1/2 cup coarsely chopped onion
1/2 inch piece ginger, peeled
1 clove garlic
1/2 cup mint leaves, plus sprigs for garnish
1/4 cup fresh cilantro leaves
1 teaspoon garam masala
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
1 large egg
1 pound ground lamb
3 tablespoons canola oil
Cucumber Raita for Lamb Koftas

Steps:

  • Place onion, ginger, and garlic in a food processor; pulse until finely chopped. Add mint, cilantro, garam masala, salt, and pepper; pulse until finely chopped, scraping sides as needed. Add egg and lamb; process until fully combined, scraping down sides as needed.
  • Shape mixture into 1-inch balls; flatten into patties. Heat a saute pan over medium-high heat; add oil. When hot, add patties in batches; cook until cooked through, about 2 minutes per side. Transfer to a paper towel-lined baking sheet to drain.
  • Insert a toothpick or skewer into each patty; place on a platter. Serve with raita, and garnish with fresh mint sprigs.

1 teaspoon baking soda
Kosher salt and freshly ground black pepper

Steps:

  • For the raita: Mix the cucumber, mint, garlic, and yogurt together in a large bowl with plenty of salt and pepper, to taste. Cover and chill.
  • For the potatoes: Fill a large pot with cool water and put over high heat. Add the potatoes and a hefty dose of salt. Bring to a boil, and then simmer until the potatoes are tender, about 20 minutes. Once the potatoes are cooked, drain and push them through a potato ricer. Heat the canola oil in a large saute pan over medium-high heat. Once shimmering, add the panch puran seasoning. Cook the seasoning blend until fragrant and the spices begin to pop, about 30 seconds. Add the onion and saute until tender and lightly browned. Reduce the heat to medium. Add the potatoes and flatten them with a spatula, cook about 5 minutes, stirring and flattening a few times, until the bottom gets a little crispy. Season the potatoes with salt, and pepper, to taste, and keep warm until ready to serve.
  • Meanwhile, in a food processor, combine the parsley, mint, shallot, lemon zest, and garlic and pulse until finely minced. Add the mixture to a bowl with the ground lamb, baking soda and lots of salt and pepper, to taste. Knead until the mixture turns sticky, looks like a piece of knitted fabric, and holds its shape. Pull off a small ball of meat and shape into a fat cylinder. Thread a skewer through the middle lengthwise, and smooth the meat down the skewer until it's even all the way down. Repeat with rest of the meat mixture. Put the kebabs on an oiled baking sheet and drizzle with a little more oil. Combine the pomegranate molasses, lemon juice and mustard in a small bowl. Set aside.
  • Light a grill or heat a grill pan over medium-high heat.
  • Arrange the kebabs on the hot grill, turning every 2 to 3 minutes, generously brushing with the pomegranate mixture. Cook the kebabs until browned, about 6 minutes.
  • Transfer the kebabs to a serving platter and serve with the potatoes and raita on the side.

4 lean lamb steaks (about 400g), trimmed of all fat, cut into chunks
2 garlic cloves , finely grated
8 tsp chopped fresh ginger
3 tsp ground coriander
4 tsp rapeseed oil
4 onions , sliced
2 red chillies , deseeded and chopped
170g brown basmati rice
320g diced butternut squash
2 tsp cumin seeds
2 tsp vegetable bouillon powder
20cm length cucumber , grated
100ml bio yogurt
4 tbsp chopped mint , plus a few extra leaves
handful coriander , chopped

Steps:

  • Mix the lamb with the garlic, 2 tsp chopped ginger and 1 tsp ground coriander and set aside.
  • Heat 2 tsp oil in a non-stick pan. Add the onions, the remaining ginger and chilli and stir-fry briefly over a high heat so they start to soften. Add the rice and squash and stir over the heat for a few mins. Tip in all the remaining spices, then stir in 500ml boiling water and the bouillon. Cover the pan and simmer for 20 mins.
  • Meanwhile, mix the cucumber, yogurt and mint together in a bowl to make a raita. Chill half for later.
  • About 5 mins before the rice is ready, heat the remaining oil in a non-stick frying pan, add the lamb and stir for a few mins until browned but still nice tender. Toss into the spiced rice with the coriander and serve with the raita and a few mint or coriander leaves on top.

This is a different way of doing a curry with great results my family really like this one especially my brother and my son.

1 kg lamb fillet, chopped coarsely
2 tablespoons mild curry paste (I use rajah brand)
2 tablespoons hot curry paste (I use rajah brand)
2 tablespoons peanut oil
4 cardamom pods, bruised
1 teaspoon cumin powder
1 brown onion, finely chopped
2 cups white rice
250 ml water
1 teaspoon instant chicken bouillon granules (powder, cube, paste etc..)
500 ml coconut milk
300 g plain yogurt
5 -6 green onions, sliced
1 medium cucumber, seeded, sliced thinly

Steps:

  • prep time does not include fridge time.
  • Bruising cardamom pods simply means splitting them, do this by placing on flat surface and pressing down on them with flat side of a knife until the pod splits.
  • Combine lamb with both pastes in storage container or ziploc bag, coat lamb thoroughly in paste and refrigerate several hours or overnight. (preferably overnight).
  • Heat half the oil in a large saucepan, add onion and cardamom and stir until onion softens, add cumin and stir until fragrant. Add rice, stock, water and coconut milk, bring to boil and then reduce heat to a simmer, cook covered about 20-25 minutes until rice is just tender and liquid has absorbed.
  • Note: I have had times when I make this that all the liquid is gone and the rice is not quite cooked, just leave the lid on over the lowest heat you have on your stove, stir from time to time until done. Don't add more liquid it will just make rice go soggy.
  • While the rice is cooking, heat the other half of oil in a large frying pan. Add lamb with paste stir, put a lid on and cook until lamb is done stirring from time to time about 20 minutes.
  • Raita:.
  • In a medium bowl combine yogurt, onions and cucumber. This can be made ahead of time if desired.
  • To serve place rice on plate top with lamb pour some liquid from pan over and top with raita.
