SMOKED HADDOCK TARTS
Smoked fish pairs beautifully with leeks and cream in this tartlet recipe from BBC Good Food Magazine reader Philip Friend

Steps:
- To make the pastry, pulse the flour, lard and butter in a food processor until it resembles fine breadcrumbs. Sprinkle over 1½ tbsp cold water and pulse again until the pastry just comes together. Divide into 6 pieces, wrap in cling film and chill in the fridge for 30 mins.
- Heat oven to 200C/180C fan/gas 6. Roll each ball of pastry into a 12cm disc on a lightly floured surface and use to line 6 x 8cm tartlet tins. Line the tarts with baking parchment and baking beans, and chill in the fridge for 20 mins. Bake on a tray in the oven for 15 mins, then remove the baking beans and bake for a further 5 mins until golden. Brush with the egg yolk and return to the oven for 2 mins.
- Meanwhile, to make the filling, heat the butter in a small saucepan, add the leek and cook for 5 mins until beginning to soften. Add the garam masala, turmeric and seasoning, and cook for a further 5 mins. Turn down the oven to 160C/140C fan/gas 3 and lightly whisk together the cream, egg and yolks, and some seasoning.
- Divide the leek mixture between the tart cases, arrange the smoked haddock pieces on top and fill with the cream mixture to just below the pastry rim. Bake for 15-20 mins. Allow the tarts to cool a little in their tins, then serve with a handful of mixed salad leaves, if you like.

- Line tartlet tins with the pastry (use boat-shaped tins if you have them). Bake blind in a preheated oven at 375 degrees for 10 minutes. When cold, brush the inside of the tartlet cases with the melted chocolate and leave to harden.
- Mix together the cream cheese and double cream until very smooth, then add the sugar and vanilla essence. Fill the tartlet cases with the cream mixture and arrange the fruit on top. Brush with the apricot or red currant glaze, depending on the fruit used, and leave to set.
- Sift the flour and salt together and rub in the butter and lard until the mixture resembles bread crumbs. Add the cheese, if using, and bind with a little cold water. Chill for 30 minutes and then roll out and use as above.
HERBED FISH TARTLETS
This is a nice starter for 8 or a main course for 4, then serve a salad with it. You can make most of the recipe in advance, up to the point to flaking the fish. This is also very nice with smoked cod or haddock. Can be made as one large tart, use a 9 inch round tin, you might have to give it a longer baking time. You will need 8 tartlet tins of approx 5-inch each.

- Grease the baking tins.
- Sift the flour into a mixing bowl; add the butter and using your fingers make it into crumbly dough.
- Add the herbs and the cheese, and then almost all of the water, knead until you have firm dough, if necessary add more water.
- Knead the dough on a floured surface until smooth.
- Wrap in plastic, put in the fridge for 15-20 minutes and let it rest.
- Preheat oven to 410 degrees F.
- Divide the dough in 8 pieces, roll the dough out to fit the baking tins, trim the dough around the rim Put some baking parchment, cut in circles, on the dough, fill with ceramic baking beans or normal dried beans or rice, and bake them for 10 minutes Take them out of the oven, remove the beans and the paper then put them back in the oven and bake for another 10 minutes.
- Take them out and let them cool.
- Poach the fish in some water, 3 to 5 minutes (but longer if the fish fillets are thick) remove from the pan and cool.
- Flake or mash the fish, divide over the tins, sprinkle with the onion, parsley and cheese.
- Mix the eggs with the cream, and pour over the fish.
- Bake for 15 to 20 minutes until the tartlets have firmed up and are golden brown.
- Serve with some halved cherry tomatoes and herb sprigs.

- Preheat the oven to 400 degrees F (200 degrees C). Grease or line a rimmed baking sheet with foil.
- Rinse tilapia and pat dry. Rub all sides with Cajun seasoning. Place on the prepared baking sheet.

- Mix rest of ingredients in a bowl with the fish until fish is mashed.
