BAKED ZUCCHINI CHIPS
Crispy Baked Zucchini Chips are a healthy paleo-friendly snack recipe that is loaded with flavor and crunch, yet light in calories!

- Slice the zucchini. (Using a mandolin helps keep the slices consistent.) Lay the zucchini slices on paper towels in a single layer. Cover with more paper towels and set a baking sheet on top of the zucchini slices. Press down on the baking sheet, applying slight pressure, to help squeeze out some of the moisture.
- Preheat the oven to 235 degrees F. (Preheat two ovens if you have them to fit more in at once.) Line several baking sheets with parchment paper. Brush the parchment paper lightly with olive oil.
- Lay the zucchini slices in a single layer on the parchment paper. Fit as many on each baking sheet as possible. Then lightly brush the top of the zucchini with olive oil. Sprinkle the zucchini slices with salt. You can also sprinkle with a little cumin and smoked paprika for extra flavor.
- Bake for 1 1/2 - 2 hours until crisp and golden. If some zucchini chips are still a little flimsy or damp, remove the crisp chips and place the damp chips back in the oven for a few more minutes. Allow the zucchini chips to cool on the paper towels to absorb any extra oil. Store in an air-tight container.

- Pre-heat the oven to 200 C.
- Cut the potatos into even size chips, there is no need to peel the potatoes this adds to the taste however if you want really chunky chips it is best to par-boil them for a few minuites before they go in the oven.
- Spray a baking tray with the oil and sprinkle with salt pepper, garilc powder and paprika. Put the chips onto the seasoned tray and spray with oil 7 or 8 times. Cover with more pepper, salt paprika and the garlic powder.
- Bake in the oven for 40-50 minutes, depending on their size and how cripsy you like them, turn the chips once half way through.
- Serve immediately with whatever you fancy!

- First choose a large potato. A potato with a smooth surface and close to cylindrical will be easy to work with. Wash and peel the skin of the potato.
- Fill a bowl with water and place the potato slicer on top of the water bowl. Thinly slice the potato across the width. Make sure that the potato slices immediately drop into the water. This will prevent the potato slices from browning.
- Once the whole potato is sliced up, wash the potato slices nicely in water for 2 or 3 times until the water runs out clean. This will remove any excess starch from the surface. Now, add about a tsp of salt to the bowl, mix well and leave the potato slices to soak up in water .
- After about 10-15 mins, remove the potato slices from the water and leave them to dry on a clean kitchen towel / paper napkins. Meanwhile heat oil for frying. Once the oil is hot, reduce the flame to medium low and drop a batch of the potato slices. Continuously keep tossing up the potato slices in the oil, until they turn slightly golden and/or crisp. Remove the chips from the oil and drain off excess oil. Before adding the next batch for frying, wait for a few mins, make sure that the oil is back hot again.
