PAN FRIED CHICKEN CROQUETTES

Pan Fried Chicken Croquettes image

This recipe makes flavorful chicken or turkey croquettes that are crisp on the outside but moist on the inside. The way to keep the croquettes moist is by adding a homemade white sauce to the chicken mixture.

Provided by CookingCutie

Categories     Meat and Poultry Recipes     Chicken

Time 2h55m

Yield 6

Number Of Ingredients 14

¼ cup butter
¼ cup flour
½ cup milk
½ cup chicken broth
3 cups finely chopped cooked chicken
1 ½ cups seasoned bread crumbs, divided
2 eggs, beaten
¼ cup minced onion
1 tablespoon dried parsley
¼ teaspoon garlic powder
⅛ teaspoon celery seed
⅛ teaspoon cayenne pepper
salt and ground black pepper to taste
¼ cup oil, or as needed

Steps:

  • Melt butter in a saucepan over medium heat. Whisk flour into melted butter; cook and stir until raw flour taste cooks off and a paste forms, about 1 minute. Slowly whisk milk and chicken broth into butter mixture, whisking constantly, until mixture is thick and smooth, 5 to 10 minutes. Remove sauce from heat and cool slightly, about 10 minutes.
  • Stir chicken, 1 cup bread crumbs, eggs, onion, parsley, garlic powder, celery seed, salt, and black pepper together in a bowl; add cooled sauce to chicken mixture and stir until well-combined. Cover the bowl with plastic wrap and refrigerate until chilled and firm, at least 2 hours.
  • Shape chilled chicken mixture into 6 patties. Pour remaining bread crumbs into a shallow bowl and roll each chicken patty in bread crumbs to coat completely.
  • Heat oil in a large skillet over medium-high heat. Cook patties in hot oil, turning once, until patties are cooked through and golden brown on each side, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

BUFFALO CHICKEN AND ROASTED POTATO CASSEROLE

Buffalo Chicken and Roasted Potato Casserole image

POTATO AND SPINACH CROQUETTES

Potato and Spinach Croquettes image

Yummy fried croquettes are made with potatoes, spinach and Parmesan cheese.

Provided by Tonmere

Categories     Appetizers and Snacks     Pastries

Time 50m

Yield 7

Number Of Ingredients 11

1 pound baking potatoes, peeled and diced
1 pinch ground nutmeg
4 teaspoons butter
1 egg yolk
1 cup vegetable oil for frying
⅓ cup freshly grated Parmesan cheese
⅓ cup frozen chopped spinach, thawed and drained
½ cup all-purpose flour
3 eggs, beaten
1 tablespoon peanut oil
1 ⅓ cups dry bread crumbs

Steps:

  • Place the potatoes into a saucepan and fill with enough water to cover. Bring to a boil, then reduce the heat and simmer until tender enough to easily pierce with a fork. Drain and toss gently over low heat for a minute to completley dry out. Press them through a sieve or just mash with a potato masher until smooth. Season with salt, pepper and nutmeg. Mix in the butter and egg yolk, then spread out on a tray to cool.
  • Preheat the oil in a deep-fryer to 365 degrees F (180 degrees C). The oil is the proper temperature when a cube of bread browns in about 15 seconds.
  • In a large bowl, mix together the Parmesan cheese and spinach. Blend in the mashed potatoes. On a floured surface, using floured hands, roll small handfuls of the mixture into cylinders about 3/4 inch thick and 2 1/2 inches long. Tap the ends to flatten.
  • Season 1/2 cup of flour with salt and pepper and place on a tray. In a shallow bowl, whisk together the eggs and peanut oil. Place the bread crumbs into a separate shallow bowl. Roll the croquettes in seasoned flour, then dip into the egg and then coat with bread crumbs.
  • Fry the croquettes a few at a time, so they have some room in between, until golden brown, 5 to 6 minutes. Carefully remove from the oil using a slotted spoon and drain on crumpled paper towels.

SPICY SWEET POTATO AND CHEDDAR CROQUETTES

Spicy Sweet Potato and Cheddar Croquettes image

Sweet potatoes and cheese are flavored with cumin, smoked paprika, black pepper and cayenne for warmth, smokiness and a little bit of a kick. Once these croquettes are breaded and deep fried, a crisp crust delicately encapsulates the soft and gooey mixture within. They are very straightforward to prepare, but the process makes them a labor of love, perfect for entertaining or simply showing off your kitchen prowess.

Provided by Aaron Hutcherson

Categories     snack, finger foods, vegetables, appetizer

Time 2h

Yield About 30 croquettes

Number Of Ingredients 13

2 pounds sweet potatoes (about 4 medium), peeled and cut into 1-inch chunks
2 teaspoons kosher salt
4 ounces sharp Cheddar, shredded (about 1 packed cup)
1/2 cup/65 grams all-purpose flour
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon black pepper
1/4 teaspoon ground cayenne
1 cup/130 grams all-purpose flour
3 whole eggs, beaten with 2 tablespoons vegetable oil
1 1/4 cups/125 grams plain fine bread crumbs
About 4 cups vegetable, canola, peanut or other neutral oil, for stovetop shallow frying
Kosher salt

Steps:

  • Put the sweet potatoes and 1 teaspoon salt in a pot and cover with an inch or two of water. Bring to a boil, reduce to a simmer and cook until tender, 10 to 12 minutes. Drain the potatoes, transfer to a bowl, mash with a fork, and let cool for at least 30 minutes. (You can also do this step ahead and let the mashed sweet potatoes cool in the refrigerator overnight.)
  • Add the cheese, flour, cumin, paprika, black pepper and cayenne to the mashed sweet potatoes and mix until evenly combined. Use a medium cookie scoop (a scant 2 tablespoons) to portion the mixture onto a baking sheet lined with parchment. Freeze until solid, at least 1 hour.
  • Prepare to bread the croquettes: Set up a standard breading procedure in three bowls - flour, egg-and-oil mixture and bread crumbs.
  • Dip each piece in the flour, shaking off any excess, in the egg mixture (turning it a few times to make sure it is completely coated), then in the bread crumbs. Set each breaded croquette on the baking sheet. Refreeze the finished, breaded croquettes until firm. (These can live in your freezer for months.)
  • Add enough neutral oil to a deep-sided pot or pan to reach a depth of 1 1/2 to 2 inches, and heat over medium until shimmering, or when a thermometer reads between 325 and 350 degrees. Working in batches, fry the frozen croquettes, stirring occasionally, until nicely browned all over and piping hot in the center, about 5 minutes. (When frying, it's important to moderate the heat to keep as steady a temperature as possible. Adding frozen products to hot oil brings the temperature down, as does crowding.)
  • Using a slotted spoon, remove cooked croquettes to a baking rack and immediately sprinkle with a little salt before serving.

Categories     Chicken

Time 1h15m

Yield 1 heaping plate

Number Of Ingredients 14

vegetable oil
1 large green plantain, peeled and cut into large chunks
salt
1 can beer
1 bunch scallion, minced
2 chicken breasts, thinly sliced
1 New York strip steak, thinly sliced and pounded flat
1 colombian sausage
chimichurri sauce (scallions, cilantro, parsley, eggs, garlic, vinegar and oil to taste)
mayonnaise, and ketchup mix to taste (Pink sauce)
garlic sauce (mayonnaise, garlic, heavy cream, salt and pepper to taste)
1/2 ounce lettuce, shredded
1/2 ounce monterey jack cheese, shredded
2 ounces fried pork belly and pork skins, chopped (chicharron)

Steps:

  • For the fried plantains:.
  • Pour enough oil into a large deep skillet or heavy pot to reach a depth of 1 1/2 inches. Heat the oil over medium-high heat until a deep-fry thermometer registers 375 degrees F. Fry the plantains in batches until lightly golden and still slightly soft, about 3 minutes. Transfer the plantains to a paper towel-lined plate or tray to drain using a slotted spoon. When they are cool enough to handle, place them between sheets of plastic wrap and press down firmly with the bottom of a heavy skillet to flatten. Slip the plantains into warm salted water in batches, and then fry again until crisp and brown, another 3 to 4 minutes. Drain again on paper towels.
  • For the grill:.
  • Preheat the grill. Whisk together the beer and scallions. Grill the chicken, sausage and steak, brushing with the beer and scallion mixture, until cooked through. Throw 2 or 3 fried plantains on the grill for a little while to get a smoky flavor. Let the meats rest before chopping them all up separately.
  • To assemble:.
  • Drizzle chimichurri sauce on the plate. Arrange the plantains in a layer, then pile on the chopped steak, chicken and sausage. Squeeze pink sauce and then garlic sauce over the top. Garnish with the lettuce and cheese. Finally, top with the chicharron.
