabbage, carrot, scallions, water chestnuts, Mandarin orange and sliced chicken. In a separate bowl, whisk together 3 tablespoons soy sauce, vinegar, garlic, ginger, oil, 1 1/2 teaspoons sesame oil, brown sugar and chili sauce. Pour dressing over salad and toss to combine. Divide among bowls and top each serving with 2 teaspoons toasted almonds.

1 cup sake
2 slices fresh ginger
2 scallions, green parts only
4 tablespoons soy sauce
1 tablespoon sugar
3 tablespoons rice vinegar
2 teaspoons chili bean paste
2 tablespoons sesame oil
2 tablespoons toasted sesame seed
1 teaspoon garlic, grated
1 teaspoon grated ginger
1 tomato, sliced
1 cucumber, julienned
1 fresh cilantro

Steps:

  • In a medium-size pot, add the chicken breast, water, sake, sliced ginger, and scallions, and bring to a boil over high heat.
  • Once the water is boiling, flip the chicken breast over and put the lid on top of the pot. Turn off the heat and leave the pot sit at room temperature for 30 minutes. Chill in the fridge.
  • In a small bowl, combine all the sauce ingredients and mix well.
  • On a plate, arrange the sliced tomatoes, julienned cucumbers, and sliced chicken breast.
  • Top with cilantro and drizzle with sauce.

Chinese chopped chicken salad is a classic on both sides of the Pacific and a bestseller at the Grove in San Francisco. Use a lightly salted peanut with no skin or a blanched white peanut-avoid cocktail-style peanuts with brown skins on them. You can substitute a tablespoon of soy sauce if you don't want the citrus taste of ponzu. Whichever sauce you choose, the combination of crunchy lettuces and flavorful dressing creates a delectable small, tapas-style plate or a nutritious (but not heavy) full meal.

12 ounces skinless, boneless chicken breasts
1 teaspoons salt
1 head romaine lettuce, shredded very thin
1/2 head iceberg lettuce, shredded
1 carrot, shredded
1 cup fresh cilantro, roughly chopped
1 teaspoon peanut oil
1/2 cup peanuts (see headnote)
1 tablespoon ponzu
1 tablespoon soy sauce
1/4 cup sesame oil
1 teaspoon sugar
1/2 teaspoon chile flakes
1/4 cup rice wine vinegar
2 tablespoons fresh orange juice

Steps:

  • 1. Fill a medium pot with enough water to cover the chicken by 2 inches. Add the salt to the water. Bring to a boil, then turn down the heat to just below a simmer. Place the chicken in the water, making sure the water does not boil so that the chicken stays tender. Once the chicken reaches an internal temperature of 150 degrees F or is firm and white in the center (not pink), remove from the pot and set on a plate to cool. Then cut into 1/2-inch cubes.
  • 2. In a salad bowl, combine the romaine, iceberg lettuce, carrot, and cilantro.
  • 3. To prepare the "wok"-style peanuts, in a medium skillet over medium-high heat, add the peanut oil, peanuts, sugar, and chile flakes. Stir occasionally until the peanuts have small char marks on them but are not burned, 2 to 3 minutes. Transfer to a plate to cool.
  • 4. In a small bowl, whisk together the rice wine vinegar, orange juice, ponzu, soy sauce, and sesame oil until well combined. Adjust the seasoning to taste. Toss all the ingredients together with the dressing and serve.

1 tablespoon sesame oil
2 teaspoons sesame oil
3 lbs roasted chicken meat
1/2 cup tahini (sesame seed paste)
1/4 cup chunky peanut butter
1 teaspoon minced garlic
1/3 cup light soy sauce
1/4 cup sake or 1/4 cup mirin
3 tablespoons water
1 1/2 tablespoons safflower oil
1 teaspoon hot chili oil (or more to taste)
16 water chestnuts, thinly sliced
1 cucumber, peeled, halved lengthwise, seeded and thinly sliced
1 large red bell pepper, cut julienne
2 green onions, thinly sliced
1 tablespoon minced fresh cilantro
1 tablespoon sesame seeds

Steps:

  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally to prevent sticking, about 12 minutes; drain.
  • Toss with 1 tablespoon sesame oil in bowl.
  • Cover and chill at least 2 hours.
  • Cut chicken meat from breast and legs into 1/4-inch strips; cover and chill.
  • (Reserve wings for another use.).
  • Blend tahini, peanut butter and garlic in small bowl.
  • Gradually mix in remaining 2 teaspoons sesame oil, soy sauce, sake', water, safflower oil and 1 teaspoon chili oil; taste and add more chili oil if desired.
  • Add to noodles; mix in chicken, water chestnuts and half of cucumber.
  • Transfer to large platter; garnish with remaining cucumber, red bell pepper and green onion.
  • Sprinkle with cilantro and sesame seeds and serve.

4 skinless, boneless chicken breast halves
4 eggs
1 red apple, diced
3 green onions, chopped
½ cup sweet pickle relish
½ cup mayonnaise
3 stalks celery, thinly sliced
1 (8 ounce) can pineapple chunks, juice reserved
¼ cup chopped fresh cilantro
1 cup chopped pecans
fajita seasoning to taste

Steps:

  • Bring a large pot of water to a boil. Add chicken and cook until thoroughly cooked and no longer pink inside, approximately 20 minutes. Drain, cool and chop.
  • Meanwhile, place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and slice.
  • In a large bowl, mix together the chicken, sliced eggs, apple, onions, relish, mayonnaise, celery, pineapple (with just a little juice for flavor), cilantro, pecans and fajita seasoning to taste.

There were two ingredients I did not like...so by the time I changed that, I was also changing other things and came up with this....a potato salad WITHOUT the white stuff! UPDATE: My thanks to Susie D for reviewing recipe and for her honesty about the oil. It was not oily when I put it together and perhaps that was due to mixing while the potatoes were still very warm, thus absorbing the oil.
