SPICY SCRAMBLED EGGS
By most, the humble egg is not considered substantial dinner fare, but these spicy scrambled eggs, which are incredible on their own, make a satisfying meal when piled into a burrito, teamed with rice and beans. Bittman's cooking technique, borrowed from Jeans-Georges Vongerichten, calls for combining the eggs with butter in a cold saucepan then cooking until creamy and soft - not unlike loose oatmeal - with small curds throughout.

- Put butter or oil in a skillet, preferably nonstick, and turn heat to medium-high. Add garlic, ginger, scallions, chile and a sprinkling of salt and pepper. Cook, stirring occasionally, until garlic begins to color, about 3 minutes. Remove from heat and let cool for about 5 minutes.
- Beat eggs lightly with a little more salt and pepper. Return pan to medium-high heat and add eggs. Stir occasionally, until curds begin to form, then remove from heat and stir to break up curds. Return to heat and repeat, stirring occasionally until mixture begins to clump. Cook and stir until eggs are creamy and thick but not dry: they will continue to cook under their own heat after you remove them from pan, so stop a moment short of your desired consistency.
- Stir in cilantro and serve immediately.

- Wrap the flour tortillas in paper towels and microwave them for 1 minute to make them pliable. Set them aside.
- Crumble the sausage finely into a large skillet over a medium heat and cook until brown, 5 to 6 minutes.
- Add the butter to a large nonstick skillet over a medium heat. Beat the eggs in a large bowl with the salt and pepper. Stir in the hot sauce, jalapenos and a splash of jalapeno juice. When the butter has melted, turn the heat to low and pour in the eggs, then add the sausage. Slowly cook the mixture, using a wooden spatula to push it around the skillet, until the eggs are totally cooked through, 8 to 10 minutes.
- Place approximately 1/2 cup of the egg and sausage mixture into a warm tortilla, then add a pinch of cheese and roll up (do not tuck in the ends). Wrap in a foil square and keep warm until ready to serve. Repeat with the remaining ingredients. Serve with more hot sauce, jalapenos and salsa.
SPICY BACON AND EGGS BREAKFAST BURRITOS

- Preheat the pan to medium heat, add bacon and cook until crispy, about 3 mins. Remove bacon to a plate. Save bacon fat, remove 2 tablespoons of bacon fat for eggs.
- In the remaining bacon fat, sauté the onions and ½ teaspoon of salt until translucent, about 3 mins. Add hatch chilies and cook for another 2 mins.
- In a bowl add eggs, 1 teaspoon of salt, and 4 tablespoons of cold water, whisk until frothy. Add eggs to a pan with remaining bacon fat or use some butter to cook on low heat.
- Add cheese to the eggs halfway while cooking. Using a rubber spatula, slowly scrape the pan across, back and forth, repeat this until the eggs are nice and fluffy and cheese is melted.
- To assemble the burritos, add eggs to the shells, then bacon, onion, and hatch chilies, avocado, tomatoes, and cilantro.
- Tightly wrap the burritos closed.
- Optional, add the burritos to a pan to crisp up. Serve with salsa or hot sauce.

ZESTY BREAKFAST BURRITOS

- In a large bowl, combine the vinegar, chili powder, oregano, salt and garlic; crumble pork over mixture and mix well. Cover and chill overnight. , In a large skillet, cook pork mixture over medium heat until meat is no longer pink. Drain; set aside and keep warm. In a large bowl, whisk eggs and milk. In a another large skillet, heat oil until hot. Add egg mixture; cook and stir over medium heat until eggs are completely set. , Spoon about 1/4 cup pork mixture and 1/4 cup egg mixture down the center of each tortilla. SPICY BREAKFAST BURRITOS
These are heavenly. I used extra jalapenos and a lot more cilantro than the recipe calls for because I don't think you can have enough cilantro, but I'll post the recipe as written. I skipped the cheese, sour cream, and salsa and still really loved this. I don't know why I never thought about making eggs with beans before--I'd pick this over sausage or bacon most days of the week. Serving size is estimated. YUM!

- Place tortillas in a large covered casserole dish or wrap lightly in aluminum foil and warm in the oven.

SPICY BEEF BURRITOS
This recipe is from a pamphlet Del Monte put out. I have been making this for years, as it has become one of our favorites. I must confess I usually substitute a can of plain stewed tomatoes and add my own spices - chipotle powder, garlic powder, cumin and pepper. I use approximately a 1/4 - 1/2 teaspoon of each, depending on my taste buds that day. Suggest you make it with the Mexican spiced tomatoes for the first time. Ole!

- Saute ground beef, onion and green pepper in a skillet over medium-high heat for 5 minutes.
- Stir in chili powder and Worcestershire sauce.
- Spoon beef filling into centre of tortillas, fold in sides and roll up to enclose the filling.
- Spoon a thin layer of tomatoes on the bottom of a 9" x 13" pan that you coated with cooking spray. (if you use plain tomatoes, combine spices listed in recipe description with the tomatoes before using).
- Put tortillas seam side down in baking dish.
- Spoon remaining tomatoes over and sprinkle with cheese.
- Bake at 350°F for 30 minutes, or until bubbling.

- Start by peeling 2 garlic cloves and roughly chopping 1/2 onion. Cook the onion and garlic in a glug of oil over medium heat (you can leave the garlic cloves whole).
- Once the onion is starting to brown, approximately 5-8 minutes, add 1 can beans (drained and rinsed), 3-4 chipotles in adobo, 1 tablespoon adobo sauce from the can, 1/2 teaspoon cumin, 1/4 teaspoon salt, freshly cracked black pepper, and 1/2 cup stock (or water). Let simmer for a few minutes until heated through and then add everything to a blender, combining well. For a milder batch start with a single chipotle.
- Take a taste for heat and seasoning. To increase the heat simply add more chipotle. Note: 1/4 teaspoon of salt is the bare minimum for these beans as they usually prefer 1/2 teaspoon of salt. But I underseasoned the beans and eggs in this recipe knowing that there will plenty of salt in the cheese as well.
- For the eggs, start by finely chopping 1/8 onion and a single de-stemmed jalapeno -- this should give you approximatley 2-3 tablespoons of each. Cook the onion and jalapeno in some oil over medium heat. Once the onion is softened you can add 12 whisked eggs along with a pinch of salt. Cook the eggs over medium heat until cooked through, stirring regularly.
